Last weekend, I hung around the town of Shichigahama.
We enjoyed the new seaweed festival, and although we did a bit of fishing, the bite was not so good at this time of year with the low tide, so we had a very productive Sunday.
We stopped by a liquor store owned by a former junior colleague of mine.
The aroma of the top shelf is a rich ginjo aroma.
The mouthfeel is dry, as is typical of Kochi sake, but the umami is also present. It has a slight sake-like aftertaste and finishes with a mild acidity and bitterness.
When heated, the rice aroma becomes more pronounced, giving it a more sake-like flavor. The bitter taste at the end is also a nice mature taste.
