Shinryu Nishiki, a new sake rice from Ryuriki, a cross between Yamada Nishiki and Shinryu and recognized as a suitable rice for sake brewing two years ago.
This time it is a Junmai-shu that has matured for about a year and a half in R4BY.
The aroma is mild, with a slight sourness with a sense of maturity, but I don't dislike it.
The taste is a rich sweet rice flavor.
There is a slight raw material taste, but overall the taste is rather clean.
The finish is rounded off by a mild acidity.
It is a classic sake that is usually delicious.
