The sixth of the twelve signs of the Chinese zodiac and my own sixth Tazake New Year bottle.
The aroma is the usual apple type.
The freshness is less than before and the maturity of the fruit seems to have progressed.
The taste is definitely low in acidity.
The taste is rich and drinkable, with a dense sweetness like ripe apples and a bit of raw material bitterness.
The fruity and sweetness is a bit higher than usual for a balanced type of tasake, but it's also delicious as usual!
Definitely one of my favorite sakes to drink every New Year's!
