New Year's sake, now being consumed. This time it is Shirataki Shuzo's Uonuma. I bought a bottle at my parents' house, but they had some left over. As is typical of Niigata, it is light and dry, but has a strong umami flavor. There is also a hint of sweetness in the distance. In general, it's not as bad as other tsumami, and it's good even without them. The best thing about this sake is that when it is heated up, it has an aroma and sweetness like amazake, and its face changes at once.
I've got a bottle of this sake, so I think I'll have a sake nabe with it. I wonder if seafood would go well with it. Cod would be a good choice.... I'm thinking pork, Chinese cabbage, green onion, and shimeji or enoki mushrooms. Salt or light soy sauce. It looks delicious enough just by itself. I'm looking forward to it.
For an early Christmas party, we had freshly squeezed Kido. The label is red, so it's Christmas-specific (lol).
It really is a sake that is not worth the price, in a good way. It has a pleasant aftertaste with just the right amount of acidity. It's not too sweet, which is nice because it's easy to pair with snacks.
Not too sweet, not too spicy, moist and delicious. It is a good all-around drink that is easy to pair with both snacks and meals. I don't drink it every night, so I don't know, but I would be happy to have it in my fridge for everyday drinking at home or in a store.
Once again, I opened a bottle of sake that I had bought a long time ago, but had regrettably not been able to drink...in May! (Laughs) But it was still carbonated.
As the name "microbubbles" implies, it produced very fine bubbles when poured into a cup. Shwashy and delicious!
Speaking of sparkling sake, Mio by Takara Shuzo (Shochiku Bai) is probably the most famous, but it is also very tasty, and I think carbonated sake and carbonated sake go well together. This sake is much higher in alcohol content than Mio, so it is a little heavier, but it is much easier to drink than other sake.
Delicious sake. The sweetness is moderate. It is a very stable sake that does not interfere with snacks. It can be served with seafood, meat, rice, or anything else. Easy to drink!
Kuheiji is rarely available in Hokkaido. With a moderate acidity and a slightly sweet mouthfeel, it is a very modern sake.
I was going to take some home with me if I had any left over, but everyone finished it off. (Laughs)

The label had a macho picture on it and the rice polishing was quite aggressive at 80%.
Contrary to the label, the sake looked slightly cloudy and tasted like a lactic acid beverage with a gentle taste and little alcohol. It looks like it would be good for sake beginners and others to drink.
As the label on the back says, it is refreshingly dry, and despite its gentle taste, it has a good sharpness.
I bought it on the word "limited quantity" (lol).
But it was not only that, it was a properly delicious sake. Slightly sweet and refreshing, perfect for a nice fall meal!
I had bought a bottle of Shinmasa Ecru a long time ago, but it had been sitting in the fridge for a long time, thinking that I would open it on a special occasion.
But today, I received a gift of matsutake mushrooms from a friend, so I decided to make today a special day! So I opened the bottle!
Does the aroma of matsutake mushrooms go well with Shinmasa? Would ecru go well with matsutake mushrooms? I had my doubts, but it was no problem. It is an easy-drinking sake that is not too sweet and makes the most of the snacks!
I will enjoy it slowly.
According to the note that it should be drunk within 2 months from the date of manufacture, I opened the bottle this day in a hurry (lol).
It is easy to drink with a refreshing acidity. It has a refreshing taste, perfect for drinking on a hot and humid summer night. Delicious!
I think I like to drink this alone in a relaxed atmosphere rather than with snacks.

The taste can only be described in the usual way, but it is very easy to drink with a fruity mouthfeel and low alcohol content. It tastes like pear juice.

I may have a preconceived notion that it is a wine yeast, but it certainly seems to go well with food-like snacks. It seems to drink well with strong flavors and strong aromas.
This may have been the first time I felt a lactobacillus drink. The taste is light. I had an image that any sake made with straight kumi is sweet, but this one is refreshing and easy to pair with snacks, making it perfect for drinking at home while eating dinner.

It has a strange sweetness and sourness, not unlike drinking some kind of sports drink.
Personally, I would rather drink it with strong-flavored side dishes or rice than with typical sake snacks.
The Masamune is indeed cheap and tasty, but my personal preference is this one, Shizenigo. Really, they are both delicious, but I prefer the first sip and the aftertaste of this one.
