10th anniversary of Mitsuo Yamakawa's birth 🎂 What a 10th anniversary! And yet it's my first Mitsuo Yamakawa 🤣. I bought it because the screw stopper was Yamagata Masamune🤣. The first day, I had the impression that the flavor was not fully developed. It tasted a bit bland or meek.... The second day, it tasted much more umami ✨.

1898⏳ Received this from Rigel, AGING Yamagata Masamune🍶 from Iwaya The color is a bit yellowish, It has a slightly yellowish color, but you can enjoy it cold or chilled without feeling any peculiarities, It's a great sake when heated up. Thanks Rigel!

Ryuoh Yamadanishiki 2019 is the one from the LAB TOUR as a freebie. Though it is young with about 5 years of aging, It was delicious, with a sense of mellowness and roundness 😋. I have the impression that Yamadanishiki is better suited for aging. The 2020 was purchased at LAB. It is from different soil in Ryuoh town, They seem to grow Yamadanishiki in 4 different areas in Ryuoh town. Compared to the 2019, it still seems young. It's still young compared to the 2019. It was mild when heated, It was a taste that you can drink without any peculiarities 🍶.

AGING LAB TOUR🕐. First time to participate in the maturing tour held at Imanaya. The theme was Tasake🍶. After a lecture on the history of Aomori's rice suitable for sake brewing and the difference between aged and old sake, the tour participants were given an overview of the history of sake brewing, After a lecture on the history of Aomori's sake brewing rice and the difference between matured and aged sake, Comparison of three different types of sake ✨. The light nigori is crisp and fresh ✨ Zenchidori and Kojo-no-no-nishiki are both from 2008. The conclusion was that the Zenchidori was more rounded, I have the impression that the alcohol has a positive effect on the aging process 😋. The Kojo-no-no-nishiki was a taste that made me wonder what is the borderline between matured and aged 🤔. It was a taste that made me feel 🤔.
