#Nagano #Sake #Suwa City I bought it at the supermarket to drink an inexperienced brand. It is labeled "Karakuchi," but this Karakuchi is a crisp type. Even so, the umami flavor can be felt in the depths. It does not interfere with the taste of the horse sashimi, and the oil from the shish-kebabs is also washed away. 3/5 stars; a little stronger would have been even better.

#Nihon-shu #Yamanashi #Hokuto City #Hakushucho Purchased at the Yamanashi local sake corner of a supermarket in Uenohara. I was quite torn even though it was in the sake section of the supermarket, and in the end, I won the final battle with Sparling and went for this one. The label on the back said it was starred as dry/flavorsome, but I think the aroma was subdued. The crisp, clean mouthfeel goes well with fried food for the third week in a row. Personally, I think it could be a bit more robust. I will try sparring next time. 3/5 stars.

#Nihon-shu #Kanagawa #Oimachi This is the second bottle I purchased at the Kanagawa brewery I visited the other day. I chose Soga no Homare because I had never had it before. I found out later that it is brewed using the four-stage brewing method. It has a subtle aroma of rice. As the description says, it has a crisp, dry flavor. But there is no alcohol-like stimulation. It's also good warmed up. The aroma and umami are more pronounced when the sake is warmed up to the highest temperature. Slightly old-fashioned.

#Sake #Yamanashi #Otsuki City Forgot to upload. I had some business in Uenohara, and on the way home, I bought some at a supermarket. There was a lineup of local Yamanashi sake, but for some reason the sake that is released on New Year's Day was on sale at a discount. I was a bit hesitant, but I returned the Sasaichi Junmai I had once picked up and chose this one. I chose this one, returning the Sasaichi Junmai that I had once picked up. The taste was clean and refreshing, just like Sasaichi. I was relieved to find that the quality of the sake had not deteriorated. However, the cold sake was not enough. I tried heating it up. It's been a while since I've had a lot of draft sake recently. Yes, this is it. The richness has increased. Goes well with bonito and thick fried tofu. It's crisp and to everyone's liking, but personally, I'd like to see a little more punch. 3/5 stars.

#Sake #Kanagawa #Oimachi Due to the Corona disaster, I'm at the office early, so my regular time is before 5:00. My first visit to Kanagawa Kuramotoya, which carries all 13 breweries in Kanagawa (not all brands). When I first entered the store, I thought I had made a mistake, but I was surprised to find a refrigerated room in the corner of the sake brewers' association office, with an array of Kanagawa's local sake on display. I was so busy looking around that I stayed in the refrigerated room for so long that the office staff was worried and came to check on me... Now, here is the left bank. Sake from Inoue Sake Brewery, which brews Hakonezan. The fisherman's spirit ignited and I bought it. There was only one bottle and it was from the warehouse last April, but it looks well preserved. On the first Saturday after the opening of the mountain stream season, I had it with fried landlocked salmon that I got. The aroma was slightly fruity and sour. When I put it in my mouth... Slightly! Is this sake? The sweetness and sourness are amazing. I thought it might have been over-preserved and turned to vinegar, but wait, that can't be right. There is no twinge to it. Looking at the brewery's website, it seems to be what they were aiming for. Almost like a white wine. The alcohol content is close. The acidity matches with the fried food. If you are looking for sake, this is more like a magic pitch than a change of pace, but it is interesting and possible. 3/5 stars.

#Japanese Sake #Kanagawa #Matsudacho Purchased at a liquor store in Isehara. The fuki-no-to (butterbur's tongue) in my garden has grown up, so I made it into tempura with wakasagi. The bittersweet taste is a taste of spring. The sake is slightly pink in color. The aroma is subdued. In the mouth, it is sweet. But it is crisp and clean. All Kanagawa sake. It was delicious. 3/5 stars.

#Japanese Sake #Saga #Ogi City Koenigiku, which is drunk by everyone at Sake no Wa. I thought it was hard to find, but the liquor store on my way home from work had it! Snow Crescent. Lightly nigori. I immediately opened the bottle. Pop! I was surprised to hear a light sound. "Champagne? said our god. It wasn't enough to make me blow out, but it was fermenting. First, the supernatant. It was sweet and round. It's smooth, but also thick. And when I mixed it slowly and drank it, the ...... richness increased. The aroma is subdued, but there is a hint of cedar in the nose. It's 13% alcohol, but if you leave it alone, you can drink as much as you want and you'll end up drunk. It went perfectly with the Wakasagi-zushi dish. 4/5 stars.

#Japanese Sake #Tochigi Prefecture #Otawara City #Yuzue This year's first sake is Kiku no Sato from my hometown of Ohtawara in Tochigi Prefecture. It wasn't registered in Sake no Wa, but it's from a sake brewery in Ona. By the way, I didn't go back to my hometown this year because of the Corona measure. I bought it at a liquor store in Chigasaki and had it at home. I've never had the Kiku no Sato brand, but I wonder what it's like. It has a calm aroma, which is typical of Junmai-type sake. When you put it in your mouth, it has a refreshing sourness and a slight sweetness. There is a faintly tangy carbonation. When you roll it with your tongue to crush it, the flavor spreads in your mouth. It is a little thicker than Ona. It's hard to say which is better. It was a good first drink after the last drink. It's only been one day. 4/5 stars.

#Japanese Sake #Kanagawa #Sagamihara City #Tsukui The first sake of this year is Sagaminada. The closing sake is also Sagaminada. I dropped by the brewery on my way back from fishing for Japanese pond smelt and bought some. We had it with New Year's Eve soba. First, the supernatant. Even though there is no nigori in this part, you can feel a thick sweetness. And there is also a subtle sense of gas. As it slowly turns over, it becomes nigorizake. The aroma is faintly sweet, like caramel. In the mouth, a refreshing acidity and rice flavor are added. It's not as bubbly as it should be, but the gas is a little stronger. Delicious. 4/5 stars, a good end to a good drinking experience.

#Japanese Sake #Tochigi #Sakura City It's been a while since I've had Senkou. It's an unblended sake, but with a low alcohol content of 14 degrees. It has a faint scent like a pear. When you taste it, the sourness is tangy. It's fresh and refreshing, and doesn't get in the way of food. It's delicious! I had two cans of beer and two glasses of Senkou at noon. I'm going to the fitness gym later, so I'm sorry to leave it at this point. 3/5 stars.

#Japanese Sake #Kanagawa #Aikawa Town We bought it at a convenience store in Aikawa. I'm grateful because I can buy it anytime. Compared to the old Shiboritate, it's less heavy and a bit more refined. It's 18 degrees alcohol, but it's not too strong. I prefer the old flavor, but this one is pretty good too. Drinking it freshly squeezed with freshly caught Wakasagi tempura. Happy! 3/5 stars.

It's been a while since I've had a sake with an aroma. It has a fruity aroma like a pear. Perhaps because of this, it has a sweetness to it. It is fresh on the palate like new sake! It has a high aroma, but it will go well with many kinds of food. 3/5 stars, maybe closer to 4.

#Japanese Sake #Fukuoka #Tachiarai Town This is the first time I've had Yamahai Nigori. I was curious to see what it was like, so I bought it. We served it with sashimi, salad, sausage, and cheese. It's a fire-retarded sake, but they say it's still carbonated because they fire it with gas left in it. Sure enough, when I opened the bottle, it was bubbling. Heh! It's not slightly carbonated, but there's some gas left. First, let's take a look at the top. It's like crisp, hard water. Then, after mixing it slowly so that it doesn't blow out, we drink it muddled. The sweetness of the rice is added and it is good. But it is still dry. It's unusual for a sake that is Yamahai, cloudy, and has a low alcohol content. I didn't feel it at first, but as I continued to drink it, I noticed that it smelled like ....... I've smelled it somewhere before. I'm not sure what to make of it. I wonder if it's bran? I started to feel it about after I ate the cheese, some kind of chemical reaction? But I can feel the smell of the bran when I inhale it before drinking it, but I don't feel it in the aroma that comes out of my nose when I put it in my mouth. It's strange. On the second day after opening the bottle, the aroma remained the same, but the taste became mellower. It was an interesting sake. I would have given it 2/5 stars if it didn't have the smell of tobacco.

#Japanese Sake #Tochigi #Nasu Karasuyama City This is the first sake brewery I've ever heard of Umakuchi. I used to drink it a lot. I will have it after a long time. We went fishing for leatherfish, but we caught only one wappen size and one scorpionfish. We had no choice but to buy some chicken and deep-fry them. The taste was as good as the fried chicken. The alcohol content is low, but you can't feel the strength of it. It was very good. 3/5 stars.

#Japanese Sake #Chiba #Kimitsu City We had this on 11/5 and 11/6. I wasn't aware of it, but 11/6 is my wedding anniversary, so the name is just right. Kimitsu City has an image of industry, but it's good sake. It has a good flavor and is my favorite type. 3/5 stars. This time, I had a lot of sake from Chiba, and all of them were quite good. I have a new appreciation for it.

#Japanese sake #Chiba #Kyonan Town Family trip to out of prefecture after a long time. We bought an original sake at the popular roadside station Yasuda Elementary School. It is made from local specialty "landslide rice". The naming is very... I heard that there are many landslide prevention areas in Sawan Town, and the clayey ground is good for rice farming. I heard that Uonuma Koshihikari rice is also produced in the same kind of land. As for the sake, I thought it was just a brand for souvenirs, but it was quite good. The aroma was slightly sweet and sour, so it was hard to get used to, but the slight carbonation made it milder. But the slight carbonation made it milder, and I could go on drinking it. 3/5 stars.

#Japanese Sake #Tochigi #Sakura City I went back to Tochigi for the first time since last New Year's for my mother's surgery. Because of the corona, I couldn't be with her on the day of the surgery, so I went to my parents' house that weekend. The surgery itself went well and I was relieved. I took a day trip so as not to be a burden and went to my wife's parents' house at night. The next day, my mother-in-law bought this for me. It's Senkin, but the label is "Kirifuri". I didn't notice it until I saw the cap. When you put it in your mouth, the sourness comes with a bang. However, not only the sourness but also the taste of rice is amazing. It is mellowed by the slight carbonation. I felt it was rich, but my wife said it was "refreshing". I'm not sure if it's just that it has less miscellaneous flavors. 5/5 stars, I like it a lot.

#Japanese Sake #Yamanashi #Minami Alps City Yamanashi is famous for its wine, but surprisingly, it ranked 9th in sake production for the 2013 season. However, it ranked 42nd in consumption. Interesting. I bought this sake at a supermarket in Uenohara on a business trip. Of course they had Shichiken and Sasakazu, but I chose Taikan, which I don't usually see. The price is reasonable. The sake has a mild aroma and a clear feeling. It doesn't have much acidity, but it has a good balance. It is delicious. 3/5 stars.

#Japanese Sake #Yamagata Prefecture #Tsuruoka City The anniversary of our 16th year of marriage. I went ayu fishing in the daytime. On the way back, I bought a cake and sake. This year, I saw Hiyaoroshi in many places, so I did too. There was Eikoh Fuji, so I bought it without checking much. The price was a little over 1800 yen. Is it somewhat expensive? I thought so, but... The snack is grilled sweetfish, fried sweetfish, fried maitake and salad. Poured into a sake cup. Aroma is mild. When it contains it in the mouth, hmm? It's sweet. And, the ginjo aroma which passes through the nose. Huh? When I looked at the label, it was Junmai Daiginjo. I thought it was Junmai Ginjo. No wonder it was a bit expensive. But it's a good price for a Daiginjo. Many daiginjos have a rich aroma, and as I like to enjoy sake as a midday drink, I try not to touch them too much. This time, too, the aroma was a detriment. I gave it 2/5 stars because it is a food sake with ayu. The taste is solid and good. Maybe it should be paired with cheese, smoked fish, or something where the "aroma" is not overpowered by the ginjo aroma.
