The rice used is Gohyakumangoku. I bought it at the end of last year at an antenna store in Toyama. I didn't know about this brand. The color is a light amber. The color is pale amber, and the flavor is just as it should be. It's relatively easy to drink because it's crisp and not overpowering, but it didn't seem to suit my partner who likes floral and sweet flavors. It didn't match well with the grilled chicken, but I think it will swell up with time, so I'll leave it for a while. It's quite a unique sake, and I don't dislike it!

We also had a chance to drink some more sake from Toyama Prefecture. Taitozan, the main brand of Tonami City's Yoshie Sake Brewery. The factory where it is bottled and processed caught fire this spring and was unable to ship, but with the cooperation of the Toyama Sake Brewers Association, it was bottled and shipped by Masuda Shuzo, the brewer of Manjusen. Purchased at an Aeon liquor store in Tonami City. The aroma has a strong alcohol-like scent. It tastes like aged sake with a strong sourness and bitterness. It is really like drinking aged old sake. Sake is a very deep drink.

The third group of the Sake Rice and Yeast Association is Gintome and Yuko's Idea from Iwate Prefecture. Iwate is often named after the pure-heartedness of the Tohoku region or after Kenji Miyazawa, and the rice is Gintome, which is a Gin user. Yuko, the yeast, seems to be named after the developer, Ms. Yuko Yamashita of the Iwate Prefectural Industrial Technology Center. It is a clear, dry sake. Sake from Iwate is interesting in many ways. I had the impression that it was a famous sake with a harsh name and a long history, so I thought it would have a strong alcoholic taste, but no matter what, it's very easy to drink. It doesn't have a gorgeous aroma like Raifuku, but you can feel the sweetness of the rice strongly in your mouth, and it has a clear and light taste, so you can go as much as you want.

Purchased at the Shinsaibashi Takashimaya Department Store on the recommendation of a store clerk. Rice used is unknown. The richness of the original sake can be felt. It does not have much of a nama-zake character, and is clear and clean through the throat, making it a sake that you will never get tired of drinking. Because of its name, I had always assumed it was a sake from Kyoto. I️ was surprised to learn that it was the first Japanese sake to win the Monde Selection gold medal, and that Wakayama is proud of this world-class sake. My sincere apologies 🙏.

I wanted a dry, dry drink. There are days when I'm in that mood. You might say don't choose raw, but I realized it after the sake bottle came. I enjoyed it with yudofu. It fits my mood today. When I think of dry, dry sake, I think of Niigata, Hiroshima, and Kochi. I admit to disagreeing.

This Sake paired well with the home made bacon we had with dinner. The flavor profile is bright with the flavor of banana and has a dry, clean finish. The dryness is mild and not overly strong.

I've never been a big fan of dry sake, but this is delicious! It is crisp and refreshing, but also has a deep umami/sweetness. I like it!
