A kijo-zake made with wine yeast as the brewing water. It has a fairly strong sweetness, but the sweetness is a little weak for a kijo-zake and can be paired with food. It is just very easy to drink, and is ideal to be paired with chocolate or other foods after a meal.

This sake incorporates a rosé wine style with a bright color that is quite strong in koji-based acidity and sweetness. The yellow koji? The sake-like taste due to the yellow koji enhances its compatibility with food, which I personally like a lot!

The details are unknown since it was given to me, but it seems to be a collaboration with a luxury ryokan. It has a gorgeous ginjo aroma and a juicy fruity flavor. It is a beautiful sake with an orthodox sweet and umami taste. Quite delicious with considerable clarity and depth. I can recommend it to everyone.

Being a Tsuchida, I imagined it to be quite dark, but it did not age well and was unexpectedly light. But it is juicy, and the flavor is both robust and sweet. As usual, a very high quality sake that goes very well with food.

It has a fresher and considerably more acidic structure than before. It is considerably drier than normal doburoku. The rice has a moderate amount of grittiness to it. For doburoku, it would be better if it had a little more sweetness and depth, but it may not be enough. It may not be enough.
