I had my first bottle of Shinshin in spring and it was delicious! I was able to get a bottle of Shinshin's summer sake, and I immediately opened it 😋. Slightly sweet and refreshing taste like summer sake🤣. It's as refreshing as the label says and perfect for a hot day like today 👍 thanks for the drink❗️

Honkin Normal Sake Yellow Label 1,800ml Alcohol added sake, koji rice 60%, kake rice 70%. This was purchased when we tasted it at the brewery last November. After six months had passed, the umami flavor seemed to have taken over. I think it was more smooth when it was first shipped. It was stored in a hallway with a refrigerator pan, so we will enjoy it before it gets too hot. I think I like it better when it returns to room temperature than when it is cold.

Bouken-san told me about it before, and I've become a fan of Watashibune's new sake 😚. But it's made with 100% short-stemmed Watashibune. I think this brand is as good as my favorite Genmai which I opened just before. The aroma is like a grape🍇, and in the mouth you can feel a very thin gas and a gentle sweetness. The aroma and taste are well integrated, and the transparent flavor fades out with a slight bitterness, which is brilliant 😆. Today I paired it with a yose-nabe with agaric broth, and the complex broth of the seafood and the flavor of this sake matched so strangely that I could really linger and eat and drink forever... It's still Monday, so I had to call it quits 😅.

The one I had at the Japanese sake festival was very subtle so I wanted to make sure 🤔. Fresh and fizzy. It has little sweetness, but the gasiness on top of the bitterness is very nice.
