In addition to conventional microorganisms (yeast, yellow yeast sake, and lactic acid bacteria), this is the first sake in history to have Pichia sp. and white yeast sake bacteria play an active role.
The micro-firing is very stimulating, and we would definitely like to pair this sake with meat.
