Hiduyoshi received as a souvenir from a New Year's party I have an image that Hideshiyoshi tastes better a few days after opening the bottle, and this one is no exception! It tasted hard and so-so right after opening the bottle, but after 3-4 days, the impression changed completely. From the flat taste of the past, a clear acidity has opened up along with a savoriness that comes in a jolt, and the dry base has been covered by the savoriness and acidity. Birthday gift sake No. 3 Speaking of comets, Ricaman is a liquor that I don't get a chance to drink very often because I don't go to Ricaman. It has a mild top-fragrance aroma. Akebono Shuzo's Akebono Seishun, well known for Tenmei. I drink Tenmei from time to time, but this label is new to me, so I opened the bottle 🎉. The aroma is gentle and subdued. It has a slight viscosity and seems to be quite sweet, but the bitterness soon develops. It then fades away leaving a complex umami taste. At 17 degrees alkalinity, the flavor is thick and robust from the first sip 👊. This Daiginjo is made from Yamada-Nishiki polished to 40%. We enjoyed this clear yet rich umami sake 😋.
