I have had a little Mutsu Hassen, but Mutsu Otokoyama is completely new to me! A while ago, I had the impression that Mutsu Hassen lost all its flavor after the second day, but recently it has been able to keep its flavor quite well. What do you think of Mutsu Otokoyama? The aroma is a botanical scent similar to that of grass or earth, but only slightly. But when you take a sip, you will be surprised! It has a gorgeous capsule-like aroma similar to that of Mutsu Hassen! I don't think I've ever experienced such an aroma with such a strong standing aroma! The taste is definitely less sweet, but has a good umami. The taste is certainly not too sweet, but it has a good umami flavor, and yet it has a gorgeous overtone. It is dry, but popular, like a "Sanjyo," "EXILE," or "Ishihara Gundan"? Something like that. I don't know if the aroma has calmed down or if the taste has mellowed, but it is easier to drink and tastes even better from the second day! It's definitely dry, this one! It has a gorgeous ginjo aroma and a sharp dry taste! This is the kind of delicious sake that goes down so smoothly that you find yourself drinking it all up.

I bought this one at Kimura Sake Brewery after hesitating between it and Daishinshu. I have had Toko before, but this was my first time to try Yong. The top aroma is mild but fruity. As the introduction of Shusen-do Horikazu says, it does have a hint of cherries, doesn't it? It is dry and fresh with a moderate sweetness. A little citrusy? Sharp dry sake. A little too light for me? A little too light for me. After a few days, the dryness settles down.

I went to Yonezawa City during Golden Week and purchased this sake at Toko's Sake Brewery. Nyu is a sake that is only available in Yamagata. With a coupon I got at a roadside station in Yonezawa, I got a sake bottle with Toko's name on it. It is a dry sake with a Sake meter rating of +6. It was easy to drink with a clean taste. 1760 yen.

［Fukui Spring New Sake Festival (9) The event was coming to an end with a series of sake from Ishikawa. We decided to try something a little different and had a drink here 🍶. Hayaseura Special Junmai Sake "Umi-no-Otoko This is an old sake that has been stored in the brewery for 3 years and was served warmed 😁. The aroma of rice flavor, the gentle texture on the tongue, the impact of the flavor at the back of the throat, the warm aftertaste of heated sake, and the bitter taste at the back of the throat at the end........ It is a "man of the sea" respecting fishermen who work at sea, and I feel that it is strongly made to go well with local fatty seafood and salty preserved food 😋.
