Hairy crabs from Hokkaido arrived at Furusato. I had a hunch that it would go well with Tsuchida's sour sake. I rushed to the liquor store on a hunch. It turned out to be a great decision.
I had it at room temperature today, wondering whether to heat it up or not.
The richness of the crab miso and the acidity of the sake's original sake brewing process go well together.
This sake has a strong sourness with a delicious flavor, giving the impression of apple cider vinegar. Tsuchida Shuzo's sake makes me want to drink it regularly.

I stopped by the Starbucks next to the department store and found a section selling sake, so I grabbed it 😅.

During Golden Week, I am traveling to Yamanashi, so I will have a sake from Yamanashi that I found in a supermarket.
The sake is made from Yamada-Nishiki produced in Yamanashi prefecture and polished to 50% by our own rice polishing machine.

Of course I wanted to eat soba, but I also wanted to drink sake 🍶.
We had 🍺, assorted sashimi, and soba noodles. We chose Kikuhime as our sake. It is rich and mellow, yet fresh. It was a sake with a strong sense of umami and acidity.
I ordered the Daiginjo from the Sushiro🍣 menu. It came in a small bottle with a glass.
I wasn't expecting much since it was reasonably priced in the 500 yen range, but it tasted like it was doing its best to live up to its price.
The taste is not deep, but it is easy to drink.
But I don't think I will drink it a second time😅.
The brewer was visiting a department store to explain about his brewery. I'm from deep in the mountains of Kyoto! He explained in good spirits and very politely.
We decided to have a drink at a friend's house after the cherry blossom viewing was canceled due to rain.
The sake is brewed traditionally and by hand in the village of Kitayama cedars and clear streams.
Freshness with a firm sweetness. I also enjoyed the lingering aftertaste.

Since it is springtime, I bought it because of the package and the name. I was told that "Uki Uki" is a phrase that came to mind when I thought of spring. I know the feeling 😌.

Today's sake is from Tsuchida Shuzo. This is the second bottle I have received after Shintschida.
I got the impression that Tsuchida Sake Brewery is making use of the power of nature to create new sake while preserving tradition. You can see from their website that they are not only following trends but also their own style.
Tsuchida12 was first served cold. It has a firm acidity. It was like apple juice 🍎. It was different from the fruity taste of the raw sake, and I felt like I was drinking a new type of sake.
Next, we warmed it up to lukewarm. The umami flavor blooms. Even when heated, the sake was still aromatic and delicious.
It went well with today's dinner, beef stew. My wife loved the Yamamoto Iburi Gako that we secretly purchased.
If there is someone who is not fond of sake made using the traditional "nama-hashimoto" method, I would like to recommend this sake to him or her.

I drank it as a food wine, feeling that the taste would be overpowered by the steak we had for dinner tonight, and it went surprisingly well with it!
The sweetness of the wine was enhanced and I could feel the sweetness in the back of the bottle.
Then, feeling better, I heated up a can of grilled sardine ajillo and had a hot glass of Fukuoka's Morinokura. Nice marriage here, too 🍶.
