On a trip to Hida Takayama. After tasting at Funasaka Sake Brewery, we went to Aji no Yohei, which is attached to the same brewery, to compare the tastes. My personal impression is that the Hida sake tasted a bit mature for me, as I like fruity sake. I think it is perfect for those who like dry sake. The sweet sake on the right side was my favorite. The Hida meat was also great. By the way, Takayama has many sake breweries.

How many times have you been to Hakuro Taruzu. Soft and fruity on the palate. The label says it goes well with sushi, but I paired it with tempura. It goes with everything. It was delicious.

I have never had the famous drunken whale, but this is the second type of Kochi sake I have had after Bikuyo. This bottle was recommended to me by a fellow sake drinker. My first impression on the palate was "gorgeous. It also has a soft fruity taste. The level of gorgeousness is low according to the flavor chart I searched here, so this is my personal impression. And the aftertaste is refreshing. Today I drank it with sea bass sashimi, and it was perfect. It is delicious and to my liking.

This is the second time for me to try Kaze no Mori, and this time the taste is quite complex. It is slightly effervescent and sweet at first, but leaves a bitter taste in the back of the mouth. It tastes fruity but not fruity at the same time. Delicious ^_^

The Oroku no Joumei I bought on my trip to Shimane. Since I made the trip in December, I often let it sit for a while. In the mouth, the gorgeous aroma leaves the nose while the darker part of the sake in the throat seems to linger. Is it sweet? Is it dry? The taste changes depending on the passage of time and where it is in the mouth. When I drank it with pickled squid in salted malt, the squid took everything with it.

This is Egawa sake, which is a restored version of the sake that was offered to Ieyasu Tokugawa. It was given to us as a gift, and it seems to be quite a rare sake. It is yellowish in color and tastes similar to Shaoxing wine.... I think it's a great sake, but I'm not a fan of the taste >_<

A bottle I bought on a trip to Shimane at the end of last year. This is "Kei" by Oroku. It may be out of the royal road of Oroku, but.... The aroma is woody, similar to cypress. The mouthfeel is clear and not habitual. It leaves a bit of a tangy feeling at the back of the throat. It's a refreshing sake that doesn't interfere with food.

This is the one that was brought to me at the end of the year drinking party with my friends. Before this, I opened a bottle of Isoban, but although Isoban is good, Jyushiyo is exceptional. At the end of the work day, I went to my first shop and had a drink by myself. After drinking Tobiroki, I asked the owner what he recommended, and he recommended this one. It was my first time to check in at Saitama, but it was great! It went in easily and I felt sweetness, flavor and a bit of bitterness. It's delicious. Unfortunately, I drank it with tsukemono (pickles), but I felt that it was not tsukemono.

This is the sake record of our trip to Shimane and Hiroshima. On this day, I stopped by Fujii Sake Brewery in Takehara City at noon, and I was very curious about this sake. (Bought another sake.) At night, after touring the breweries in Saijo, I found this one at an izakaya (Japanese pub) and had it warmed to go with oyster nabe. I don't often drink it hot, but it was too cold... Cold would leave you with the gusto of sake, but it was a great sake for hot heating!

Sake record of Shimane and Hiroshima travel. The purpose is to visit sake breweries in Saijo. It's a pity I couldn't taste much. I guess this is also the influence of Corona. This is the first sake I drank on my trip to Shimane and Hiroshima. This is a sake made by Wakabayashi Shuzo in Onsen-tsu Onsen. After taking a hot spring bath, the first sip of this sake soaked into my body. It is dry as the name suggests, but the carbonation spreads in the mouth like champagne, and it was great. By the way, I'm sure I'm not the only one who read Onsen-tsu Onsen as "Onsen-tsu Onsen". I loved Onsen-tsu Onsen so much.
