☆☆☆☆☆☆ Totally different from Junmai sake Kakushin. This is the awesomeness of Jyushiyo...it was too delicious. Polishing ratio 50%. 100% Yamadanishiki from the special A district of Hyogo Prefecture The clear and gorgeous aroma and the flavor of the rice are brought out to their best. The aftertaste is also gorgeous, and it disappears in a flash. I have taken the liberty of giving it a score of 100 points.

☆☆☆☆ Niida Natural Sake Egg Mocktail Alcohol content 9-10 A sweet-tasting sake. I heard it was a pudding-like sake, but it is not so sweet, but naturally sweet. It is a quintessential Niida Shizen Sake. A subtle marriage of egg and rice. It has the feeling of sake, and it is a sake in its own right. Well, I guess there are different opinions, but I like it. I scored it 82 points.

☆☆☆☆☆☆ Toyo Bijin's Ichiban Cloth This is the sake that Putin drank when he visited Japan. It's amazing. It's still an overwhelmingly good sake. You can't go wrong with Toyo Bijin's sake. It is by far the best Toyo Bijin sake I have ever tasted. Yamada Nishiki Rice polishing ratio 40 Alcohol content 16%. It has a perfect balance of umami and acidity, a gentle yet gorgeous aroma, and a wonderful sharpness! It is a beautiful sake. I have taken the liberty of scoring it 100 points.

☆☆☆☆ Suzukagawa by Shimizu Seizaburo Shoten of Saku Ginjo-shu It's been a while since I've had a non-junmai sake. This is the best sake I've ever had with brewing alcohol added. Incidentally, I was shocked when I drank a Musical Instrument Masamune, but this one is even better. Rice polishing ratio 60 Alcohol content 15 The ginjo aroma fills the mouth and lingers gently. I thought it would have the characteristic kick of brewer's alcohol, but there is none. It disappears so smoothly that it is so delicious that you can't help but groan. It may be better than the Haneya we had yesterday with the same specifications. I was also surprised at how similar the flavors are! I gave it a score of 88 points.

☆☆☆☆ I haven't had Haneya since I had it at a buckwheat noodle shop in Nagano, Japan. I tried it again, and it's delicious! It has a strong melon flavor, but it's not too sweet. It has a slight seme flavor. It is a clean, refreshing and beautiful sake. I scored it 83 points.

Since nothing is added, it may be different for different tastes, but it soaks up everything. It was a very beautiful sake with no sweetness, spiciness, bitterness, or other unpleasant tastes. I scored it 80 points on my own.

☆☆☆☆☆ Shinshu Kamerei. The second day is better than the first day. It was so good that I finished it on the second day. Last time, I felt the taste change until the third day, but the second day was the best. So, I will say that I am satisfied with it. One thing I can say is that I prefer Hitogochi, but it is still sake from the same brewery. It is a sister or seven variations of Kamerei's sister? The rice flavor, sweetness, and acidity were all well balanced and delicious. I gave it a score of 90 points.

I was able to get a new bottle of Imi, which I couldn't get at the end of the year due to a touch difference, at the same store with a different sealed bottle. Thank you very much. It is sweet but not too sweet. It has a sharpness that soaks into the body. It is also sour and fruity. This is delicious! It is like Ding without the slight bitterness. It is different but similar. If someone told me it was a relative, I would believe it. I scored it 91 points.

☆☆☆☆ I was in Aomori on a business trip and saw a limited edition Houhai by Yanagida of Toyobai sake... As a Toyobai fan, I had no choice but not to drink it. I opened the bottle in my room. It's too good to be true. It was so much better than Junmai sake that I laughed. The aroma is subtle, the aftertaste is light, and it's a beautiful sake that goes down like water. The bottle was empty in no time. I will buy it again when I have a chance to come back. Rice polishing ratio 60 Alcohol content 15 83 points on its own

☆☆☆☆☆ Kamo Nishiki is a slightly filtered sake. I went to many liquor stores looking for it, but I couldn't find it. To put it simply, it tastes a little more like Sharaku. It is a surprise. Freshness and melon aroma from the schwa. The umami flavor is gone compared to the unfiltered version, but the miscellaneous flavors have been removed. It is delicious. However, it becomes a bit harsh when you drink more. I gave it a score of 73 points.

☆☆☆☆ Kamo Nishiki Packaged Sake Kosuisen Unfiltered, Bottle-fired Polishing ratio 50%. Alcohol content 13 Omachi 80 Shuwashuwa fresh melon 🍈. This is a great sake that is sure to become a superstar sake within a few years. I'll be happy if the taste changes after the shwashiness is gone. I'll drink it a little at a time. If they continue with their original filtration method called microfiltration, they will be able to create their own unique filtration technique, which is something that seems unlikely. Some breweries may already be doing this, but not on a large scale. I am really looking forward to the future. I gave it a low score of 88 points with high expectations.

The fruity taste of Yamadanishiki is beautifully absorbed into the body without any unpleasant taste. It is so easy to drink that it could be mistaken for the recently popular low alcohol. It is so delicious that you can't help but let out a roar. The aftertaste is a little bit strong and sharp, but it lingers for a long time. The aftertaste is refreshing and has no unpleasant sensation at all, making it a top-class sake. The balance of sweetness and acidity is quintessential Nanyo Brewery. It was a wonderful sake, just like Hanaoyo Brewing. The price is just right for the price. It was the best Yamada-Nishiki sake I have ever had. I have taken the liberty of giving it a score of 98 points.

☆☆☆☆ Tobiroki and Jyushiyo continued Miraculous all-you-can-drink bottles! Better with fish than drunk alone. On the first day, there was an almond-type aroma reminiscent of aged sake, but it disappeared after the second day and was replaced by umami. Nama sake is still nurturing (a selfish theory). Sake with a strong habit can turn into a rather drinkable sake if you wait. If you open the bottle and spritz it every day, you will be able to drink it even if it has a strong habit. It tastes better on the second day than on the first day, and on the third day than on the second day. Moreover, it penetrates more deeply into the body. As with Jyushiyo, this level of sake is my favorite. It is extremely delicious. The moment you put it in your mouth, the umami expands and then it suddenly becomes sharp. I scored it 90 points on my own.
