Mini tastings, still to come💦. It's a drinking comparison of the Kamikai... 💦. Junmai Ginbuki Hiyoshi Oroshi Akatombo 　Shiga Prefecture, Ginfukiyuki 60% polished rice, 15 degrees. The aroma is fruity and the taste is classic. The taste is somewhere between modern and classic. Junmai Ginjo il tuono d'autunno (autumn thunder) 　Shiga Prefecture, Ginbuki 55% polished rice, 16%. Fruity and sweet, this is a perfect modern type. Fully matured Junmai Ikinatsu Koshi Sanma 　A blend of 80% 2016 Yamahai Yamadanishiki and 20% 2019 Koshihikari 70% polished rice 17%. I was too scared to drink this one as is🤣. It was sweet and delicious when heated! It had a classic flavor.

☆☆☆☆☆ Probably my first mountain cherry (Yusura) I wonder if the reason it's rather light is because it's a junmai daiginjo? I have the impression that it's not as good as Bean Curd with Bean Curd. But as a stand-alone sake, it is delicious! I think it is better to match it with something light, not with a strong snack. I think it's good as it can be drunk with a meal or a drink. Well, it is a Junmai Daiginjo, so it is better to enjoy it on its own. It was my first time to drink it, but it is delicious!

Rooster Yoemon from Kawamura Sake Brewery in Hanamaki City, Iwate Prefecture. This sake is famous for its sour taste, which is rare in Iwate Prefecture. I drank it for the first time at a store in Hanamaki and was surprised by the sourness. It seemed to be quite a challenge since Iwate is generally known for its sweet and tasty sake. Even so, I heard that the owner stubbornly continued to make sour sake. (^○^) Nowadays, with the Shinsai boom, Yoemon's sour sake is also selling well, especially outside of the prefecture. This is the 38th sake brewery in Gifu Prefecture. This is one of the main brands of the Sugihara Sake Brewery in Ono-cho, Ibi-gun, which is famous for being the smallest sake brewery in Japan. It is sold at Tomikuya, the brewery's direct sales store, along with sakekasu (sake lees). It is also sold at a nearby roadside station in Ono-cho. The aroma is strawberry-like. It is filtered, but not excessively, so there is some lees floating on the surface. The palate has a weak acidity and the sweetness of the rice comes out well. It is a delicious sake with a long lingering aftertaste. Sugihara Shuzo is famous for its sake, but the brewery does not sell it, and there are only two stores in Gifu Prefecture that carry it, both by lottery, so getting it is a matter of luck. I would like to try it sometime.

🏠 Drinking ( -̀ -́ )୨⚑︎゛ I didn't care for the aroma. Crisp ‼️ and no bitterness. Maybe a light acidity when paired with veggies😊. For the entrée... Yakitori with sauce made with rice wine 🐓. I'm not sure if it's a good idea to use it with vegetables Rice used, Miyamanishiki Yeast, Kyokai 701 Alcohol 13%. Personal preference among 4 types 4️⃣ I received a bottle of sake that has been stored at room temperature for a wacky long time... I tried to drink it but it was old sake ( ´-̥̥̥̥̥ω̥̥̥̥̥̥`) I got about 7 kinds of sake including Tasake and Jyushiyo... What a waste 😭😭😭 The sauce made with Tasake was delicious though 🥲.
