I received this as a gift from a friend! It's been a while since I've had a sake with a strong sake flavor, as I've been drinking a lot of mellow sake lately. I love the tangy and spicy sensation that lingers after the sake goes down your throat! I also liked the way the aroma spread in my mouth.

Purchased at the Nishinomiya Township brewery opening event. It's been decades since I've had kenrishi. When I was a student, I used to be so happy with kenrishi! I used to be overjoyed when I was a student. The brewer said that the filtration was used sparingly in order to preserve the umami flavor. The golden color of the sake is crisp and dry when cold When hot, it is full of umami. It is an excellent sake after all.

If the sake is not made with the same level of care and attention as the all-you-can-drink sake, more and more people will leave the sake industry, and short-term tricks will not be effective these days. Shirataka, founded in 1862, is especially famous as the official sake of Ise Jingu Shrine. I usually prefer fruity sake, so it is not a brand I often get, but I happened to have a chance to try it. I had heard that most Hiroshima sake is sweet, but this one is basically dry in all specifications. The aroma of the opened bottle was pleasant, probably because it was a draft sake. As the +10 number indicates, there is no sweetness, but perhaps because of the aroma, there is no harshness from the alcohol. It is a nice sake that is refreshing and somewhat fruity. It is said to go well with sushi and sashimi, and it certainly does.

OSAKA SAKE & FOOD EXPO 2024⑧ This is another unknown sake brewery, Yukijaku Sake Brewery. It is made from Yamada-Nishiki with a 38% rice polishing ratio and unfiltered. According to the official website, there are two types of sake: hi-ire and nama, but the one I drank was probably hi-ire. I think it was fruity and quite sweet 🤔. Forgot to take notes💦.

The rice used is Gohyakumangoku and Nihonbare. If I had to describe it in one word, I would say it's "Omnivorous Japanese Sake Partridge". I learned of the existence of this sake through non non's post. It was a little difficult to go there because you can only buy it at the direct sales place which is open only on weekdays.... It was a nice homey sake brewery 😊. It was limited to 100 bottles and they were the last 3 bottles. It's shwashy, sweet and sour. It may be a daiginjo, but it doesn't taste like yamahai and is easy to drink.

Early last month, I went to the Ume Festival for a tipsy night. I was given a local sake tasting set and was surprised to find such a delicious apple juice (!!!)!
