9.4 Tobiroki, which we were lucky enough to get our hands on. The sweetness and deliciousness of the rice spreads softly and mellowly. Fresh fruity aroma like muscat appears together with the sweetness of rice. Toward the finish, a slight acidity and astringency bring the whole thing together crisply, and the flavor melts away like water. It is a well-balanced sake that works well as a stand-alone sake or as an in-dinner drink.

9.8 Light and fruity. In the mouth, pleasant acidity and sweetness like grapefruit, muscatel, and lychee spread gently, and fade away in the finish. There is almost no bitterness, astringency, or alcohol. It is not a good analogy, but it tastes like a soft drink like Pocari Sweat or Salty Lychee with a squeeze of citrus juice and a touch of rice flavor and deliciousness.

8.8 A limited edition sake from Suzuden in Yotsuya. It blows out loudly as soon as it is opened. It is energetic. The mouthfeel is dry for a Sharaku sake, and the milky rice flavor, umami, and sweetness slowly spread. After the second day of opening the bottle, the dryness and corners were removed and the original rice flavor, sweetness, and milkyness characteristic of muddy sake were fully felt.

9.5 grape, apple-like aroma, medium to full-bodied, yet light and fresh. The aroma is melon-like and spreads over the tongue, with a medium level of sweetness that is not fruity, but rather a soft sweetness inherent to rice. Finally, it disappears without a sound with a slight astringency. It is delicious. It has a polished feel. The taste is similar to that of Kafuda Sake Beni Kikyo, which I like. The fruity taste is a little less than that of Kafuda Sake Benihana Kikyo.

9.0 The wine has a light, watery feel, but the finish is slightly fruity with white grapes and apples. However, the fruity taste of white grapes and apples spreads a little toward the finish. It's good to gobble up. It is delicious.

9.8 This wine is both watery and fruity. As it quickly enters the mouth and warms up in the mouth, the umami of rice and grape-like fruity taste spreads. Finally, along with the umami of the rice, there is a slight astringency and bitterness, and the whole thing finishes off nicely. You can drink as much as you want. (The low 13% alcohol content may also be appropriate.)

9.3 The fruity taste is not as strong as it should be, but the umami and sweetness of rice spread strongly. The final taste is crisp and watery, but the bitterness and other complex tastes are also strongly felt toward the end. (This seems to be a characteristic of the low polish and the dewy leaf style.)
