The first sakéwa in a while is "Hachihachi" from Shodoshima Shuzo, the only sake brewery on Shodoshima. This sake is made from rice grown in the terraced rice paddies of Shodoshima, milled to 88%, and brewed with yeast harvested from Shodoshima's olive groves. It has a pale golden color, with a sweetness like a noble sake, and a lingering astringency. It is not easy to drink, but at 17% alcohol by volume, it is best to drink it slowly.

I found this one at a store I stopped by on my way home from work. It is a junmai sake with a rice polishing ratio of 80%. I immediately drank it at room temperature, remembering that someone I met last month had said, "Kunigon is doing well, too. Slightly refreshing on the palate. The umami of rice spreading in the mouth The lingering aftertaste sinks in softly, and you will be intoxicated in no time. Let's look forward to drinking it cold, and do our best again tomorrow!

A limited edition sake from Kaze no Mori. In addition to conventional microorganisms (yeast, yellow yeast sake, and lactic acid bacteria), this is the first sake in history to have Pichia sp. and white yeast sake bacteria play an active role. GW with friends who love to drink. One of the gifts from a guest at a certain inn in Niigata was a bottle of sake that had been aged for nearly 30 years. After the big event, I finally have the time to think about keeping track of the drinks I've had at home 🙌. Today I opened a bottle of Saka, a sake from Saga. When I searched for the sake brewery to register it with Sake-no-Wawa but could not find the brewery, I checked the brewery's website and found that the company, Window Plum Brewing Company, which was also registered with Sake-no-Wawa, changed its name to Saka Brewing Company in November last year. Although the company name has just changed, it is a long-established sake brewery that has been in business for over 330 years. This "Saka" has a bitter taste that lingers on the palate as soon as it enters the mouth. Just the other day, I had a chance to taste "Nabeshima," also from Saga, and it was a different sake from "Nabeshima," which was easy to drink, with a strong flavor that developed from strength to weakness.

Happy New Year! I will continue to keep records at my own pace this year. Thank you very much for your kind attention. The sake I drank from the end of the year to the beginning of the new year was Miyazumi Junmai-shu, which I purchased at Koriyama Station on my way back home. It is a deeply delicious sake with the flavor of rice spreading in the mouth. Every time I go back home, I think I should go back more often because I can drink such delicious sake, but I only go back home twice a year at the most. I will return to Tokyo tomorrow, but I hope to have more opportunities to go home this year.... I bought two bottles of sake from Fukushima this time, and I am looking forward to drinking them when I get home.

One of two bottles of "Yamatan Masamune" that an acquaintance brought me the other day when he came to visit. It has a faintly sweet aroma. Tonight we received another bottle. It is a bottle of Honjozo from the Naohiko Noguchi Research Institute, which was given to us as a gift from a traveler to Kanazawa. It is a 19% alcohol by volume sake. I was a little prepared for the taste, but when I sipped it, I found it to be lighter and lighter than I expected, and the umami flavor gradually spread to the back of my mouth. However, the aftertaste is short and crisp. It is a perfect match for Kanazawa's delicious cuisine, and is sure to be enjoyed with a cup of sake or a bowl of chopsticks. We enjoyed it cold and at room temperature, and will try it lukewarm on the weekend.

I enjoyed the "△" of Kuroemon XVI that I drank with an acquaintance last month, so I happened to buy this one that I found at a liquor store. Today, after finally settling down from all the projects I have been working on for the past few years, an acquaintance brought a bottle to our home for an evening drink. It is a doburoku brewed at a doburoku brewery established in Asakusa, Tokyo in 2020, using mizumoto (bodhi yeast). It is creamy but light, with a hint of rice sweetness but not too sweet. The sense of freedom after a break, coupled with the ease of drinking at home, made for a very enjoyable drink.

Purchased at a liquor store near work. My husband picked up a bottle because of the cute label. This daiginjo is brewed by Fuji Shuzo in Tsuruoka City, Yamagata Prefecture, whose brewer is related to Kiyomasa Kato, using "Morinokuma-san" rice produced in Kumamoto Prefecture. A portion of the proceeds will be donated directly to Kumamoto Castle. Tomorrow, April 14, is the day of the last earthquake that hit Kumamoto Prefecture. Six years have passed since the earthquake. I still cannot put into words the feelings I had when I visited the affected cities, towns, and villages after the disaster. When I visited Kumamoto City on business a few years ago, I also visited Kumamoto Castle. I felt a sense of hope in the resilience of the castle, which even exhibited the process of its restoration. If I ever have the chance to visit Kumamoto again, I would love to do so. I would just like to taste this sake while praying for the reconstruction of Kumamoto Castle and Kumamoto.

Purchased at the end of March at the Isego main store in Nakameguro. Among the store's refrigerators, the stylish bottles of all four IMPRESSION series products caught my eye. The store staff was in the middle of serving customers, so I chose H Honochi after much deliberation while reading the store's blog ("Summary of the IMPRESSION Series"), which I accessed from the QR code on the side of the price card. Since I drank it early last week, my memory of the taste has faded considerably, but it was an impressive sake with a sweet fruity aroma.

Purchased at Hasegawa Sake Shop in Nihonbashi. One of this week's good luck bottles is "Mitsuo Yamakawa. This is a joint project of four Yamagata breweries, and the host this time is Mitobe Shuzo, the brewer of Yamagata Masamune. It is smooth on the palate but has a firm aftertaste, making it perfect for a mealtime sake. We paired it with some snacks we had in the fridge, such as Oshima kusaya (kusaya) and Toyama's pickled firefly squid with sake lees.
