I'm opening them all up because they are overstocked😅. I couldn't buy it last year and have been waiting for a year. The one I had at the Japanese sake festival was very subtle so I wanted to make sure 🤔. Fresh and fizzy. It has little sweetness, but the gasiness on top of the bitterness is very nice. I'd like to try the sake made with Kame-no-o that comes out around spring.

Arrival at today's inn. We will have a yakimugi bento (barley lunch box) bought at Tosu station on the way to the hotel! When the bottle is opened, it has a pudding-like aroma. It has a mild, pudding or custard-like flavor, just like the standing aroma, and the soft, round sweetness is really pleasant! It is Oku-no-Matsu Special Junmai. We drank it chilled. The aroma is mild, but when you put it in your mouth, it is fruity and delicious sake. You can buy it at the supermarket. It's delicious 😋

Junmai Ginjo Genshu with 55% polished rice. It is full of freshness because it is Arabashiri and of course the aroma is very strong. I bought this one after tasting it with Daikoku Masamune at Yamamoto Sake Shop in Kuise and wondering about it. I had tasted Tomikunaga in the past, but this was the first time I bought it. This is a rice called Yatanso, which is used only by Tomikunaga. It has just the right amount of gas and sweetness. Not too sweet, but just the right amount. It is like the sweetness and umami of rice. Balanced type. I would like to try other types of rice.

This sake is brewed by Miho Imada, who was selected as one of the "100 Women of the Year" in 2020. I've been wanting to try this sake for a long time because of its high reputation in magazines and without any special glasses. The first sip was soft and clear like water, and then I felt the sharpness. On the second sip, you can taste the umami and acidity. There is also a slight pleasant bitterness at the end. It is characterized by the softness of soft water and a clean mouthfeel with no miscellaneous flavors. And yet, it is a modern dry taste with a wide range of flavors, which I personally like very much and it's really delicious! The aroma and taste are not strong, so it doesn't seem like there is a "this" kind of weapon, but it has no peculiarities and anyone can enjoy it, so I take my hat off to its broad-mindedness. You can drink it all the time... or infinitely. I am also amazed at its wide range of defenses, going very well with greasy dishes like fried foods and crisp salads. To use a baseball player's analogy, it's like Shuta Tonosaki of the Seibu Lions, who can defend any position at a high level.

I've had it for drinking out of doors, Edo Kaijo! Is it brewed in Shiba, Minato-ku? Dry! Is the alcohol content high? I thought it would be 14 degrees. I vaguely thought it might be 17 degrees since it was labeled as a pure sake, but..., But I was wrong, Well, it is no wonder I felt that way. It tasted sharp.
