A bottle given to me by my predecessor, who recently reached retirement age.
He said it was a thank-you for the 3 kg of new rice he delivered every year during his tenure, which he called a "taste test.
Rice has become sake!
The nose has a fruity ginjo aroma, but the fragrance is subdued.
The mouthfeel has a gentle, round sweetness and a satisfying umami. The fruity feeling that passes through the nose and the mild acid bitterness that comes at the end disappear slowly and gently.
I had an image that Houyo was not my favorite, but this is good! I can say that when it comes to high-class wines, this one is genuinely tasty.
