It is said to be made by a very ancient method that recreates the Edo period production.
I imagine what it tastes like when I drink it with these specs...!
The sake was unexpectedly modern lol.
The first thing I felt was that it was hard to believe that the rice was 90% polished.
Clear taste!
To be honest, I was scared lol.
The taste is a combination of the aroma of the wooden vat and the sweetness of the lees.
Creamy, with lingering peachy nuances
The acidity is very good, just like Sentori.
And the alcohol content is low at 13°.
