The ginjo aroma is mild, but the umami comes in with an acidity reminiscent of yogurt, and it quickly finishes. I am a luxury consumer who wants a little more assertiveness, even though it is delicious and does not interfere with food. I am a selfish person.

On such a happy day, it's Hanayo. The taste doesn't say much. Pleasant fruity and juicy sweetness. The umami of rice. I can't get enough of it. ☺️
While slightly sticky and sweet, similar to the peach/pear characteristic of rice, it finishes sharp without bitters. I like the clean aftertaste. No photo of the bottle 🙇.

New sake brewing started in Shiwa Town, Iwate Prefecture. This sake was brewed with the support of Tsuki no Wa Shuzo. Sake #03 has a strong cedar aroma. Sake #03 has a strong cedar aroma. Sake #02 has a milder aroma and is easier to drink than #03. Recommended for those who want something different.
I received a sip from a neighbor who had a great time standing around drinking. It was a really good sake for a few drinks and left a lasting impression. While also praying for Noto's recovery.
Sake that goes well with fish! I requested this sake to go with fish. I like Hakurakusei in Miyagi because it is an excellent sake that goes with everything, but I like Hitakami because it goes well with sake when I want to enjoy it! But when I want to enjoy sake, Hidakami is my favorite because it goes in and soaks up the flavor.
