I finally finished my tax return 💰I've been trying to finish it early every year, but this year I'm too late😅. It wasn't exactly a reward for finishing, but we drank Senkou for dinner 🥂. First sip, "Hm? The acidity is pretty strong." My wife said, "What's a sparkling wine like a white wine?" I was so happy to see it. Yes, indeed. I drank it as a food wine, feeling that the taste would be overpowered by the steak we had for dinner tonight, and it went surprisingly well with it! The sweetness of the wine was enhanced and I could feel the sweetness in the back of the bottle. Then, feeling better, I heated up a can of grilled sardine ajillo and had a hot glass of Fukuoka's Morinokura. Nice marriage here, too 🍶.

I rewarded myself for all the work I did today 🍶. As usual, my English meetings are sloppy, but I feel like I could speak better if I had some sake. LOL! Sake made from Fukuoka's sake rice "Jushikinmu". Spring-like pink package. Just having it on my desk makes me feel happy 🎉. Freshness, mild ginjo aroma, light sweetness. Light bitterness that follows. The flavor is not too strong, so it is good as a food sake. Drink it while relaxing and enjoying cherry blossom viewing. It would be good in such a situation.

The weather is getting warmer. With it, this season of pollen... 😂 On my way home, I found a liquor store that looked good through Google search and visited. I was lucky to find my favorite Gobashi on the shelf🤞. The bottle was opened immediately after I got home😅. Gohashi Junmai Ginjyo Nama Nama Shu Mukuninoshu, a limited edition once-a-year sake from Gohashi. It is brewed using 100% rice from Yamaguchi Prefecture, and only the "arabashiri" or "Nakadori" portion of the sake is bottled. It has a gorgeous ginjo aroma and a very pleasant finish with a strong sweetness that suits the arrival of spring. I also liked the lingering slightly bitter taste that came afterward. I really like Gobashi.

This is the first time I've ever bought a bottle of Kamikame. This was the first time I bought and drank it. I looked it up and found out that it was the first Junmai sake in Japan. It's well-balanced and dry, with a delicious rice flavor that spreads as it heats up. It's a good sake for sipping. It goes well with firefly squid pickled in seaweed and cream cheese. (Fine play by my wife who bought the snacks for me👍). The kids were glued to the Doraemon movie on terrestrial TV, so we relaxed with them by our side. It was a good night.

Sake made exclusively for heating up. Made by Mori no Kura in Kurume, Fukuoka. We're clearing out our sake inventory, and I bought this sake quite a while ago. I've had it for quite some time now. It's well-balanced with no peculiarities. It's good as a mid-meal sake. I can't wait to have it hot on a cold day. I've been thinking about it at work and wanting to drink it. sweat

The rice used is "Dewa Sanda". It is a Junmai Ginjo sake brewed only with Yamagata's original ingredients. It has a ginjo aroma, a clean and crisp taste, and is easy to drink with no habits.

Hatsuyuki Dayori is bottled as it is, with the rough squeezed water flowing out first. The packaging is simple and good. It has a cloudy, fresh bounce and acidity that reminds me of the first snowfall. After eating oily or meat-based dishes, this is a great way to cleanse your palate. It seems to be a good match for that kind of drinking.

Manabito is written in Japanese. I bought it from a liquor store, who recommended it as a good sake to drink hot. It's sweet and gentle on the palate, and it certainly doesn't interfere with the taste of food, so I think I'll enjoy it as a food sake. It seems to be made from rice grown by a contracted farmer at the foot of Manjin Mountain, where "mansaku no hana" grows naturally. I like the message on the back of the package, "Enjoy it, everyone, the drinker and the brewer. I'm going to enjoy it.

Sake from Chiba. Aizan 50, limited edition sake for 2022. Stylish packaging, including a label with a jewel motif. It has a fresh bounce and a strong sweetness in the mouth. After that, it leaves a slight bitterness in the back of the mouth. I will enjoy the gentle taste in small sips.

This is a Yamahai Junmai sake made with Akita yeast No.15 and rice grown in Akita Prefecture. It has a gorgeous aroma, sharpness, and a mellow firmness that I enjoyed. I also enjoyed the change in taste after opening the bottle.
