Kaze no Mori Alpha1: the door to the next chapter
I had the same Alpha1 last year, Summer Night Sky, and it's different!
The same low alcohol and great acidity tanginess, the Summer Night Sky was apple-like, but the Door to the Next Chapter had a pineapple-like aroma!

I wondered if Tedorigawa was also known as Hotarugawa, but they said the small river that runs next to the brewery is Hotarugawa!
I'm just going to go with what it says on the label, but you can feel the freshness and acidity first ✨ because it's a once-fired brew.

Speaking of bonito tataki, Kochi is the place to go for bonito tataki, so I chose Kochi sake as well👆.
It has a lactic acidic aroma and a mild mouthfeel, but it's dry and sharp!
I interpreted it as "Zanshin" because it's so sharp that you can't even tell it's dry.
It went well with bonito tataki sudachi ponzu and coarse grated daikon 😆👍 ポンちゃんHello, pepper!

I asked what would go well with bamboo shoot tempura. I asked him what would go well with bamboo shoot tempura, and he introduced me to about 7 different kinds, and after much deliberation, I chose Kamikawa Taisetsu, which I had never had before!
It has a rich rice flavor and sharpness that goes well with the flavor and bitterness of the bamboo shoots 😁.
I thought junmai sake would go well with the bamboo shoots, but the sweetness of junmai sake would be too much for the bamboo shoots, so I thought it was the right choice!

The aroma is sweet and when you drink it, the sweet and sour taste fills your mouth!

My first summer sake is Yokoyama!
It's a refreshing summer sake with a clean ⭐ mouthfeel that is typical of summer sake.
Not too sweet and sharp, just right for a hot day 😀. こしょうI was looking forward to winning the right to purchase a bottle of Jishin's special junmai by lottery the other day, and I was even more excited to see the junmai ginjo yesterday 😆.
I was surprised to find that there was still some fizz left in the bottle, even though there wasn't much left!
The balance of sweetness and sourness was very nice 😊.

I'll start with the last one I had!
I asked the master what kind of drink would go well with my dessert, and we both agreed that it would be "kudokyu-tei" 🌈!
This was the best ❤.
The sweetness of the strawberry tempura and cream is further enhanced by the kintoki-mame (red kidney beans), and the kudoki-ueki wraps it up in the perfect marriage 🐻💕!

First Sanuki Kuraudei😄 Adult Calpis!
I had always heard rumors and seen them in liquor stores, but there was no timing because of a full fridge.
This is sweet!
It's the kind you can drink like juice coupled with low alcohol 😊.
I think it would be more refreshing if it were chilled, but I thought it would have more of a calpis feel if it was closer to chilled 🤔. つよーだいGood evening, Mr. Koshokun😄I'm interested in this one, but I'm not able to get my hands on it because I don't like the muddiness of it 😅. こしょうTsuyodai.

Tsuchida is served half cold and half lukewarm, which is the best service ️.
Tsuchida 12 is made with a traditional sake yeast and white malted rice!
The cold sake is about the same temperature as the cool sake, and the sourness stands out from the aroma, but the light sweetness and gentle acidity lingers on the palate.
Lukewarm: The acidity is reduced and the mild sweetness is mellow😍.

Here's a continuation of the drink I had last week in Komae.
The name "Haru no Kaorufu" is really nice 🍃🌸🍃.
It has a gentle and sweet ginjo aroma with a nice crispness and a light sharpness!
Spring is felt by drinking sake!

This time it's Daishinshu😄!
The aroma was described on the menu as citrusy, but it was either the temperature or the time after the bottle was opened that gave it a subdued ginjo aroma!
The sweetness in the mouth is strong, followed by umami and a good acidity.
It was like an apple, which is typical of Daishinshu 🍎. えりりんConv.

I ordered it with firefly squid tempura with a dash of chili pepper, and it went perfectly with it!

I was impressed to be able to enjoy Toyama's representative sake and snacks. こしょうToday I went to Sake and Mamezara Ryori Byo in Komae, which I had been wanting to visit 😀.
There were many kinds of sake, and I was satisfied after drinking about 5 gou of sake.
First up was the Mimuro Cedar!
It was a real huacchu 😍.
