Sansho 2021 Yamada Nishiki It's been too long since I've posted anything! This is the best sake I've had in a long time! It's been a while since I've had a sake that was this good! I just wanted to share my happiness with you! I have had it in my cellar for about 3 months since I bought it. The freshness of the gas when you open the bottle makes you expect more! The freshness of the gas when you open the bottle gives me high expectations! When poured into a glass... bubbles cling to the glass. Just like champagne! In the mouth, it's like sparkling pear juice! (Laughs) It's so good that you can't help but laugh! I could feel the bottom power of sake, or rather, its potential 🤗.

Jikin Junmai Ginjo Omachi Unfiltered Nama It's been four months since I've had a chance to drink it, and I must have it soon! So we opened the bottle today, which is nothing special. Jikin! Omachi! Unfiltered raw! ...We can't help but have high expectations! The aroma is a banana-like ginjo aroma! The taste is very complex and rich, with a pronounced umami and sweetness. Kachikoma Junmai In a word, The Classic! It is not a modern style. The aroma is mild and the rich rice flavor is accented with bitterness. The bitterness is accentuated, but it is easily sharp and crisp! And it goes great with the tin sake cups! 😀 When we drink Katsuma, we use tin cups made by Nosaku in Takaoka City, Toyama Prefecture, the same city where the brewery is located. Nanada Junmai Ginjo Unfiltered Nama Omachi 50%. It's been a while since I've posted! This is my first post, but I like it, don't you? Rather than chilling it to a crisp. The closer it gets to room temperature, the more it tastes like a tropical fruit. The closer it gets to room temperature, the sweeter the aroma and mouthfeel, and later on the bitterness appears. It's addictive! The strength and lingering aftertaste will not be defeated by a strong meal. It is very attractive! 🤗

I chose my favorite Nabeshima's limited edition sake as my first post in a while 🤗. I chose this limited edition sake from my favorite Nabeshima as the sake to be posted for a while. It's a blend of Arabashiri and Yakame (blame). It tastes rough and rich! The regular label (Jungin Yamadanishiki) is also very refreshing and delicious, but but it is juicier, more aromatic, and more rewarding to drink...!

Imi's Special Pure Nigori! I've had to put it to bed a bit. I can't help but hope for the best... Oh! This is good! Aroma of pineapple in green apple and Sweet and tangy carbonation like Calpis soda. (Even though I let it sit for 3 months!) The bitter taste and the light mouthfeel make it easy to drink. The feeling of being refreshed and going clean It's so well balanced that it's hard to believe it's a nigori! It is a brand that is not easy to get. It's in my personal Hall of Fame! 🤗

Special Junmai Yamadanishiki Shiboritate Unfiltered Nama-shu The series that was sleeping in the cellar ✨. First time I've had Kawanakajima Genmai! It's so sweet and fruity! The aroma is tropical, like pineapple. It reminds me of a certain flower bath that Pinappo is known for...! It is unfiltered raw sake, so it has a rich and powerful flavor 🤗. It's best cooled down to 15 degrees Celsius to get the right balance!

Timeless sake, NATURE (quoted on the back label) Kurage yeast, wooden vat brewing, sake yeast, 90% polished rice, kame-no-o It is said to be made by a very ancient method that recreates the Edo period production. I imagine what it tastes like when I drink it with these specs...! The sake was unexpectedly modern lol. The first thing I felt was that it was hard to believe that the rice was 90% polished. Clear taste! To be honest, I was scared lol. The taste is a combination of the aroma of the wooden vat and the sweetness of the lees. Creamy, with lingering peachy nuances The acidity is very good, just like Sentori. And the alcohol content is low at 13°. You can enjoy it refreshingly. You can feel the power of SENKYO 🤗.

Niimasa Colors Colors Series Viridian✨ The sake rice is Misanishiki, the mother is Yamadanishiki and the father is Miyamanishiki. In my opinion, the rice is a dream strike 🌾! What happens when this is brewed with yeast #6...! ...yummy lol I think it has the best rice flavor of all the Colors series. The aroma is typical of Niimasa, green and fresh, like green apple and muscat. Sweetness is moderate with a touch of sourness and bitterness. The lingering aftertaste is shallow and disappears smoothly. Is it like a darker version of the LAPIS flavor? You can feel the balance of Yamadanishiki in Miyamanishiki. It was a great sake 🤗.

I've had this series in my fridge for a while. Speaking of Nabe-sama, this is the standard Junmai Ginjo Yamadanishiki. The aroma is fruity and pineapple-like 🍍. It has a fresh tingling sensation even though it has been aged for 3 months. The taste is juicy with a touch of acidity. The palate is juicy with a hint of acidity, and finishes nicely... Kozaemon Freshly-picked Nigorizake Miyamanishiki You won't find it at most sake shops⁉️ It's a limited edition sake that you can only pick up at the brewery! The reason is because it is a rambunctious sake. It took me about 10 minutes to open the bottle even when it was chilled to the bone💦. There is no transparent part! Almost white lol! The sweet aroma of rice and the delicious taste. It's almost like a doburoku. It's so unrefined that you'd think it was doburoku. It's thick and fresh, but with an alcohol content of only 10%. It's the kind of thing you can't help but drink...!

Takasago Junmai Daiginjo Unfiltered Raw This is Takasago, another brand name of Kiyamasa Shuzo. It has a mild but pleasant aroma derived from the wooden vat brewing process. The aroma on the rise is a pineapple-like ginjo aroma. The sweetness is moderate, with a hint of umami, acidity, and bitterness. It has a tingling sensation of raw sake and a clean finish...
