The first sake of this year is Sagaminada. The closing sake is also Sagaminada.
I dropped by the brewery on my way back from fishing for Japanese pond smelt and bought some.
We had it with New Year's Eve soba.
First, the supernatant. Even though there is no nigori in this part, you can feel a thick sweetness. And there is also a subtle sense of gas.
As it slowly turns over, it becomes nigorizake.
The aroma is faintly sweet, like caramel. In the mouth, a refreshing acidity and rice flavor are added. It's not as bubbly as it should be, but the gas is a little stronger.
Delicious.
