This is a unit work of three breweries in Joetsu: Katafune (Takeda Sake Brewery), Koshiji-no-Kenbai (Kubiki Shuzo), and Chiyonomitsu (Chiyonomitsu Sake Brewery). Kura-kept yeast, fresh yeast, and shibari. The proprietor introduced that there is a new trial in Niigata as well. Delicious! It starts with a light sweetness, followed by acidity and a sharp bitterness. This complexity is good. I couldn't take my eyes off of the sake from Joetsu. There is a recommendation from Takeda Shuzo on the back label, which is also interesting.

It was a sweaty day as I went to line up in Ginza in the morning to buy a bottle of wine. The bottle said it was 18 degrees, so I enjoyed it slowly on the rocks. I served it with edamame (soybeans), leatherfish, sweet shrimp, and surume tempura. It was very tasty as a food sake.

Today is my day off, so I took a walk around Sunpu Castle, Kunouzan Toshogu Shrine, and Nihon Taira! I've always wanted to visit Kunouzan and Nihondaira, but the view of the Pacific Ocean and Mt. Fuji from Nihondaira is fantastic👍. On the way home, I took a sip. When I opened the bottle, it had a melon-like aroma. The mouthfeel is refreshing, but the melon-like sweet and astringent taste comes through in a jiffy, giving it a gorgeous flavor. However, the assertion itself gradually settles down and changes to a spiciness, so it is not too heavy for a nama-zake and is easy to drink! Tomorrow is the second half of Shizuoka life. Tonight, we continue our series of firsts with this one, named after the female toji known for her work at Tomikunaga. This sake is brewed with Hachitanishiki and Yamadanishiki. The freshness is alive and well, and the melon aroma (typical of Yamada Nishiki) is faintly felt at first, but then the sharp dryness and acidity overflow into the pineapple aroma (So_1F34D) without the sweetness of Hachitan Nishiki and continue until the finish.
