Using Tamanae (Yamashu No. 4) and Saitama G yeast The aroma is apple-like and not that spectacular. The taste is slightly sweet and the umami is very full. The taste is very voluptuous and drinkable along with a bit of complexity that is typical of nama sake. Delicious! Good sake with a good balance of fruity and classic flavors.

Nanamizu Junmai 70 Yamada Nishiki I've been drinking Nanamizu for a while, but Yamadanishiki seems a bit rare. It has a slightly unusual fruity aroma that is typical of Nanamizu, with a gourd-like aroma and a kiwi-like acidity. The main taste is clear sweetness and umami. The acidity is also quite tasty, and the aftertaste is refreshing and clean. The final taste is a little complex, but that may be due to the fact that it is junmai. Overall, it is a very clean and tasty sake.

Akabu's sparkling is GALAXY using Ginga Ginga, but this one has similar specs, but is made from Daiginjo Yunokou with 40% polished rice. The bottle was slightly spilled when opened, but the carbonation was not too strong. The aroma is surprisingly acidic, with a hint of lactic acidity added to the pear aroma often found in nigori. The taste also has a full flavor, but overall it is a bit sour. It is refreshing, easy to drink, and delicious while still being very drinkable. It is not as sour as champagne, but I think it is close to its position in sake. Sour and dry with a relatively complex flavor, making it a very versatile type of pairing.

Craft saké based on the "Hana-Hashiroku" method of making doburoku from the Tohoku region using the Oriental hop "Karakaso", and also containing hops similar to those used in beer. This time, Sencha green tea from Shizuoka's main mountain is added to this special order! We used beer bottles, but the carbonation is not that strong. Mildly fizzy compared to regular activated nigori The aroma is of blue grass, flowers, citrus and grapes from the hops, and a refreshing hint of tea. Complex, yet very fresh, with a beautiful finish that is rarely found in craft beers. The main flavor is the sweetness of the rice. The taste is mainly rice sweetness with a hint of grapeiness from the hops and a touch of chouxiness. There is also a slight tea flavor and astringency, making it a very deep beer. Delicious! I also enjoyed the hops with agave, and I wonder if rice sake might be a better match for hops than beer made with malted barley.

Since I was able to buy so much this year, I'm going to spend New Year's Eve with Jyushiro today! A 35% polished special A Yamada-Nishiki sake. The sake is said to be made by selecting the best unrefined sake and storing and aging the best ones after fire-quenching. The price is probably between Gokujo Morohaku and Nanadaru Nijukan. The aroma is gorgeous and apple-like. The aroma is gorgeous and apple-like, with a hint of peach and white flowers. The taste is still a little fresh and shows the greatness of Jyushi-Dai's unique fire-working technique. The main taste is fruity and mildly sweet like apple and melon. It has a slightly sweet taste, but the aftertaste is clear and not too harsh, making it easy to drink. A model of the sweet and tasty type of sake. Daiginjo Shizukusyu made with Yamadanishiki produced in Yoshikawa The aroma is very mild for a daiginjo. The aroma is very clean with only a slight hint of ginjo aroma. It might be more pleasant at higher temperatures. The taste is very clean and clear, as is typical of Shizuku-shu. The sweetness of the rice and alcohol are blended together for a very smooth taste. There is almost no acidity, but it has a clean and crisp aftertaste, probably due to the fact that it is alkyu-soaked. Simply delicious! The aroma and taste are relatively modest and lack impact at first glance, but overall the balance is exquisite without any unpleasantness, and it is a very well-made daiginjo.

This is KIYOMIZU from the same hanpukai. The difference is that Maikaze from Gunma Prefecture is used instead of Gohyakumangoku. The aroma is the same as SAKAEMASU, but milder. The taste is surprisingly less cloying than SAKAEMASU. There are not many rice varieties that have a cleaner sake quality than Gohyakumangoku. The sweetness is also relatively strong and full-bodied.

SAKAEMASU, the main brand of Shimizuya Brewery, which uses wine bottles and corks to promote value enhancement through aging and vintage sake. Usually stored fresh, but the hanpukai is a special draft version! The aroma is slightly mild and banana-like. Slightly acidic, typical of junmai sake. The taste is quite complex. In addition to the banana, there is a sweet umami taste of rice, and a complex taste of grain and bran, reminiscent of the recent Nirvana Turtle, which is a low-polished sake. I have only had aged sake, but my impression was that it was more mellow. Well, it's not that it's bad, but it's not for everyone... I don't think it's for my taste.

I never thought that Gohyakumangoku, which was at the bottom of my ranking of Hahyokuso, had become so delicious.

Kangiku no 39 has already become a year-end staple. Today, I'll have the regular draft version first. The aroma is apple-like, typical of Kangiku. Compared to last year, the pineapple-like acidity is less pronounced. The taste is very clean and sweet. It has a full flavor, but it also maintains a sense of transparency, which is really great! I am not sure if it is pineapple or not, but the tropical and fruity acidity finishes the taste refreshingly. Not only delicious, but also very beautiful! Personally, I might actually like last year's saké, but the quality of this year's saké is better than last year's, and you can tell that it is improving every year! A great sake worthy of Kangiku's signature!

Mikumari series is brewed with Nikko's God's water. I can't help but think that the low list price is the best feature of this product. Gorgeous aroma like ripe apples. Not too sweet for a Houou Mita. It is said to be characterized by a slight effervescence, but personally, my first Hououmida was a fresh Black Phoenix, so I think it has a carbonation that is typical of Hououmida. The taste has a mild sweet flavor and a comparatively strong acidity, and it's very refreshing and light. It's not so dry, but it's very easy to drink among Hououmida, and you can't stop drinking! I'm not sure if it's new or not, but I think it's a great sake!

Asahi Koh's sake to be entered in a sake competition A brand with great technique, but I have the impression that it is not widely distributed outside the prefecture. The aroma is capsule-like and very floral. Even the sake bowl is a little too gorgeous. Fruity aroma with hints of green apple, Fuji, and pineapple. In addition to the fruity flavor, it has a dense yet clear sweet and delicious taste. The slightly higher alcohol content makes it very drinkable, and you can feel the smoothness of the daiginjo-like mouthfeel. I've been drinking a lot of low alcohol sake lately, so this one has more of an impact. You may not like the taste, but it's amazing that I couldn't find any negative points at all! It's the kind of sake that has won a lot of awards!

The last bottle of the day was a UA Snowman. It was supposed to be skipped this year, but they made a big change in the assemblage and decided to base it on Grand Natural, so I rushed to buy it! The carbonation was pretty strong, took about a minute to open the bottle. The aroma is relatively mild, but there is a milky sweetness and slight lactic acidity that seems to be typical of Senkou's nigori sake lately! The mouthfeel is strongly carbonated. After the carbonation, it becomes silky and mellow. The taste is clear for a nigori sake with moderate sweetness. The acidity is only carbonation and a thin lactic acidity, but the balance with the sweetness is just right, refreshing and easy to drink. Delicious! Compared to the previous UA Snowball, the acidity has been reduced and the milky sweetness that is characteristic of snowballs is more apparent. It's definitely a very tasty sake, but I wonder if the next one will be different since the Grand Natural is sort of a limited edition this year.

The third bottle is Retro with a retro-style label. Same ratio of rice as the classic, but with Omachi instead of Kame-no-o But not yeast-free. The aroma is quite bananas. And a little acidity typical of Omachi. The taste is quite dry at first. Then the sweet and umami taste develops and it becomes very rich. Finally, the acidity finishes the taste. It's very crisp and tasty! I don't know if it is typical of Sentori or not, but I think it shows the characteristics of Omachi well. It is the most satisfying and tasty sake among the three bottles of Edobori.

Next is a classic. The rice used is Yamadanishiki and Kame-no-o, with Yamadanishiki as the malted rice and Kame-no-o as the finished rice, and fermented with natural yeast with no yeast additives. The bubbles when pouring are clearly more abundant than in the Modern. The aroma is quite mild. There is only a slight banana-type ginjo aroma. In the mouth, there is definitely quite a bit of carbonation. Other than the carbonation, there is not much acidity, and the flavor is mild with a slight banana taste. Simple taste, but easy to drink and delicious! Especially compared to Modern, it is not sweet and has carbonation, so it is much easier to drink. Normally I prefer the sweeter one, but this time I have to say they each have their own strengths A very clean and tasty sake that doesn't feel like a natural sake!

Finally, it's time to taste SENKOU Etoebari! I've had a lot of limited editions, but it's been a while since I've tasted a regular Sengoku. The aroma is quite strong with lactic acidity and citrus acidity, with a touch of sweetness, giving it a sweet and sour image. The previous Sentori Modern was also sweet and sour, but more fruity. Since it is unfiltered raw sake, there is a slight carbonation, but not so much that it affects the taste. The taste is definitely sweet and sour, but surprisingly not too sweet and sour. The acidity is mainly a mellow sweetness that enhances the thickness of the flavor, and the taste is clear and transparent for a lactic acid type sake. It is easy to drink and tastes good. This is a good sake that deserves to be SENKYO's signature sake from now on.

New this year Finally, 40% Ihyakumangoku is available. I know it doesn't sound the most like a hana-yosu, but you have to try it once. The aroma is very fresh and gorgeous. It has a pineapple-like flavor, but it also smells a little bitter. And for an Ihyakumangoku, it's quite rich and sweet. I thought 40% would be more beautiful, but I guess it's because it's a bit of an ogorigami. The taste also defies expectations and is quite beautifully sweet and umami. The acidity is not so strong, but it tastes sweet and sour. What is especially surprising is that there is no bitterness at all. The rich flavor of Hanahyokan and the refreshing flavor of Gohyakumangoku are well balanced, and it's just plain delicious! Perhaps the shift to more sweetness from last year may have had some influence. I compared it with last year's Omachi 48, and to my surprise, this Ihyakumangoku seems to be sweeter! Personally, I like the sweeter Hana-yosu, so I think it's a welcome trend. I was planning to skip it this year, but if Gohyakumangoku is this good, I might have to buy Miyamanishiki too!

CEL-24 from R1BY Aged almost 5 years, so a good opportunity to verify how long the fresh smoked sake will last. The aroma is still a little pineapple-y, but there's also a slight, slightly medicinal bitterness, not unpleasant but still something. The taste is, well, sweet and sour, but not fruity. The acidity is still pineapple-like, but the sweetness is thicker, like aged honey. The bitterness is surprisingly almost non-existent. I have to say that this is a delicious but different sake. To sum it up, the pineapple-like fruity flavor doesn't last long, but sweet and sour sake is somehow suitable for aging.
