I drank it once a year and a half ago, in September 2016, and as before, no detailed specifications were disclosed, as the brewer's intention was "to let you taste the sake as it is without being bound by preconceived notions about the rice or rice polishing ratio". The bottle barely reveals that it is a "nama-shu" (raw sake). The bottle is tagged "Junmai Daiginjo," so we tagged it as such.
According to the product introduction of the sake store, it is a "new brand launched by five Shuho distributors nationwide," "'Pearl' stands for a round grain like a pearl, and 'rhyme' for lingering. The brand name is "Shuho" and "Rhyme" means "lingering".

The brewery is Aruga Brewery Limited Partnership in Shirakawa City, Fukushima Prefecture, a long-established company founded in 1774.
The rice used for this junmai ginjo is 100% local "Yumenokou" rice from Fukushima Prefecture. The label on the neck reads "NAKADORI NAKADOKUMI" and "PROTOTYPE" as well. The logo on the label is also stylish. Looking at their website, I see that they also make a Korean sake, makgeolli.

The brewer is Hato Masamune Co. in Towada City, Aomori Prefecture. It was founded in 1897.
This special junmai sake is made from 100% Hanafukiyuki, a variety grown in Aomori Prefecture. The label states "once-fired" and "bottle stored".
The website is also elaborate and filled with their commitment to "local water, local rice, and local sake".

This sake was brewed by the 11th generation of the brewer, Koikawa Shuzo Co. with a personal touch, as it was brewed in anticipation of the success of Togashi-san, a high school classmate and director of the "Tetsujin 28-go Live Action Version" movie. The sake itself seems to be well made, with 100% "Gohyakumangoku" rice produced in Shonai-machi, Yamagata Prefecture.

The owner and I are both baseball fans, so he offered me an interesting sake. It is a limited edition baseball series from Yamamoto.
The brewer is Yamamoto Shuzoten Co. The brewery was founded in 1901.
It is a sibling of "Two Out Full Base," and this one is of a higher grade. It is a scene where he hits a home run and high-fives everyone, so we put a little aroma on it and made it have a lingering aftertaste.

The owner of the restaurant and I are both baseball fans, so he served us an "interesting sake". The correct order of events seems to be "two out full base" followed by a "reverse grand slam home run".

The brewery is Ikezuki Shuzo Co. in Onan-cho, Shimane Prefecture. The "Kihachi Special" is said to be a special product of Kihachi Koyama, the manager of the distributor, Koyama Sake Shop.
The rice used is 100% local Sako Nishiki. The label is full of information: "wooden vat shibori," "straight pumping," "rice polishing ratio 70%-5%," "arabashiri," "honnama," "super dry," and "junmai-shu.
The brand name "Ikezuki" seems to derive from the name of a famous horse associated with Kamo Shrine. It was bought by Minamoto no Yoritomo... For more information, visit the website.

The brewer is Yaoshin Shuzo Co. in Iwakuni, Yamaguchi Prefecture. No Ichi" is a sub-brand of the company's standard sake "Ganki" series. The product description on the website at the time of this writing (2023) reads, "It is a sake full of life, with a smooth and robust flavor.

The brewery is Fuji Shuzo Co. in Tsuruoka City, Yamagata Prefecture. It is from this 2017 that the label was redesigned with a high-impact zebra = zebra. At first glance, the design is such that one would not notice that it is a rebranded product of "Eiko Fuji. As for the reason for the "zebra" name... The brewery is Hara Shuzo, located in Kashiwazaki, Niigata Prefecture. It is also a rice-producing region, and the rice used is 100% Niigata rice.
The neck label reads, "Echigo Snow Storage Cold Whiskey," and the design of the label resembles snow crystals. It is characterized by the storage method in which new sake is stored in a snow chamber for 250 days.

The brewery is Chiyozu Toraya Co. in Sagae, Yamagata Prefecture. As a Hanshin fan, the brewery name and label felt familiar to me. The fact that it was a dry hiyaoroshi suited my tastes perfectly. I also liked the fact that the sake is made with rice grown in Yamagata Prefecture. 田中 楽October 2017, at Tora Shikan in Shibuya, Tokyo. The first cup of the day was "Tamagawa Natural-brewed Yamahai Junmai VINTAGE". The label doesn't say, but it was "kamizu-hiire" (heat-fermented with added water). The label says it is "delicious heated," but I had it cold. It was a little out of focus, but as the label says "vintage," it had a brownish tint like an old sake. It is a strong sake, so it will not be overpowered by strong flavored dishes such as chicken nanban.
The brewery is Kinoshita Shuzo in Kyotango City, Kyoto Prefecture. It is a place with good water.

The brewery is Kumazawa Shuzo, located in Chigasaki City, Kanagawa Prefecture. The website says "the only brewery in Shonan." It also has a restaurant and a bar, so it would be fun to stop by when you are out and about in the Shonan area. I see that the brand "Tensei" has a lineup including "Ginmochi Tensei," "Amagatensei," "Senbou Tensei," and "Kaze Rotensei.

The brewer is Koedo Kagamiyama Shuzo in Kawagoe City, Saitama Prefecture. The label says only that the rice and rice malt are "domestically produced," but the website says, "We are the only sake brewery in Kawagoe that uses only rice and water grown in Kawagoe. We produce and sell a reissue of the traditional local sake "Kagamiyama" in small quantities and with quality first. The company claims to be the only sake brewery in Kawagoe that uses only rice and water made in Kawagoe. The brewery closed its doors on September 30, 2000, but due to the desire to revive it, the brewery was completed on February 1, 2007, and brewing began on February 5, 2007, marking the first step toward reissuing Kagamiyama.
