⭐️⭐️⭐️⭐️⭐️ Iinoya, the hall of fame of sake 720/ Junmai Daiginjyo Unfiltered Unrefined Genshu Fire-brewed 15%. Tokushima Ken Aizan 50% 2024.09 I bought this to compare with Yajima Sake Shop's Nama Sake 😊. Even though it's fire-brewed, it's totally fresh and juicy😊. I wonder if it's really called "settling down a bit"?

⭐️⭐️⭐️⭐️⭐️ Yajima Sake Shop 1800/ Tokubetsu Junmai 15% Japan-made rice Domestic rice 60% 2024.08 This is the newest one, except for the recipe that has been carefully prepared since a certain master brewer left the company 😊. It's a little bit spicy, but it's not bad at all 😊. I wonder if it's a product for Izakaya (Japanese style pubs). I wish they had a 4-pack bottle for easy drinking 😊.

Tokushima Kenaiyama 50% 2024.09 Yajima Shuten's Betsuatsurai, a raw sake that was also released last year 🍶This year it has been powered up and is now "Nakatori" 😊The price has remained the same, which is nice 😊. It has a pear and cherry taste on the first sip, and a mango and banana taste as the temperature rises 😊and a great clarity 😊. I heard that Yajima Sake Shop had prepared 1500 bottles but when I went there a week after the release, it was sold out😱I'm glad I pre-ordered 😊The recent popularity of Kangiku San is just too much 😊.

⭐️⭐️⭐️⭐️⭐️ Inomoto Sake Shop 720/3800 yen Junmai-shu 13%. Hozu produced in Wasui-cho, Kumamoto ? % 2024.08 It is said to mean a festival to calm down typhoon 🌀 at a wind-breaking ceremony. I was so frustrated that I decided to go to Inomoto Shuzenten and buy a bottle of Hozu, which has the title of this sake! I bought it and found this sake 🥹. The taste is drier than the usual Hozasu, but it has more grapefruitiness, with 1.5 times more acidity and bitterness (compared to ours). This is amazing 😊.

⭐️⭐️⭐️⭐️⭐️ Mori Shuzojo 720/2200 yen Junmai Nama-nama Sake 14%. Kake rice: 80% Uruchi rice (harvested in Itoshima City, Fukuoka Prefecture) Koji rice: 20% Yamadanishiki produced in Itoshima City, Fukuoka 60% 2024.08 Limited edition sake from the brewery (there seems to be a different label for the Furusato tax payment and so on). Organic fertilizer and pesticide-free rice is used in the Ihara Yamada En Project to preserve terraced rice paddies🌾. The aroma is nice and full, with a hint of Japanese pear rather than the grapefruit that is typical of Hiran 😊. I didn't write it down... it was orikara: ☺️

Hitogochi from Yaebaru, Tomi-city, Nagano 55% 2024.08 As I am addicted to Yamazan, I wanted to try Sanada Rokubun Sen, which has a good reputation on the net, so I popped it on the net ☺️ (I couldn't find any Yamazan dealers in the neighborhood, even though I inquired about it). It has a more lactic acidity than Yamasan, and when it is cooled down, it has a delicious bitterness. However, I think I prefer Yamasan. If Yamazan is a clean drink, Rokubun Sen seems to roll around in a moist environment. ☺️

The first supernatant was dry and I wondered if it had citrus acidity and sweetness. The fizzy sensation was gentle and shrieky with some fire, Then, when the lees started to mix, it became an adult squall 😊. This is delicious 😋.

It is massive😊. Reminded me of the feeling I had when I drank Jyushiyo. Hmmm... I think I like this one better😊. I would like to try drinking the Kikka and Umehana 😊. Ate, Basil cheese, goes well with it😊. Convenience store, yakisoba, goes well with it😊. Memories of my trip to Kumamoto on my Kyushu trip. After the typhoon passed, we visited the Catholic Church of Sakitsu in Amakusa. A very remote area. I wonder if this is where the hidden Christians fled and arrived. I drove through the Amakusa area in a rented car, thinking about those days 😊.

Hinohikari & Gin no Sato from Saiki City 65% 2024.05 Sake degree +2, Acidity 1.5, Amino acidity 1.5 While searching for souvenirs in the airport, I found a nigori sake I had never had before. It was quite rough. Compared to the Tanaka Rokugo sparkling sake that I drank later, it was dry, but the sweetness and the fineness of the bubbles were rough. Good for the hot summer months 😊.

Typhoon hit Kumamoto 🌀N~Inomoto Sake Shop was closed temporarily😱. But the next day it was open 😊Lucky ✌️ One of the several bottles I bought😊.
