The aroma is fruity, with a slightly bitter chocolate flavor and a rich, mellow flavor. This was my favorite type of sake. Kohama Tokubetsu Junmai Sake A standard sake. It is often served at restaurants that serve funazushi. A good food sake. Junmai Ginjo Namazu Jiyu Read as "ume naru jiyu" (literally, "while being born, it is free"). Nama-zake. I think they said they use a yeast that produces high malic acid. Pleasant acidity with a fruity taste. They also make ume (plum) sake and a blue colored sake that is a ginjo-shu.

After returning home, I wondered what to drink and chose "Karahashi" by Homare Shuzo, which I had never had a chance to drink before! It is a junmai ginjo made from Omachi. The first sip gives the impression of sweetness with no sourness. As you continue drinking, the spiciness comes out and the trinity of sweetness, umami, and spiciness comes together, which is just the right balance and delicious. There are other sake rice varieties in the Karahashi series besides Omachi, so you have to try them 😆.

Karahashi label by Homare Sake Brewery. Unfiltered unpasteurized sake made from sake rice Yume no Kou. Fruity ginjo aroma. We recently visited MURASHIGE SHUZO in Iwakuni City. This is Uraginkan Kuromatsu, a limited edition sake from that brewery. When poured into a glass, the color was more golden than yellow, and the aroma was rich with a hint of caramel 😀 It was a matured sake. It was a matured sake, like a so-called "matured sake" 😀. It's not likely that we would ever choose such a sake at home, but this time we took it home because it was a limited edition from the brewery 😀. It tasted rich, thick and sweet 🤣. I compared the taste of the cold sake and the room temperature sake, and while the cold sake tasted a bit angular, the room temperature sake tasted rounder and tastier with a touch of rice 😀.

The third restaurant was Murashige Sake Brewery of Kinkan Kuromatsu 😀. It was easy to arrive thanks to Mr. Nakama Sou Touji of Gobashi who gave us a lift 😀.
