First of all, they had the "Sai Rai" that I've always wanted, so I ordered it without hesitation.

The sweetness is there but not strong, and the acidity makes it refreshing and fruity 🧡

Oroku" and "Gassan" are the most famous sake from Shimane, so I haven't had many of the others.

It was on line at the Kuboyama Sake Shop, but Nagasaki doesn't have many sake that come to mind, but I was curious about this one.
It's basically a fruity sake, but it has a unique rice flavor that lingers on the palate. The bitterness is a mixture of sweetness and subtle bitterness. It's not bad, but it's a little quirky. It would go well with shime mackerel.
But there's cream cheese marinated in tamari soy sauce here, right?
