9.7 The top aroma is a crisp, alcohol-derived aroma. In the mouth, the gentle sweetness of rice and juicy apple and muscatel juice spreads. The acidity and light alcohol taste gradually spread, and it is surprisingly crisp and clean. The alcohol content is not as unpleasant as the alcohol content, and it can be enjoyed both during a meal and on its own.

9.8 The nose is lactic acidic, with a crisp aroma of Japanese pear and muscat. The first sip has a juicy, light sweetness like that of Japanese pears, along with a chirpy gassy sensation. Later, acidity, a trace of astringency, bitterness, and a touch of alcohol spread to neutralize the fruity intensity of the first half. The intense fruity taste and the complex flavor typical of Japanese sake are highly balanced, making it extremely tasty. Incidentally, it is also very good when it is degassed.

9.4 Nagano Souvenir (1) Muscat and grain-based aroma with a slight lactic acidity. In the mouth, a gentle rice-derived sweetness and sourness like apple and muscat spread slowly, followed by a fresh muscat-like aroma (similar to the previous Musical Instrument Masamune), and finally, a trace amount of spiciness disappears quickly. The impression is that it is an excellent sake that is a model of light sweet sake. It is normally quite good, but there is no characteristic acidity or umami.

9.4 The sweet, fruity, grape-like aroma fills the mouth, and a classical, pleasant astringency finishes it off with a crisp, refreshing taste that can be enjoyed during meals. It is very pleasant to drink and does not feel like it is 19.5 degrees C. It tastes very similar to Hououmida. It is probably a local brand of Myoko City. It is a rare bottle, but I felt the quality was quite high.

9.2 A characteristic aroma that I have never smelled before. The aroma is mellow and fresh, reminiscent of muscat, or green as the back label says. In the mouth, the aroma is like ripe muscat and a strong sweetness spreads. Finally, a small amount of alcohol spreads through to the finish. It tastes like a slightly overripe muscat on the palate. Personally, I felt the sweetness was too much, and I would like to have more acidity. Postscript It is doubly delicious when served cold with sour dishes such as Italian cuisine.

9.6 The nose is lactic acidic with a fresh aroma of apples and lemons. In the mouth, it tastes like a sports drink (like Green Dakara), with a chili gas sensation, sweet and sour taste like citrus juice like grapefruit, and a slight sweetness of rice. In the latter half, a refreshing bitterness like lemon peel spreads out, and the overall taste is like lemonade. There is no sense of alcohol, so you can drink as much as you want.

9.9 Repo a few hours after opening the bottle. Yogurt-like aroma derived from lees and gentle apple and white grape aroma with a hint of alcohol. In the mouth, the fruity aroma is first gently perceived, and soon after, the lees-derived milky flavor spreads as if enveloping the palate. The finish is rounded and slightly dry, with a strong acidity that neutralizes the milky flavor. The low alcohol content makes this a very enjoyable wine.

9.3 Lactic acidic and melon-like aroma. In the mouth, fresh aromas of melon and green apple spread slightly. At the same time, it has a pleasantly rounded astringency and a slightly acidic flavor that spreads and disappears quickly. The sweetness is moderate and medium. A well-balanced sake that can be enjoyed on its own or with food. (Taste similar to Tobiroki?).

9.1 Strong, mellow aroma with a sparkling pineapple-like flavor. In the mouth, a rich sweetness like pineapple and apple spreads along with sweetness. The sweetness fades out toward the finish, but it is still strong enough to leave a lingering sweetness. Although it is a very innocent way, the sweetness remains even with soda.

9.4 The flavor is like rum, acidity typical of Omachi, and a fruity aroma like muscat spreads along with a complex flavor like bitterness. The label on the back recommends aging. Enjoy the slow change in flavor. Postscript On the second day, there was an immediate change. The bitterness has become a little rounder, and the acidity, umami of rice, and sweetness are more strongly asserted. It seems to be suitable for teriyaki and other dishes with strong flavors. Pleasant bitterness, astringency, and complexity. This type of wine is also good.

9.4 Tobiroki, which we were lucky enough to get our hands on. The sweetness and deliciousness of the rice spreads softly and mellowly. Fresh fruity aroma like muscat appears together with the sweetness of rice. Toward the finish, a slight acidity and astringency bring the whole thing together crisply, and the flavor melts away like water. It is a well-balanced sake that works well as a stand-alone sake or as an in-dinner drink.

9.8 Light and fruity. In the mouth, pleasant acidity and sweetness like grapefruit, muscatel, and lychee spread gently, and fade away in the finish. There is almost no bitterness, astringency, or alcohol. It is not a good analogy, but it tastes like a soft drink like Pocari Sweat or Salty Lychee with a squeeze of citrus juice and a touch of rice flavor and deliciousness.

8.8 A limited edition sake from Suzuden in Yotsuya. It blows out loudly as soon as it is opened. It is energetic. The mouthfeel is dry for a Sharaku sake, and the milky rice flavor, umami, and sweetness slowly spread. After the second day of opening the bottle, the dryness and corners were removed and the original rice flavor, sweetness, and milkyness characteristic of muddy sake were fully felt.

9.5 grape, apple-like aroma, medium to full-bodied, yet light and fresh. The aroma is melon-like and spreads over the tongue, with a medium level of sweetness that is not fruity, but rather a soft sweetness inherent to rice. Finally, it disappears without a sound with a slight astringency. It is delicious. It has a polished feel. The taste is similar to that of Kafuda Sake Beni Kikyo, which I like. The fruity taste is a little less than that of Kafuda Sake Benihana Kikyo.

9.0 The wine has a light, watery feel, but the finish is slightly fruity with white grapes and apples. However, the fruity taste of white grapes and apples spreads a little toward the finish. It's good to gobble up. It is delicious.

9.8 This wine is both watery and fruity. As it quickly enters the mouth and warms up in the mouth, the umami of rice and grape-like fruity taste spreads. Finally, along with the umami of the rice, there is a slight astringency and bitterness, and the whole thing finishes off nicely. You can drink as much as you want. (The low 13% alcohol content may also be appropriate.)

9.3 The fruity taste is not as strong as it should be, but the umami and sweetness of rice spread strongly. The final taste is crisp and watery, but the bitterness and other complex tastes are also strongly felt toward the end. (This seems to be a characteristic of the low polish and the dewy leaf style.)
