Moderate gassiness Slight pineapple and rice malt overtones The same full aroma, firm rice flavor, and mild sweetness as the topping, along with a small amount of citrus-like acidity, spread out with a pizzazz, and are quickly quenched by the slight spiciness and assertive bitterness of the alcohol. For a junmai daiginjo, the aroma is subdued, and the umami and richness of the rice can be felt, giving the sake a solid impression. It goes well with meals and is also delicious on its own. It went well with homemade hamburgers, fried oysters from Aono Suisan, fried horse mackerels, and crab cream croquettes. It went well with a Chinese chicken hamburger from Lucky Piero, a souvenir of Hakodate from an occasional work colleague.

Birthday gift sake No. 3 Speaking of comets, Ricaman is a liquor that I don't get a chance to drink very often because I don't go to Ricaman. It has a mild top-fragrance aroma. It is gorgeous and refreshingly sweet on the palate. It is a versatile type of sake that can be enjoyed with food or on its own. For better or worse, it is an excellent Daiginjo. I think it tastes more open and sweeter on the second day than when it is freshly opened. The design of the sake lid looks just like the one from a while ago😅.

Home drinking. 100% Yamadanishiki produced in Shiga Prefecture The color is slightly whitish. The mouthfeel is clean and mild. The taste is sweet like green apple. The acidity is blended with sweet and sour. Is it sweet? Is it sweet? But then the sourness appears and has a big impact 🤩. The aftertaste has the umami of the rice, which is even more pronounced when combined with the acidity. I felt that the hint of aroma also penetrated through. Akebono Shuzo's Akebono Seishun, well known for Tenmei. I drink Tenmei from time to time, but this label is new to me, so I opened the bottle 🎉. The aroma is gentle and subdued. It has a slight viscosity and seems to be quite sweet, but the bitterness soon develops. It then fades away leaving a complex umami taste. At 17 degrees alkalinity, the flavor is thick and robust from the first sip 👊. This Daiginjo is made from Yamada-Nishiki polished to 40%. We enjoyed this clear yet rich umami sake 😋.

Sweet and sour yet mellow, light yet tasty, and very drinkable! It is a delicious sake both as a mealtime drink and on its own. It is so delicious! This is a collaboration product with ''York Benimaru'', a local supermarket in Fukushima Prefecture. It is sold at Benimaru, so you should definitely try it!

It is fresh and tasty with a good amount of sweetness for its sake strength, but the slight bitterness tightens it up. It goes well with meals and is also delicious on its own. This is one of the bottles I harvested in Chitose on the way to work. This one might be the main one! It went well with sagari with sundiner sauce, squid ring salad, and stew.

This is the Aino-sato Junmai-shu from Nanyo Jozo, which is famous for Hanayo-yoku. It's a delicious sake with a good balance of umami and sourness, like a fresh apple. It's delicious 😋 and the price is good too. The price is 1320 yen for a four-pack.

Is this a local brand of the same brewery as Hanayo-yoku? The rice is said to be Gohyakumangoku. It's a completely different brew, but it's refreshing and has a gorgeous taste. I had an image of it being classical and hard to drink, but it's a modern sake with impressive acidity. The one I drank recently that is similar is GOGO Gohashi. Gohashi has a muscat-like atmosphere, and this one has a green apple-like atmosphere.
