Hiduyoshi received as a souvenir from a New Year's party I have an image that Hideshiyoshi tastes better a few days after opening the bottle, and this one is no exception! Akebono Shuzo's Akebono Seishun, well known for Tenmei. I drink Tenmei from time to time, but this label is new to me, so I opened the bottle 🎉. The aroma is gentle and subdued. It has a slight viscosity and seems to be quite sweet, but the bitterness soon develops. It then fades away leaving a complex umami taste. At 17 degrees alkalinity, the flavor is thick and robust from the first sip 👊. This Daiginjo is made from Yamada-Nishiki polished to 40%. We enjoyed this clear yet rich umami sake 😋.

The same mild aroma as the first sip, soft rice flavor and moderate sweetness spreads with a little acidity, and finishes quickly with a hint of bitterness and a little alcohol spiciness. Overall, it is refreshing and easy to drink. It is good for accompanying a meal, but it may be too smooth as a stand-alone sake. The taste may have changed since the one I bought from a brewery in Ehime this time last year came out of the fridge. It went well with spicy grilled minos and Umaibo shrimp mayonnaise flavor.
