Hiduyoshi received as a souvenir from a New Year's party I have an image that Hideshiyoshi tastes better a few days after opening the bottle, and this one is no exception! It tasted hard and so-so right after opening the bottle, but after 3-4 days, the impression changed completely. From the flat taste of the past, a clear acidity has opened up along with a savoriness that comes in a jolt, and the dry base has been covered by the savoriness and acidity. The same mild aroma as the first sip, soft rice flavor and moderate sweetness spreads with a little acidity, and finishes quickly with a hint of bitterness and a little alcohol spiciness. Overall, it is refreshing and easy to drink. It is good for accompanying a meal, but it may be too smooth as a stand-alone sake. There are only two sake rice study groups left. I've been posting them chippy-chippy, so my notes and my memory are no longer connected. But there is no doubt that they were delicious. The ninth bottle was Kami no Ho from Mie Prefecture. The first bottle was a Saku no Kami no Hoho, which got me hooked on sake rice, but it tasted completely different. The aroma is banana, I guess. It has a slightly sweet taste with a refreshing dryness from the microbubbles. It goes on and on... a never-ending type of sake. The next post should be the last in this study of sake rice.

This one has a sweet taste of rice. It's different from the earlier Sukkiri, but it's thicker. It's not my favorite, but it's the kind of sake I want to drink a little bit of every day.
