The brewer is Tsuji Honten in Maniwa City, Okayama Prefecture. The label says that all the rice and rice kouji are grown in Okayama Prefecture, and the sake is made by a female toji (master brewer) and nine brewers who are particular about the production method. 9 (NINE) means "nine people. The chic label is rather stylish.

I looked up the specs and other clues and found that it is described as Junmai Daiginjo. I'm not sure exactly what it is, as the year of manufacture is different. The label even says that it is made with rice and rice malt from Yamagata Prefecture, but the rice polishing ratio and sake degree are undisclosed. The brewer's intention is "to have the sake taste as it is without being bound by preconceived notions of sake rice or rice polishing ratio," but this is quite unusual.

It's a strange name for a sake, but how could it not be delicious, given the challenging spirit of a brewery in Akita Prefecture (Yuzawa City)? I found out that the "Rz series," which seems to be named after Ryozeki, is a limited edition sake available only at authorized dealers. It was not included in the online shopping lineup. The label says it is bottle-fired one time.
We enjoyed it that day while eating char-grilled jidori chicken and chicken nanban, and I think it went well with the dry sake.

The brewery is Nishioka Sake Brewery in Nakatosa Town, Kochi Prefecture. Clean water is the biggest advantage for sake brewing. If I ever get a chance to visit my hometown, I'd like to try some dried bonito tataki with it.

This particular sake is made with 100% Hana Mochi from Aomori Prefecture. The website also claims "local water, local rice, local sake". The label on the back says "once-fired" and "bottle stored".
The brewer is Hato Masamune Corporation of Towada City, Aomori Prefecture.

The brewer is Enoki Shuzo in Kure City, Hiroshima Prefecture.

The brewer is Kinoshita Sake Brewery in Kyotango City, Kyoto Prefecture. The penguin on the label of this sake is cute, but they also produce a number of other products with unusual names and labels.

This sake is made by the Toshimaya Sake Brewery in Higashimurayama City, Tokyo. The rice is from Hiroshima Prefecture. Since "Okunokami" can also be read as "gecko," the illustration of a gecko is their trademark.

Brewed by Ikezuki Shuzo in Shimane Prefecture. Sake brewed with local rice by Izumo Touji, I would like to try it with local food someday. 田中 楽In April 2016, we accompanied Manganji togarashi (red pepper) and char-grilled jidori chicken at our favorite restaurant, Tora Manganji.
The brewery is Imanishi Shuzo in Sakurai City, Nara Prefecture. It is a junmai-shu made from mizu-hashiroshi, a rare type of sake. I have never seen a sake with a sake strength of -34. When I checked again on the Internet, I found pictures of products with "Bodai Hashiro" labels, but I could not find any with "Mizu Hashiro" labels, so maybe I drank something very rare.

I guess it's partly because the brewing water is good.
