Dombelli" by Hachinohe Sake Brewery, Aomori, is a nigori (nigori) sake from the Tohoku region, with a slightly sweet taste and a gentle mouthfeel. It's a great evening drink as the winter chill is in full swing. I'm going to pair it with steamed golden turnips, wasabi avocado 🥑, and sasashiori 🐟! The best 😉!

Probably the last hiyaoroshi of the year is Tsukifumi no Ike by Niigata Itoigawa's Inomata Sake Brewery. It has the impact of a new sake, with a great umami and acidity, and no cloying taste. It is very good to have the sake and the snacks go on and on, as is typical of Niigata sake 😉. We paired it with natural yellowtail tataki and roasted chicken wings, there is no reason why they can't go together 😋👍!

Alcohol ban for a week for a reason😫. The first sake of the ban is Hana Haru🌸's Polishing 55! I wonder if they still have a female master brewer. I like the way it has a good balance of flavor and is easy to drink and goes well with all kinds of snacks. Today, I had sashimi of sayori and isaki and grilled conger eel as snacks, and I would like to praise myself for choosing it 👍😉.

Gin Blue is a new release from Kikumasamune. At 10% alcohol, it is easy to drink, and the gentle fruitiness is very good, although it is intended for those who have shied away from it on weekdays. It will be my repeat drink for brunch and daytime drinking after a night shift from now on 😉👍!

I don't know how many bottles of hiyaoroshi I've had this year 🤣. This time it is a Junmai Daiginjo from Tamanomitsu in Fushimi, Kyoto. I had it when I went back to my parents' house for a while and had it with some yakitori (grilled chicken) that I brought back as a souvenir. It has a clean and refreshing taste like Fushimi's sake, and goes well with any seasoned snacks.

This is a very fruity, raw daiginjo-shu that is typical of Gekkeikan. It is fruity, but not too sweet, and has a Fushimi sake-like character, so it goes well with snacks. This time I prepared grilled yellowtail with salt and home-made pickled cucumber 🥒, but it would also go well with grilled Kyoto vegetables and pickled vegetables 😉👍.

Yamahai Hiyoroshi😋 from Fuji-Takasago Sake Brewery in Shizuoka! The "tangy, juicy, and mild" taste described on the label is irresistible. The acidity and umami of the Yamahai are well balanced with the sweetness of the rice. The best marriage between the yakitori and the yellowtail tataki, which I bought on repeat 😉👍.

The second hiyaoroshi sake of the year was Snow Kayasha by Saiya Sake Brewery. Akita sake, I always think, is a good sake to go with good snacks. Today we had grilled chicken with yuzu kosho and natural yellowtail tataki. It was the best early taste of autumn 🍂.

The hot 🥵 days are still continuing, but it's already that time of year. The first hiyaoroshi of the year was Shirayuki by Konishi Shuzo, a local sake brewery. It has a delicious hiyaoroshi taste and goes well with all kinds of dishes! A perfect marriage!

Hida's Watanabe Shuzo's Hourai "Summer Nigori" is supposed to be served on the rocks, but I had it with soda. It was like an adult cream soda, not too sweet at all, and would go well with any dish. Various slices of sashimi were seared a little. I had the bonito tataki with garlic 😋👍.

I've got a repeat 😉. I love hamo suki! 😋. We also bought a bottle of hamo cut on the bone at a local fish shop. We paired it with a Hakusetsu Junmai Ginjo from the local Konishi Shuzo brewery. I like the fact that it is not too "slick." It is a first-class sake for the common man. I am really glad to be born in the Kansai region. And watching Onihei on BS, the best summer vacation ever 🌻...Shima Iwashita would make any man fall in love with her 😍‼️

In summer in Kansai, Fushimi's sake and hamo sukiyaki is ☝️. Hamo is bought at a nearby fishmonger's and cooked in a pot with onions, mitsuba leaves, and sometimes somen noodles. Hamo is a special treat in summer. Sake from the Higashiyama Sake Brewery in Fushimi. They use 100% Yamadanishiki. It has a very good balance with the water of Fushimi.

Summer is the time for Fushimi sake and seasonal snacks! Today's sake is Gekkeikan's seasonal junmai nama-zake. It has a unique sweet and sour taste with rice flavor similar to that of Kenryo, and goes very well with snacks. Today, I'm preparing for the hard work of the coming summer ☀️ with a summer extravaganza of flat horse mackerel 🐟 and white squid 🦑 😋.

Nigori (nigori) sake from Momogawa, Aomori. It is made with water from the Oirase River system. It is sweet but has a refreshing and crisp taste. This is the kind of nigori sake that I like👍. Sashimi no shari no nokke Moridai-kai! I enjoyed it with sashimi.

Happy birthday 🎂 Ninomiya-kun and Kumiko Aso! And me too! So today I had my favorite sake from Yamagata and my favorite food, bonito tataki with raw garlic 😋. (Or even some pickled quail that I pickled myself 😉). This limited edition Hoshitenkouro uses 100% Hokkaido's "Comet" sake rice. It is a fresh, clean, umami sake with a sourness typical of Yamagata sake👍.

Kenken bonito and kenka no kenken dai-kai! with Fukuju's summer spicy ☀️ to cool down in the early summer 😉👍. The dry taste with no bitterness and umami aroma goes very well with it 😋. It's great with home-made pickled eggplant 🍆, which has been my boom lately!

Perfect for this hot and humid early summer at the beginning of the rainy season. Namazake by Kato Sake Brewery. It has a slight carbonation? It has a sourness that makes you think it is slightly carbonated. Even with its low alcohol content, it has an unbeatable flavor that harmonizes well with this season's snacks 😉. Today, I served bonito sashimi and various slices of fish on a bed of somen noodles and Awaji onions 🧅👍 in the style of a dish on a plate.

Hida's Watanabe Shuzo's Hourai, a super-limited 1888 bottles of raw sake "Irootoko", has a delicious flavor that will make you fall in love with it! It is made from 100% Yamadanishiki from Hyogo Prefecture. It is said to be made from 100% Yamadanishiki from Hyogo Prefecture. It has none of the unpleasant tangy taste of nama-shu, and I can sense that it has been carefully brewed. I really feel that it is carefully brewed without any unpleasant tastes. ...I recommend it to all men and women of color 😉.

The second half of GW starts tonight😊. Started with Petit Shuwa sake! Slightly effervescent with a very nice balance of acidity and umami. I'll be pairing it with seared mackerel sashimi and my leek balls 😋👍.
