Drinking continues at Don Chaya 🕺. We emptied the weird "Haneya", followed by another round 🍶. We chose our first brand that we could see in the cellar✨ First "Kame no Ou Junmai Ginjo Shiboritate" 🎉. Not much in the way of aroma, but a clean sweetness on the palate, with a pleasantly sharp and sweet [Kame-no-o] lingering finish! I found out later that they revived Kame-no-o and used this episode as a model for Natsuko's Sake, so in a sense, they are the pioneer of Kame-no-o 😁.

It's 3/9, the day of the crop, and I don't have it on hand... I should have left the one I bought in Mie😅. I bought it in Wakayama about 6 years ago. Ozaki Sake Brewery had never been out of Wakayama prefecture, but a liquor store in Osaka started doing business with them, so I went to buy some. According to the liquor store, they had already been getting it through a wholesaler before. It seems they use a yeast found in the soil of Kumano Kodo. I like that it has a serial number 😁. Sweet and sour, with a touch of Yamahai in the second half, but the last half is very dry! I'm a little concerned about some off-flavor nuances... A few hours after opening the bottle, it started to get a little smoky 🤔.
