I'm not privy to the specs, but I hear it's less than 30 per cent polished 🤩. But it's good and cosy 👍I heard they don't use much sake rice though. It's usually sweet, tasty, bitter and well-balanced 😋. Yamagata sake is as high as ever👍

Are you a member of the Shuunin? Shu-in opening! The aroma is clean 🍎. Personally, I don't feel much sweetness, but a nice clean acidity and a bitter taste at the end 😋. It is said to be very polished, but the specs are not disclosed in case you are interested! 1500 yen is cheap for a pure large class👍.

I bought it for a souvenir, but a customer traveling from Hokkaido🐴 gave me some chocolates and I didn't have any on hand, so I had to rush to the store and drink it with everyone, including my sister🥂. I heard it was only medium-hot, but it's still hot ❗️. I want to warm up some 👩 for my sister! I just had a reflective stove. This is also a 3-day record. Chiebijin was not enough, so I threw in a small bottle. This is the pink label of Yatsuka, which I have come to like! It feels more rounded than Chiebijin. Delicious!

The brewery is more impressive for its shochu Ginza no Suzume than for its sake. Tasted and purchased. It has a gorgeous aroma and is fruity even when drunk. 1801 yeast is used, making it a sweet and fruity sake that is easy to understand. I wish they would release a fresh sake of this one. I felt it was sweeter and fruity at room temperature than when it was chilled to the perfect temperature.

I bought it because a liquor store in my neighborhood started handling Tajima. I was surprised at how fruity it was. It is fresh, moderately sweet, and delicious. It is a more modern sake than I expected. After drinking this after the first time, it feels more like a sake 🤔.

This sake was tasted at the Kobe Hankyu event and made a good impression, and was highly praised by Nemuchi-san. A liquor store in my neighborhood became a special distributor, but I was wondering why they didn't carry this sake. It was in the fridge of a point system sake, so I thought 😅😅I thought, "No way, I can buy it normally. I thought so, but I was able to buy it normally😅. It's confusing💦. The rice is Hyogo Nishiki. Sweet aroma. It is fire-aged but has a quite rich flavor. It is better not to cool it down too much. It is a little smoky.

At home. Sake tasting party with friends after a long time. We brought our own sake. First up was a local sake from Echigo-Yuzawa, a gem bearing the name of the first head of the Shirataki Sake Brewery. The aroma is gorgeous, and in the mouth you can taste the acidity and umami, with a slight lingering alcohol taste. It leaves a slightly bitter or rough feeling in the back of the throat. The Shirotaki Shuzo is known for its Kouzen Nyosui, which has a fuller aroma and taste compared to the Kouzen Nyosui. The bottle was also unusual, with an innovative volume of 630 ml. This is the first brand I've seen and the taste is great. ‼️

Taste: When chilled, it is raw in a bad way. The gorgeousness of the daiginjo is lost. After a while, when it warms up a little, the sweetness becomes extremely strong. It is interesting to note that the taste changes drastically with the change in temperature. Overall Comment It is a matter of taste, but I feel that the goodness of raw sake is lost when it is a Daiginjo class.
