Home drinking. 100% Yamadanishiki produced in Shiga Prefecture The color is slightly whitish. The mouthfeel is clean and mild. The taste is sweet like green apple. The acidity is blended with sweet and sour. Is it sweet? Is it sweet? But then the sourness appears and has a big impact 🤩. The aftertaste has the umami of the rice, which is even more pronounced when combined with the acidity. I felt that the hint of aroma also penetrated through. I went on a business trip to Aomori the other day and brought this as a souvenir. I vaguely matched it with squid or tuna. I thought it was probably a local luxury sake. It was a very tasty and elegant sake.

I bought it because a liquor store in my neighborhood started handling Tajima. I was surprised at how fruity it was. It is fresh, moderately sweet, and delicious. It is a more modern sake than I expected. After drinking this after the first time, it feels more like a sake 🤔.

This sake was tasted at the Kobe Hankyu event and made a good impression, and was highly praised by Nemuchi-san. A liquor store in my neighborhood became a special distributor, but I was wondering why they didn't carry this sake. Sake Tasting Gacha at Sasaki Sake Brewery This is another sake limited to the brewery. It was sold in a refrigerator, but I'm not sure if it was fresh sake or not. Gorgeous and fruity. Dry but delicious. 4gou 5500 yen 😱. Most of the high-end sake was made with 1801 yeast.

Freshly brewed with Miyamanishiki from Nagano Prefecture. I'm not sure what to make of it, but I'm sure it'll be good. The color is milky white. The smell is mild, with a hint of flowers. The taste is fruity, but not too sweet. It has a nice umami taste with a slight sourness and bitterness in the aftertaste. You can feel the alcohol quite a bit, it's 17 degrees, so it's thick. It is easy to drink on the rocks with ice. I think it tastes better if you drink it this way. It has a refreshing, dry, gassy flavor that pairs well with 🍖 meat dishes and Chinese and other oily dishes 😋~.

The balance shines through. The impression is that sweetness, sourness, umami, and bitterness come together just right. It's lightly sipped, and it's good for sipping sake. I could drink this drink on its own for a long time! When it's freshly opened and cold, it has a watery, clear taste. It also has a slight spicy taste. I often think recently that the way you feel it changes depending on the temperature range is one of the interesting and difficult aspects of sake. Compared to the same junmai ginjo sake (Ryosuka), the acidity is more subdued and the taste is more pronounced. On the third day after opening it, I felt the flavors opened up and the gentle sweetness and umami reached its peak! It's very tasty.

Moderate gassiness Slight pineapple and rice malt overtones The same full aroma, firm rice flavor, and mild sweetness as the topping, along with a small amount of citrus-like acidity, spread out with a pizzazz, and are quickly quenched by the slight spiciness and assertive bitterness of the alcohol. For a junmai daiginjo, the aroma is subdued, and the umami and richness of the rice can be felt, giving the sake a solid impression. It goes well with meals and is also delicious on its own. It went well with homemade hamburgers, fried oysters from Aono Suisan, fried horse mackerels, and crab cream croquettes. It went well with a Chinese chicken hamburger from Lucky Piero, a souvenir of Hakodate from an occasional work colleague.
