The second bottle of Fight Taiwan was a Junmai Daiginjo from Hato Masamune. The aroma is apple-like, but comparatively rich and sweet. The taste is definitely full, sweet and umami, and unlike Kirakucho's refreshing taste, it is very drinkable. The acidity is not very strong and not of the sweet and sour type, but the balance with the sweetness is just right, and it is easy to drink with a clean aftertaste. It is normally a sweet and tasty sake. However, there are a few hints of pickles and sourness in the taste. It's best to drink it while it's still fresh.

This month's hanpukai sake Junmai Daiginjo made with our own paddy rice Slightly floral with a bit of alcoholic sweetness and a fruity apple-like aroma The taste is sweet and fresh, like a ripe apple. The acidity is relatively low, and it is a mellow umakuchi type, sweet but with a deep flavor that makes it very drinkable. A delicious sake of very high quality.

Bodai Hashiroshi Research Group brewed by Shorinji, Imanishi, Ueda, Katsuragi, Kikuji, Kitaoka Honten, Kuramoto, and Aburacho. Bodai-zen is a sake brewed in a jar without the traditional brewing process. It's a kind of Bodo sake. Sake strength of -31 and acidity of 10.9, just like the sake mother. Although it is less than a year old, it looks and smells like an old sake! It has a thick honey-like aroma like a particularly matured kijo sake, and it looks very sweet! The taste is quite sour. I expected it to taste sweet and sour, but there was almost no sweetness. It's just like drinking vinegar, as it's a sake that doesn't go bad even in the summer! It's not that it's bad, but rather that the more you drink it, the more addictive it becomes, but it's definitely a very selective drink. It may be more approachable to wine drinkers than to sake drinkers.

The taste is also quite dense with a sweet umami flavor. Hana-yosu has a strong flavor to begin with, but it seems to be even stronger. It has a rich sweet taste comparable to that of a light kijo-zake. It is easy to drink in spite of its sweetness, but there is no denying that it has a little bit of a habit. It is not a fruity, beautiful type of sake, but it is a very satisfying sake with a rich flavor that is characteristic of Kahayo-takoyaki.

The sweetness is moderate, not dry, but refreshing. The overall taste is a bit thin due to the low alcohol content of 10%, but it is very refreshing and easy to drink. It's a normal, tasty sake that you can drink on a hot day.

Second bottle of gourd bottle. Last time was a Daiginjo of Yoshikawa rice, but this time Junmai Daiginjo is Tojo rice The aroma is very gorgeous! It has a fruity aroma like apples and is slightly sweet. The taste is dense yet beautifully sweet and umami. It is not simply sweet, but has a deep and rich flavor. There is no sense of alcohol and it is not smooth like a daiginjo, but at the end, it has a slightly dry taste that is clean and crisp and does not linger. Easy to drink and delicious! It is a modern type of sake with a high quality and a very good balance.

This sake won the Top Brand in this year's Kura Master, Pure Grand Platinum! I didn't buy it for that reason, but it certainly piqued my interest even more. The aroma is capueti and very floral! A little sweet and sour, like ripe green apples. The taste is very tart like a green apple, fresh and juicy. The sweetness is a little subdued and the taste is clear and gentle, making it easy to drink. Overall, it is a well-balanced, medium-bodied sake that is normally delicious.

Eikun produced by Marie Chiba The aroma is very strong muscateliness. I don't think I've had such a strong one since Rice and Agave Rice and Hops. For a regular sake, it certainly has a very special aroma The flavor also has a muscat aroma, but it's not that different from a regular apple type. Fruity, moderately sweet and delicious. The lingering aftertaste is a bit long, which is a bit of a feature. If you like muscat aroma, I highly recommend this bottle.

A summer-only sake named after the river festival, a traditional event to give thanks for the blessings of the water. The specs are exactly the same as the regular Hozumasu Gonohozo, but the brewing time may make a difference. First of all, I'd like to say that you need to be careful when opening the bottle... this is seriously the most dangerous of all the regular draft sake, and the bottle will fly open with as much force as the active sake! The aroma is of melon and yogurt. The acidity hasn't changed much, but it seems to have become a little drier. Maybe it's because the sweetness has decreased. The taste is certainly not as sweet as the last San-do and is relatively refreshing. But it has a strong umami flavor that keeps it drinkable, and it's different from the usual light summer sake. Overall, I'd say it's like a slightly easier to drink version of Hozu. You'd have to compare the two to know for sure. Anyway, there is no need to worry that it tastes completely different.

The aroma was apple-like and fruity, but the acidity was a little strong and hard. It fits my personal image of Sake Mirai. The taste is sweeter than I expected. It is one of the two sweetest in the Occasional series. However, it is not the typical thick sweetness, but a clear and crisp taste. The bitterness is kept very low, which is also very important. Easy to drink and delicious! A great sake that lives up to the names of Kangiku and Sake Mirai!

Isshaku Suisei, this year's gold medal winning sake It is a 35% Yamadanishiki Daiginjo, but the yeast is probably Cap-Etsu type The aroma is fruity and strong with a hint of capechi. The aroma is certainly beautiful, but I would prefer a little more acidity and sweetness. The taste is delicious, with a decent sweetness and umami. The umami in particular is richer than I expected, and it's so drinkable and delicious that it doesn't feel strange to call it junmai. The sharp aftertaste is typical of Aruze. I expected it to be a beautiful sake, but it is a very tasty sake with a strong flavor and impressive skill in not producing any cloying flavors.

This month's hanpukai Okutanba Mokufuda no Mukotsu Nakadori (bag-hanging?) Limited Sake The aroma is gorgeous and has a strong apple flavor. The new Eiko-Muji, or rather, a bespoke ori gara-mi. The only other non-standard ogorigara I know of is The Platinum. The aroma is gorgeous, with hints of apple and pear. The sweetness was overwhelmingly strong when I drank it last time, but there is a firm acidity and the balance is getting much better. The taste is also sweetened by the ogori-gami, but it is still sweet and sour and easy to drink. It's tropical, fruity and delicious. The sweet taste is very satisfying for those who like sweet sake, and the balance has been well maintained, making it a very tasty sake.

There are many pineapple-like takachiyos, but this is a true pineapple takachiyo with a pineapple label color! The aroma is pineapple-like. If I were to compare it to a hana-yosu, it would be more Yamadanishiki and less Miyamanishiki. The taste is rich, thick and sweet with a pineapple-like acidity. Sweet and sour. Delicious! This year's Huayangbao is comparatively sweeter, but this one is even sweeter. As someone who is used to sweet pineapple in Taiwan, I think this kind of sweet pineapple is the best pineapple. The strength of pineapple is that it has a strong core of acidity, so even if it's a little sweet, it doesn't become too sweet. I'll have to compare it with Kameizumi CEL-24, which is the latest pineapple. If you like pineapple sake, you must try this one!

It's been a while since I bought a new Takachiyo. There are many fruity sakes, but strawberry is a bit rare. But Takachiyo's Ipponshime brewing often has a strawberry flavor... The aroma is fruity, but not strawberry-like. It is true that the type of sourness is close, but it is a little too mature and lacks sweet and sour taste. The taste is like drinking a juice with a sweet and sour taste. As for the strawberry theme, the combination of sourness and sweetness can be described as a whole strawberry. However, the type of sourness has a citrusy feeling, so it is a little subtle to call it strawberry. Either way, the fresh acidity makes for a very refreshing drink that is really perfect for hot weather! Takachiyo's fruit series never fails to deliver!

Ryujinmaru after a long time I didn't have a chance to drink it because it's a bottle, so it's been aged for 3 years now. It is a 50% Yamada-Nishiki polished unfiltered unpasteurized sake. The alcohol content is 18%, which is higher than the trend. The aroma is mild ginjo with a hint of rice and grains. It seems to be a classic sake, but it is more beautiful than ordinary sake. Maybe it is because it is made by hanging it in a bag. The taste is full, strong, sweet and umami. And I don't know if it's because it's unfiltered raw or because it's aged, but it's very drinkable and delicious, accented with a rich cocoa and malty flavor. What is particularly impressive is that it combines a rich taste with a light mouthfeel. You don't notice the 18% alcohol content, and the aftertaste is refreshing and very easy to drink! I don't often drink classic type sake, but I think it's a very good and well-made sake.

H-type after four years In addition to becoming sparkling, the rice polishing ratio and alcohol content have also changed considerably. It reflects the direction of Shinsei over the past few years. The aroma is quite sweet, reminiscent of Senkyoku's UA zodiac bottle. The aroma is sweet and a bit sour, like Calpis undiluted, with the addition of lactic acidity. The fruity flavor is also unusual, like peach or green mango. The carbonation is about the same as last year's X-type and A-type, and the bottle can be opened normally, but it bubbles up when poured. The taste is sweet, but the aroma has a sugary sweetness, while this one has a sweet umami taste that is very typical of Shinsei. Well, it is certainly sweeter than the regular No. 6, a bit like the old Xmas-type. The recent Shinsei tends to be relatively acidic, so this is the most dangerous sake I've had in a long time!

I heard they made it more mellow than R-type, but I wonder if it's compared to this year's R-type. I thought it has a strong sweetness in No.6, but I hope it's sweet enough. There's no indication of oak barrel storage, but I can clearly taste the woody flavor too. Maybe to differentiate it from the direct pass. I've been writing about what I like about No.6 every year, but it's still a delicious sake like No.6.

Established in 2011, NONDO's sake brewery mainly produces doburoku Rice bran is also included in the ingredients, so the description is "other brewed sake. Mizu-hashiroshi, a Muromachi period production method, with no yeast added. Home-grown Tono No. 1 rice with Kame-no-o as its mother is polished to the level of rice rice and fermented with the rice bran that is produced during the process. The aroma is a bit similar to that of Senkou's all malted rice sake, with a slightly acidic taste and a unique sweetness. It is more ordinary than I expected... maybe I drink too much strange sake. Taste is quite sweet Overall, it tastes sweet and sour, similar to a normal lactic acid drink It tastes a lot better than I expected. Maybe if you can get used to the special flavor from the koji, you can drink it as a normal drink, and the alcohol content is low. It's really a great idea to add the shaved bran back in instead of not polishing it. It's probably the best sake I've ever tasted using the maximum amount of rice, better than Kaze no Mori or Niimasa! I'm new to this brewery, but I'll give it another try when they come out with a new product!
