It has just the right amount of acidity, sweetness and freshly opened bits and pieces 😁.
I have an image that Hitogochiki is a little more fruity than dry, and Yamazan is just like that 🤔.
This one also has a fruity feeling but a little dryer and tighter 🤤 ☺️

It has a soft mouthfeel with not so much alcohol, and although it still has a strong sweetness, the aftertaste is light and not too long 😊It seems to go better with grilled dishes than raw dishes such as sashimi 🍗It was a refined and delicious sake 😋.

The aroma is grapefruit or citrus.
When you drink it, you can feel the sweetness and umami of the rice! The sweetness and umami of the rice can be felt.
It has a dry mouthfeel because of the bubbles, but the soft sweetness of the rice spreads and there is a slight bitterness at the end.
I think I should put it down!
...So after a few days, I started to get more of a Yamasan no Mori-like taste and a slow richness than at first. I can feel the layered flavor like a mille crepe...I think.
Overall, it was a delicious sparkling that came together refreshingly and was crisp and drinkable while still having a strong umami flavor ✨.

However, it also has a good umami taste, and it wraps up the fatty texture of the snacks well!
I felt that the Junmai Ginjo Yamadanishiki🧡 I had previously had did not have the Yamasan feel to it, so I thought I would pass on this one.
However, I saw a post on Sake-no-wa that said it looked delicious, so I went out and got it!

When you include it, it is sizzlingly rummy, rice sweet and full of fruity richness! The forest-like feeling that I often get from Yamazan(?) I think it's a bit thin. 🤔Refreshing as always✨

I don't think it's a matter of which flavor, but rather the image of the whole being condensed. I felt this at the time of Aizan too.
I appreciate the balance of sweet and tasty without being heavy. I enjoyed it both during the meal and on its own.

I can't buy Yamasan myself, so I'm very happy 😊.
