The wine-like intensity of flavor is typical of Shinsei. It has a strong richness and gentle sweetness as if you were drinking Beaumichel. That's what Shinmasa is all about. I don't know if I like it as a sake or not. I can recommend it to those who also enjoy Japanese wine.

Other than hana-yosu, there is such a fruity drink in Saitama! That's the shock. That's all I can say. The first taste is peach, pear, and fresh grape. The umami comes on strong and lingers well, but not too much. When you roll it around on your tongue, you can see that it is fruity and full of umami.

It was the first time I knew about this brewery and when I looked where it was, I saw it was in Kami Town. In the old days, it would be Nakashinden. It is soft and gentle on the palate. I wonder if Miyagi sake is often like this. I wonder if it is good to drink with something. The ginjo aroma is mild, but the umami comes in with an acidity reminiscent of yogurt, and it quickly finishes. I am a luxury consumer who wants a little more assertiveness, even though it is delicious and does not interfere with food. I am a selfish person.

Christmas Eve Hayakiton and Sake! By the way, I heard it is Christmasy correct to party on Christmas Eve🎄🧑‍🎄 On such a happy day, it's Hanayo. The taste doesn't say much. Pleasant fruity and juicy sweetness. The umami of rice. I can't get enough of it. ☺️

It was crowded everywhere on the 23rd, and after being rejected by two restaurants, I went to my usual place. Tsushimaya is so good that it makes you forget about such things! Peach to melon? The explosive ginjo aroma that makes you think "melon from peach? After all, Hana-yoso is a junmai ginjo! Let me enjoy this gorgeousness now ....... From there, the sweetness rides softly on the sweet flavor, without bitterness, and the lingering ginjo aroma makes you enjoy it. It really is my favorite sake. The only problem is that it's not easy to get it 😅.

New sake brewing started in Shiwa Town, Iwate Prefecture. This sake was brewed with the support of Tsuki no Wa Shuzo. Sake #03 has a strong cedar aroma. Sake #03 has a strong cedar aroma. Sake #02 has a milder aroma and is easier to drink than #03. Recommended for those who want something different.
