Comparison of Tokusyu Junmai and Jungin. The special junmai has a very clear, rich, and easy to understand flavor. It has a banana-like aroma and a taste with body. It is suitable for enjoying with strong-flavored food or as a stand-alone sake. Junmai Ginjo has a similar base aroma, but is quite clean. The overall flavor is calm, easy to drink, and has the potential to complement a variety of dishes as a mid-meal sake.

Still, compared to other sake, it has a fruity flavor with a modicum of sweetness. Even though it is fire-brewed, it has a freshness and gaseousness that is not inferior to that of nama-zake. It is a great entry point to sake at such a reasonable price.

Kaze no Mori purchased in the hanpukai. Dew leaf wind 807 Ori-gara-mi. I thought it might have a hint of ori, but it didn't. When I thought about it, it was the first time I had ever had a Dewha Kaze. I got the impression that it was less sweet than Akitsuho and less overly complex than Yamada.

Moderate aroma. Light on the palate. There were small bubbles in the glass, so I wondered if it was gassy, but that was about it. It smells of banana and candy, but it is not too sweet and has a strong umami flavor. It has a nice sharpness, and although I am not a fan of Niigata sake (with the exception of the package tag), I can drink this!

The composition seems similar to Shinsei. Still, the aroma is not as outstanding as that of Shinsei. It has a grape-like aroma with a lactic acidity that is often found in wooden vats and kimoto. The gasiness is nice and fine and gaseous. It was hard and bitter as it was just opened, but I have a feeling that it will become sweeter and tastier after a little time.

Kaze no Mori no Aizan 80 When the bottle is opened, it makes a nice sound! And a nice sound. The aroma is strawberry and muscat as I had heard. There is a hint of aroma and richness on top of the unique mouthfeel of No. 7 yeast. The gasiness is also perfect! The complexity of the rice flavor in the latter half of the bottle eliminates the sweetness and gives a clean impression. It is a good match with reddish fish. 3rd day Cemedine? Ethyl acetate? Like ethyl acetate. The fruity taste that was there on the first day seems to have disappeared.
