Tokushima Ken Aizan 50% 2024.09 I bought this to compare with Yajima Sake Shop's Nama Sake 😊. Even though it's fire-brewed, it's totally fresh and juicy😊. I wonder if it's really called "settling down a bit"?

⭐️⭐️⭐️⭐️⭐️ Iinoya, the hall of fame of sake 720/ Junmai Daiginjyo Usunigori Unfiltered Nama-shu 14 Yamadanishiki(20%), Gohyakumangoku(80%) 50% from Chiba Prefecture 2024.07 Sake Degree -12, Acidity 1.2, Amino Acidity 1.0 Until last year, it was Yamada (50%) & Ihyakumangoku (50%)? This year, the specs were changed. It is now 20% Yamada and 80% Gohyaku. It's more like an adult Ramune, but with a little more sweetness and closer to an adult Mitsuya Cider 😊. Only on the label of this bottle is a hidden sapphire jewel 💎...secret 👍.

🌊🌊🌊🌊🌊 Iinoya, the hall of fame of sake 1800/3080 yen Junmai Ginjyo Unfiltered Nama Sake 14%. Yamagata Izuwasanzu 55% 2024.06 At the first sip, it was like "Kangiku"? I thought it was like a fresh Mura-yu. It has a sweetness like Wasanbon and a citrusy acidity, without much minerality 😊. It is easy to drink during the hot summer season 😊. The fact that the price is unchanged from last year is also great 😀.

The sweetness seems to have increased...it's closer to Murayusyu 😊Good taste 🫡. The same Aiyama 40 Noto Fukkoshu was rough and fresh, but this Red 💎 was calm and mature 😊.

🗻🗻🗻🗻🗻 Iinoya, a hall of fame sake 1800/ Junmai Usu Nigori 15% 15 Ibaraki Gohyakumangoku 65% 2023.12 Ogawa yeast A famous sake from my second hometown, Ibaraki. I used to get Kirizukuba as a New Year's greeting 😊. The best parts of Gohyakumangoku come to the fore: ✌️ It has a good balance of sweetness, umami and acidity and goes down your throat very well. It goes well with any entrée. ✌️ Speaking of which, I have one regret 😱. Urasato Sake Brewery brewed a lot number of Ebina's Katsuren Min lot number when he retired. I regret not being able to purchase it at the time 🥹.
