A challenging kijoshu brewed with beer yeast. It is a pure sake but with a lower alcohol content of 12%, 2% lower than the standard Kijoshu Reborn. The aroma is quite mild. Slightly acidic, which is not typical of sake. The taste is definitely more acidic and the sweetness is stronger. Overall, it tastes sweet and sour like Yakult. It's different from the fruity taste of Reborn, but it's delicious in its own way. A good sake that should be made into a regular product.

Sake rice that changes with each Chinese zodiac sign is crossed with Yeast No. 12 in this series. This year is the second year and the sake rice is Hachitan-Nishiki. The aroma has a strong lactic acidity and a banana-like fruity flavor. It is similar to the recent Sengoku and Sancho. The taste is also very acidic and refreshing. Then a mild sweetness and umami comes out, and while it is very drinkable, it has a clear taste that is typical of Hachitan-Nishiki and is delicious. The aftertaste is refreshing and easy to drink. It is a normal tasty sake. Recommended especially for Shinmasa and Sengoku lovers!

Junmai Daiginjo made from special grade Yamadanishiki produced in the special A region of Yoshikawa The aroma is extremely gorgeous. The aroma is fruity and sweet like banana and melon Smooth mouthfeel that only a premium Daiginjo can offer. Very elegant and clear with a sweet flavor that seems to condense the essence of the rice. Watery and refreshing aftertaste I can only describe it as an impeccable and wonderful sake! In fact, I opened the bottle a month ago and refilled it, but I was really surprised to find that the aroma and taste have not diminished at all!

Junmai Daiginjo brewed with the father of Yamadanishiki, Short Stick Watabune (technically, a similar variety, Watabune No. 2). The aroma is mild for a Nabeshima, with a fruity, apple-like flavor. The taste is full yet clear with a sweet umami flavor. A little fruity, but the rice flavor is also quite rich. Overall, it's a little more modern, but it's really very drinkable. Delicious! A little out of character for Nabeshima, but a good sake that balances well while bringing out the characteristics of the rice used to make it.

Junmai Daiginjo brewed with 50% polished rice and limestone hard water The aroma is rather mild. Personally, I feel that there is almost no fruity flavor, but rather a complex smell of raw materials. The taste is mainly rich sweetness and umami. It is very drinkable and not as dry as one might expect. A little classic acidity comes out at the end, with a crisp finish. For a classic sake, it is quite easy to drink and tasty.

The combination of carbonation and lactic acidity makes the taste not sour, but quite refreshing. I thought it was a bit un-Nigori-shu like, but that's good because it's just like a snowball! It is a very unique and delicious sake, and you can't talk about nigori sake without drinking it!

Since I was able to drink Jikin this year, I decided to try all three major nigori. First of all, Hirotogawa which is the easiest to buy! The carbonation was not as strong as I expected, and I could open the bottle normally. I could have bought it a long time ago, though! Not very fruity, but mellow and sweet with a rice aroma. The taste is very full rice sweetness and umami, like drinking rice juice! The taste is rich and satisfying, but the carbonation is very refreshing and easy to drink! A little bit dangerous! It's relatively simple, but it's delicious and gives you a strong sense of nigori sake's charm. As expected of a sake that is talked about in the same breath as Jikimatu and Yukidama!

Shinryu Nishiki, a new sake rice from Ryuriki, a cross between Yamada Nishiki and Shinryu and recognized as a suitable rice for sake brewing two years ago. This time it is a Junmai-shu that has matured for about a year and a half in R4BY. The aroma is mild, with a slight sourness with a sense of maturity, but I don't dislike it. The taste is a rich sweet rice flavor. There is a slight raw material taste, but overall the taste is rather clean. The finish is rounded off by a mild acidity. It is a classic sake that is usually delicious.

Finally, the Sanshiki bottle of Senkou Etoobari was opened! Sanshiki is a sparkling wine made by secondary fermentation in the bottle. First of all, the carbonation is usually stronger than the recent Tenkaeru! It took a minute or so in the sink, chilled to about zero degrees Celsius! The aroma is pear-like, which is common in sparkling sake, with a bit of milky sweetness, like a snowman or a UA zodiac bottle would do! The taste is strong carbonation at first. And for a moment, the sweetness is stronger than I expected. At the end, the taste disappears and it feels as if you were drinking soda water. To be honest, I would like to see a little more aftertaste, but I think it is quite rare to find such a refreshing and easy-to-drink alcohol. It is a very dangerous type of drink that does not feel like you have drunk it at all. It's a completely different sake from other modern Sengoku, but it's a good sake that deserves to be a new Sengoku!

The sixth of the twelve signs of the Chinese zodiac and my own sixth Tazake New Year bottle. The aroma is the usual apple type. The freshness is less than before and the maturity of the fruit seems to have progressed. The taste is definitely low in acidity. The taste is rich and drinkable, with a dense sweetness like ripe apples and a bit of raw material bitterness. The fruity and sweetness is a bit higher than usual for a balanced type of tasake, but it's also delicious as usual! Definitely one of my favorite sakes to drink every New Year's!

Craft saké brewed with Citra hops added The purple color is said to be a polyphenol property of the hops. The color of the 稻 and agave 稻 and pop were similar, but I think this one is a little darker. The aroma is almost entirely grape and citrus from the pop. I think it's more like a craft beer made from rice than a craft saké. Well, it's non-foamed, after all. Taste is definitely more hoppy than saké and pop. The base is definitely the sweetness of the rice, but the grapeiness and the astringency from the hops have a stronger impact. It's good, but not great. It's hard to say how to rate it because it depends on your taste. For those who like hops, one advantage of this beer is that it can be paired with a wider range of foods than craft beers.

Nowadays it is quite rare to find a ginjo that is not junmai. Dry with a sake degree of +8 and a high alcohol content of 18%. The aroma is very floral and can be clearly detected in the bowl. It has a slightly sweet, ripe apple-like aroma. There is also a slight smell of raw materials like grains, probably because it is directly pumped. The taste is fuller than expected, with a sweet umami flavor. Recently, I have been drinking only low alcohol sake, but this kind of strong flavor even when watered down is rather new to me. The final taste is clean and crisp, with a slight spiciness from the alcohol, which is typical of ginjo-shu. It's just an ordinary tasty sake. It's more like a food sake, or a sake that whets your appetite.

Edo Bari Sentori Modern Ori-Garami The aroma is also characteristically sour but mellower, and the overall impression is comparatively sweet I think the carbonation is stronger than that of Zero, probably because of the orikara flavor. The balance of sweet and sour taste is the same, but the overall taste is thicker. Personally, I prefer the clear one, but I guess it depends on your taste. It is a delicious orikarami that is typical of Senkyoku.

Nanamizu Junmai 70 Yamada Nishiki I've been drinking Nanamizu for a while, but Yamadanishiki seems a bit rare. Craft saké based on the "Hana-Hashiroku" method of making doburoku from the Tohoku region using the Oriental hop "Karakaso", and also containing hops similar to those used in beer. I also enjoyed the hops with agave, and I wonder if rice sake might be a better match for hops than beer made with malted barley.

Since I was able to buy so much this year, I'm going to spend New Year's Eve with Jyushiro today! A 35% polished special A Yamada-Nishiki sake. The sake is said to be made by selecting the best unrefined sake and storing and aging the best ones after fire-quenching. The price is probably between Gokujo Morohaku and Nanadaru Nijukan. The aroma is gorgeous and apple-like. The aroma is gorgeous and apple-like, with a hint of peach and white flowers. The taste is still a little fresh and shows the greatness of Jyushi-Dai's unique fire-working technique. The main taste is fruity and mildly sweet like apple and melon. It has a slightly sweet taste, but the aftertaste is clear and not too harsh, making it easy to drink. A model of the sweet and tasty type of sake.
