［Fukui Spring New Sake Festival 10] I'm on my 10th cup of sake 😁. I was looking for my favorite "Hakugakusen" and found that it was only available on the first day of the event, so I went here instead 🍶. Unnoi Junmai Ginjo Nama Genjyo. Banana-like aroma, gentle sweetness on the palate, and a lingering mild umami aftertaste. I have a connection with "Kumonoi" since I brought it to the Kansai Sake-no-Iwa offline meeting I attended last summer, and it is still delicious when I drink it again.

This bottle was given to me as a birthday gift last year. I've been accumulating a stock of sake, so I decided to drink it slowly. It's a rare opportunity to see a bottle of sake in a tobin enclosure! It makes my heart dance ✨. When you open the bottle and pour it, you can smell a slight ginjo aroma. It is almost scentless. The mouthfeel is very clean, but the soft, milky sake quality and subtle sweetness of the rice gradually covers the tongue! The spiciness and the strength of 16% alcohol can be felt in the latter half of the bottle, but the overall flavor is moderate. I think I have not had such a clear sake since I drank the highest quality sake of "Akagisan" (12,000 yen for 720ml)! It is as pure as a gentle breeze. It quietly accompanies you from the beginning to the end. The taste is the very embodiment of "elegance. It is a good bottle to drink by itself or to enjoy as a food wine! Enjoy it carefully over the course of the day👍.

Purchased at the new "Haneda Airport Garden" at Haneda Airport, an antenna store for the Yamakoshi area in Nagaoka City, Niigata Prefecture. The rice used is "Gohyakumangoku" produced in Niigata Prefecture. In short, it is a rich and full-flavored Junmai-shu. It has a classical taste and looks good when heated! The dusty label is impressive.

Yahiko Sake Brewery in Yahiko Village, Niigata Prefecture. The main brand was "Echino Hakusetsu," but it appears that "Yahiko" will be the main brand from now on. This Junmai Ginjo is also made from Yamadanishiki produced in Yahiko Village, and is a good sake, not fruity, but calm and soft. Yahiko Village is where my mother is from, and I spent a lot of time there as a child when I was sent to my mother's home, so it is like a second home to me. Yahiko Shrine, the first shrine in Echigo, is located there.

Yahiko's regular sake, Aozae, by Yahiko Shuzo Sake rice is Koshibuki produced in Yahiko village. Aozae has a refreshing, watery quality. Aozae is a perfect evening sake without any peculiarities. Yahiko Shrine is the largest shrine in Echigo Province. My mother is from Yahiko Village and I used to stay at her parents' house in Yahiko Village when I was a child, so Yahiko is like my second home.

Yamatsuru is the closest sake brewery to my house, but I haven't had much of it lately. The last time I drank it I got the impression that it was peculiar and not really my cup of tea, but not this Junmai Daiginjo! Clear and fruity, good balance of flavors. It's also gorgeous😋. The price is reasonable for a Junmai Daiginjo, but I think it's worth it🧐 I can't underestimate local sake 😚

Low-polished Junmai-shu from Yamatsuru, a local sake brewery in Ikoma, Nara. The name is Choyao. It was a gift, but it looks like it will cost a fortune💧. I heard it was brewed using a method described in a wooden letter from the Nara period. I wonder if it is true. Anyway, let's try it. Wow! It is indeed as rich and sweet as I had heard! The sake level is a whopping -40❗️ But the aftertaste is refreshing. Surprisingly easy to drink and delicious 😋. It's pretty good 👍I'll have to try this one too 😙. But I wonder if people in the Nara period really enjoyed this kind of sake 🤔.

Purchased at a liquor store in Nakazaki-cho after an event at Ogimachi Park with Nemuchi The design looks like something you'd find in a bottle at an izakaya 😅. Normally I wouldn't pass it up, but I thought it looked unusual and bought it. It's been a year since it was made, but I don't feel it's aged too long. It is light, refreshing and easy to drink.

It's been a long time since I've had a chance to try it. It is a sake limited to a certain liquor store in Fukuoka. This is very tasty. The aroma is not so much. The taste is juicy and melon-like. There is a slight bitterness in the aftertaste, which is also good. If you come to Fukuoka, I recommend you to buy it 🍶.

☀️ This is the first time I've seen a drink without a label 🏷️. Instead it has a ribbon🎀 which makes it unique 🤩. There is an initial feeling of alcohol, but it is quickly followed by a sweetness. Leaving the new sake festival, we went to the second restaurant. The second party was at a soba restaurant on the restaurant floor of Amu Plaza Kumamoto, adjacent to the station. This soba restaurant has a great selection of sake 😁. The price is... no way 🤣. The second drink was Shashaemon I had this sake at this restaurant before, but I couldn't remember what it tasted like, so I ordered it. The moment I put it in my mouth, the gorgeous aroma spreads and sweetness, sourness, umami, and spiciness all come at once 😳. This feeling is like no other 😁. At home. Sake tasting party with friends after a long time. We brought our own sake. First up was a local sake from Echigo-Yuzawa, a gem bearing the name of the first head of the Shirataki Sake Brewery. The aroma is gorgeous, and in the mouth you can taste the acidity and umami, with a slight lingering alcohol taste. It leaves a slightly bitter or rough feeling in the back of the throat. The Shirotaki Shuzo is known for its Kouzen Nyosui, which has a fuller aroma and taste compared to the Kouzen Nyosui. The bottle was also unusual, with an innovative volume of 630 ml. This is the first brand I've seen and the taste is great. ‼️
