シベハス
Purchased at the sake section of Shinjuku Biclo. I was curious about this Kochi sake because I had heard that it was similar to Bunkajin. I bought it in the hope that it would be a refreshing summer sake. I thought it might be quite spicy. But it had a good balance of spiciness and acidity, and I could also taste the umami of the rice. It has a sharpness, and the alcohol lingers for a long time, but it also has a cool feeling. It is an interesting sake with a busy and ever-changing flavor profile. I would like to try other sake breweries. The bottle was a bit big ass, so I had to force it into the pocket of the refrigerator door. (The photo shows an empty bottle.)

シベハス
Himenoi by Ishizuka Sake Brewery in Niigata, which I first decided to pursue when I started drinking sake. I had to check it out because it was available at Yoshiike. I bought a four-pack of Ishoni because they had a four-pack in stock. I got the impression that Himenoi is a sweet sake made with glutinous rice and brewed in four stages. It did not have much of an aroma, and I had a feeling it would be sweet. When I drank it, I found that the sweetness came quickly, followed by sourness. The aftertaste is also sweet with a little sourness. Finally, there is a slight bitterness from the alcohol. The sweetness of the rice comes through well in this sake. I was drinking Misen at the same time, but I prefer Himenoi because it is thicker and not only sweet.

I bought it in a cup at Yoshiike. I drank it in a glass. It is a refreshing mid-meal sake with the umami and spiciness of rice. It leaves a bit of a tangy feeling, but it's easy to drink. It seems to be a good option when you want something spicy. The snowman doing winter sports is cute, so I'll use the cup for something when I'm done drinking it.

シベハス
I was curious about it when I saw it in the sake section of Biclo in Shinjuku, and did not hesitate to buy it when I saw a cup of sake at Yoshiike. It is written "shinzen" and reads "mizen. I drank it not as it was in the cup, but properly transferred it to a glass (Riedel's O). The first sip was sweet. And the aftertaste is also sweet. It leaves a kind of sticky sweetness. I didn't feel any complexity, such as a sense of refreshment or acidity, and personally, I don't think I would repeat the experience. I think I will get bored with the rather monotonous taste... I am drinking Himenoi's Ishoni at the same time, but I can feel more sourness, riceiness, and thickness in Himenoi's Himenoi which is made from glutinous rice. However, that is not to say that it is not tasty. I think it would be a good introduction for those who shy away from sake. Recommended for those who like sweetness.

I was interested to learn the story of Morishima Sake Brewery in Ibaraki Prefecture, which was damaged by the Great East Japan Earthquake and has been working hard since then. Today was off, so I went to Isego for a walk before the rain clouds arrived. The store had both junmai sake and junmai ginjo, and the clerk told me that the junmai ginjo was the one that showed the true character of Morishima, so I bought that one. The aroma was slightly apple-like, and in the mouth, after a refreshing acidity, one could taste the thickness and umami of the rice. The aftertaste is a little long and bitter. The bitterness, I think, was mentioned by the waiter. Like the packaging, it is elegant and delicious. This is a brewery I would like to pursue after Sairai's Kitanishi Shuzo. (I am a Kanto person from the root, so maybe I like Kanto sake after all?)

Hi, Sibehas 😃 Mr. Morishima's Miyamanishiki! It's delicious 🤗 It was fire-brewed, but we were hooked and drank it again and again 😌 Recently I've been wanting to drink a dry red label 🤗.

Refreshing, light acidity, but with a strong rice-like flavor. A feminine, clean mouthfeel, followed by rice sweetness. A few days after opening, it becomes a little heavy. (The photo shows an empty bottle).

Fresh and fruity. The sweet first sip is followed by thickness, umami, and riceiness, and then the spiciness of the alcohol comes slowly. (The photo shows an empty bottle).

Fluffy and nice aroma. When you put it in your mouth, the sense of rice spreads and it is sweet. It has acidity and thickness. There is a slight aftertaste. (The photo shows an empty bottle).

Fresh, sweet but also sour, with a rice-like aftertaste and long finish. The next day, I felt more sweetness, rice flavor, and weight than acidity. (The photo shows an empty bottle).

It is crisp and clean, with a slight bitterness. It is not too sweet and does not interfere with meals, making it a perfect "in-between meal" sake. (The photo shows an empty bottle.)

The pungent taste of alcohol lingers for a long time. A little sourness in the first sip, but then the riceiness comes. The riceiness comes afterwards. It finishes quickly and sharply. When it becomes lukewarm, it has a sweet taste.

I bought it at the first liquor store I went to, as it was recommended to me by the owner, who knows a lot about sake. At first sip, I felt a little sourness, but then a mild riceiness, a little bitterness, but also thickness and sweetness. (The photo shows an empty bottle)

Purchased at Isego. I've been chasing after Sairai, which is right up my alley, and it's also delicious! It is refreshing, light and gorgeous with a berry-like sweetness, and tastes great cold.

Based on my memories of drinking Isojiman brewed sake on a previous trip to Shizuoka and enjoying it, I purchased a bottle of this sake, which was hard to find in Tokyo, at Takiya in Okachimachi. Perhaps it was because I have been drinking fruity sake a lot lately, but I felt the thickness, the alcohol aftertaste, and the bitterness. The aftertaste is quite long.

I found it at Yoshiike in Okachimachi, Tokyo, and brought it home because of the interesting comments on the label. Himenoi is a four-step brewing process using glutinous rice, so it is sweet in general. But it was not unpleasantly sweet, so I fell in love with it. I had the yami first, and I liked the sweetness but not too much, with a clean aftertaste. (Photo: empty bottle)

Dry but clean and clean on the palate. It has a nice lingering acidity. I would drink it with gusto as a food sake. Not too sexy, but very handsome, young, plain and handsome? (I don't know.)
