I found it at Yoshiike in Okachimachi, Tokyo, and brought it home because of the interesting comments on the label. Himenoi is a four-step brewing process using glutinous rice, so it is sweet in general. But it was not unpleasantly sweet, so I fell in love with it. I started with the yami, which was sweet but not too sweet, and I liked the clean aftertaste.

Fusashimaya Junmai Ginjo Unfiltered Nama-shu. It is dry but clean and refreshing on the palate. It has a nice lingering acidity. It can be drunk as a food sake. Not too sexy, but very handsome, young and plainly handsome? (I don't know.)

A friend recommended it to me as delicious, so I bought it thinking I had been tricked into buying it. It is a Junmai-shu unfiltered, raw, direct-drafted, lemon-colored, vividly labeled Junmai-shu. When I opened it, I heard a nice sound! A nice sound. The acidity and alcohol taste come first, then the umami of the rice and the thickness of the rice. I guess it is dry. Yes, I rather like it. A four-pack for 1,650 yen at Nippori-Yamauchiya is a bargain! (The photo was taken after the first glass was poured.)

I went to Isego Sake Shop about three days later with the information that it was in stock, but it was sold out. I found it at Fukuhara Sake Shop and was finally able to buy Senkin Senkohana (it was about 100 yen more than the typical price). Light on the palate, grapefruit-like freshness with a hint of spiciness. The overall flavor is modest, but it's addictive. It is easy to drink. When I drank Senkin Beetle at the store, I was surprised at how fresh it was! I would like to pay attention to Sentori for a while.

At the Mikuriya Sakaegura, Gotemba Ishikawa Shuzo's directly-managed store, we were allowed to taste several kinds of sake (for a fee), and after much hesitation, I took home a four-pack of Ei Miyamanishiki Junmai Ginjo, the first bottle I tried. The slightly sweet and rough texture, like a pear, felt fresh to me, but I wondered what it would be like to drink at home. The brewery just opened in January 2025, and we are looking forward to the future. I will support it!
