Fuji Taikan山田錦 初しぼり 辛口生酒
シベハス
I got it at my part time job and enjoyed it so much that I bought it myself.
The clean aroma foreshadows a slight fruity flavor.
In the mouth, it is crisp and muscat-like, with a sharp, yet umami taste of rice.
There is also a slightly pungent spiciness that lingers in the nose.
The lingering finish is slightly long and slightly bitter, but not unpleasant.
It goes well with shime saba (mackerel), which was cheap because it was close to its expiration date! LOL!
Morishima is delicious, and so is this one that the great sake master Yokoyama Taikan said he could name it after him!
