Satisfaction level ★★★☆☆☆☆ Trying a prototype from Tokyo Hachioji Sake Brewery. Am I not allowed to post something that doesn't have a brand name? When the bottle was opened, there was a sweet aroma and a fizzy feeling. In the mouth, it has a light fruitiness, sweetness, and umami, followed by sourness, and then it finishes with a slight sawdust smell. When served as a food sake, the sawdust smell becomes even more noticeable, but it is a sake with a strong sense of umami. The brewery is located in the city of Hachioji, and if you purchase a bottle, you can have it filled on the spot. The sake is still in prototype form, so we are looking forward to seeing it when it becomes a commercial product.

Satisfaction: ★★★★☆ Aroma of fruit, though not strong, when the bottle is opened. When it is poured into a cup, it has a foamy taste. When you put it in your mouth, you can taste the fruit aroma, sweetness, and sourness, followed by a sharp sharp finish. It is mildly delicious. There is no bitterness or sawdust smell, and it is a great food sake. It has the same melon-like flavor as Eikoufuji and Sharaku's Sake Mirai. This one has the feeling of a blue melon. Sake Mirai has three varieties, but they are all delicious. There are some Yamadanishiki sake that I don't like, so maybe I prefer Sake Mirai, although it is not only a factor of the sake rice. I would like to find a Sake Mirai that is not to my taste.

Satisfaction: ★★★★★ When the bottle is opened, it has a sweet aroma typical of Kangiku. When you sip it, it has a fruity aroma, a strong sweetness, a strong acidity, and a slight bitterness. It is also delicious as a food sake. This is one of the most delicious of the many Kangiku varieties. The sweetness is complex and makes you want to drink more and more. I wonder if I should have bought a bottle. The Sengiku Senkohana (sparkler) I had before was a refreshing sake, so I felt the difference in sweetness and umami even more strongly. I realized that Kangiku has become the brewery I drink the most, and I am satisfied with every bottle I drink. I am a little dissatisfied with the fact that there are no outliers. Is it extravagant to want the experience of tasting something different from what you expected, but tasty in its own way?

Satisfaction level ★★★☆☆☆☆ The aroma when the bottle is first opened is subdued. In the mouth, the aroma is moderate, the sweetness is moderate, and the strong acidity is followed by a strong bitterness that is sharp and sharp. It is light, but the acidity and bitterness are so complex that you will never get tired of drinking it. It can be used as a food sake. The acidity and bitterness give the impression of lemon, and it does not betray the expectation that it is a summer sake from Senkou. It is delicious, but for my personal taste, I would like a little more sweetness and aroma.

Satisfaction ★★★☆☆☆☆→★★★★☆☆ The aroma at the same time as the bottle is opened is subdued. The aroma is modest, the sweetness and umami are strong, the sourness continues, and it ends quickly with a slight bitterness. It is light for a hanamup. Compared to the aroma, the taste is rich. It is a delicious sake, but it is not special. Is this a characteristic of the Rikuwada rice? It is a very good sake as a food sake. Let's leave it for a few days and see how it goes. How many years has it been since I've had Hana Yuu? When I first started getting into sake, I drank enough Hana Yuu Omachi and Suitama to get tired of drinking them, but I haven't bought them in a long time because of nostalgia and the unfamiliar sake rice. It is a bit of a letdown if you imagine Hanayuyuu-Yumachi, but this one is light and tasty. It might be good for those who are tired of drinking the sweet sake they are used to drinking. Tried again three days after opening the bottle, it tastes like a different sake. The aroma rose, the sweetness, richness, and acidity increased, and it was very tasty, so the satisfaction level changed. It changes its taste even though it is fire-aged.

Satisfaction: ★★★★★ Following Eiko Fuji, we tried Sake Mirai. As soon as the bottle is opened, the aroma is of a rather subdued fruit aroma. Was it a disappointment? The aroma of tropical fruits and the intense sweetness are followed by the acidity. The acidity is followed by a smooth finish. There is almost no bitterness and no sawdust smell. It is like a pineapple, mango, or tropical cocktail. Compared to the aroma that is perceived before putting it in the mouth, the aroma and flavor that spreads in the mouth are surprising. Not only is it sweet, but it has a lot of complex umami, and it is wonderfully delicious without being boring to drink. It is perfectly fine as a food sake. It is a wonderful sake that I would recommend to anyone with no worries. Some say it tastes better a few days after opening the bottle, but it is difficult to resist drinking it all.

Satisfaction ★★★★⭐︎ Little aroma upon opening the bottle. It has a moderate aroma, strong sweetness, low acidity, some bitterness and miscellaneous flavors, and a slight sawdust smell. The bitterness is more noticeable when used as a food sake, but it may be good with a meal with a strong flavor. Although it has some bitterness, it has a lot of umami, so you will never get tired of drinking it. The bitterness seems to be an accent. I can recommend it to those who have always loved sake, but I am not sure if it would be good for sake beginners. I have yet to encounter Kawanakajima Genmai, so I would like to try it next time.

Satisfaction ★★★★⭐︎ →★★★★★ This is my first Sake Mirai. As soon as the bottle was opened, the strong melon-like aroma reminded me of Jyushiyo. When you put it in your mouth, it has a moderate aroma, sweetness, light acidity and bitterness, and it finishes quickly. The aroma and taste are red melon-like and delicious. The sweetness and acidity are not as strong as expected, compared to the gorgeous aroma. I wonder if it is the type that becomes even more delicious after a few days of drinking. Today, we visited Okunitama Shrine in Fuchu and bought a karasu fan at the Momo Matsuri (plum festival). Two days later, it became sweeter and tastier, and the flavor was ideal. It is still melon-like and wonderfully delicious.

Satisfaction: ★★★★★ Strong fruit aroma as soon as the bottle is opened. The palate has a strong sweetness, followed by a strong acidity and a slight bitterness that quickly fades. It is delicious! I said out loud. It was a completely different impression from the Heki-ban I had drunk before. It is as tasty as ever as a food sake. There is no sawdust smell. Although it is Aizan, it is not too sweet, and its noble aroma can be recommended to anyone. I had been interested in Black Phoenix for a long time, but had passed up on it because of the one-sho bottles. At the cash register of Koyama Shoten, I was asked if the No. 4 bottle was not enough. I was asked by the cashier at Koyama Shoten if the No. 4 bottle would be enough, and sure enough, it was.

Satisfaction ★★★★⭐︎ It's been a long time since I've had Abe-san. The aroma is modest at the same time as the bottle is opened, probably because it is fire-brewed. When you put it in your mouth, it has a moderate sweetness followed by a strong acidity, and it goes down smoothly. The juiciness of the sake is not so strong, probably due to the fire-roasting process. It has a sweet and sour taste, as is typical of summer sake, and the sweetness is moderate for an abe. No bitterness or sawdust smell is detected, making it a refreshing and tasty sake. The label also states that it is best served with food, and it is perfect as a food sake, just as the label says. It does not taste bitter while eating, and the sweetness is not too strong, making it a tasty sake. The label says that it aims to be a sake that you never get tired of drinking, and indeed, it is easy to drink without getting tired of drinking. The label runs from the front to the side and not on the back. I think this is a great improvement for the cost. It is a wonderfully tasty sake, but I felt it lacked a bit of impact. Still, Hiragana Abey-san is one of the most consistently delicious sakes and should be tried by sake beginners.

Satisfaction: ★★★★★ The aroma of fruits similar to apples as soon as the bottle is opened. When you put it in your mouth, it has a strong sweetness followed by sourness and a little bitterness, and it finishes crisply. The aroma is typical of Jigokumo, and there is no sawdust smell at all. The aroma is very typical of Jikin, and there is no smell of sawdust. It is so delicious that I refrain from drinking more. There are more and more similar sake, but when I drink Jikin, I feel the depth of umami is amazing. Of course, it is perfectly fine as a food sake, but it is a pity that the food loses out.

Satisfaction: ★★★★★ As soon as the bottle is opened, the aroma of fruit spreads anticipation. In the mouth, sweetness is followed by sourness, no sawdust smell, and a slight bitterness that is crisp and clean. It is delicious! I said out of my mouth. The sweetness is strong, but the acidity keeps you from getting tired of drinking it. It tastes the same even if it is served as a food sake. I hadn't had Kamerei in several years, but the last time I had it, I was bothered by the sawdust smell, but this time it didn't bother me at all. It is wonderfully delicious! I see some people posting Shinshu Kamerei to Hiroshima Kamerei, but I wonder if the management could correct them.

Satisfaction ★★★★⭐︎ This is the first Red Comet I have seen. The bottle is red, but it is not labeled "red". The aroma was sweet as soon as I opened the bottle. When I poured it, I was a little disappointed that the sake was not red. When I put it in my mouth, there was not much aroma. A strong syrupy sweetness comes over the palate. It gradually finishes with a weak acidity and a subtle bitterness. The sweetness does not linger, but it does not linger for long, and the cups are drunk one after the other. There is no sawdust smell, and it is slowly delicious, so you will never get tired of drinking it. When used as a food sake, it has a bitter aftertaste, but it is not bothersome. It is so sweet, yet it does not interfere with meals. It is different from the image of Tasake I have had so far, but the Tasake Junmai Daiginjo I had before was also very tasty, so I guess they can create various flavors. Tonight I will watch First Gundam on the Gundam Channel before going to bed.

Satisfaction: ★★★★★ I bought Kangiku True Red following last year. I was expecting to smell the fruit aroma as soon as I opened the bottle, feeling the gas pressure. It has a lot of bubbles on the inside of the cup. Is it more effervescent than last year? In the mouth, the fruity aroma wafts in, sweetness and acidity rush in, and the taste is sharp and clean. There is no bitterness or sawdust smell that is bothersome. I couldn't help but exclaim, "This is good! I exclaimed. It is a juicy taste that is typical of chrysanthemum. It is a taste without any blurriness. I think I like True Red the best among all Kangiku. I want to drink as much as I can, but I'll hold out for more and hope that the taste will change in the future. It doesn't have to be any more delicious than this.

Satisfaction ★★★★⭐︎⭐︎ -> ★★★★⭐︎ Not much of an aroma when you open the bottle. If I had to say, the aroma is a little bitter. In the mouth, there is little aroma, but a strong sweetness and sourness, and finally a strong bitterness and sawdust smell that lingers for a little while. The sweetness and bitterness give the impression of red melon, but it is very strange. It is delicious, but the bitterness and sawdust smell in the aftertaste is bothersome. The "sawdust" smell is even stronger when served as a food sake. I tried Morishima, which I had been curious about in a previous review of Sake-no-Wawa, but I got the impression that it is not recommended for sake beginners. It was not to my taste, but I could not think of any other sake similar to it, and I felt inclined to support the brewery as it seems to be going its own way.

Changed the rating on the third day as the sweetness and acidity increased and the bitterness and sawdust smell decreased to my liking. Impression like San Fuji apple. Light bitterness after the sweet and sour feeling. Surprised at how much the taste can change even though it is fire-roasted.

Satisfaction ★★★★⭐︎ This is the second kind of Wakamusume. The last Botan (Omachi) was also delicious, so expectations were high. As soon as the bottle was opened, the aroma of fruit wafted through the air. A little foam formed on the sake cup. In the mouth, there is a strong sweetness and umami, followed by a light acidity that ends with a slight bitterness. It is delicious. There is no sawdust smell and no aftertaste, so the cups go down one after another. I prefer it to the previous Botan. It is also a great food sake with no problems. I would give it a perfect score, but I would like to have more aroma and acidity, which is really a matter of my own taste. There is no particular occasion to celebrate, but my son bought it for me as it was recommended by Koyama Shoten as a special limited edition.

Satisfaction: ★★★★☆ Modest aroma when the bottle is opened. When you put it in your mouth, it has a strong sweet taste. It is cut off by the acidity, umami, and a little bitterness. It has a strong sweetness and umami, but it has a complex taste that you will never get tired of drinking. It is delicious as a mealtime sake, and its umami does not lose out to meals. There is no sawdust smell. The umami after the sweetness is impressive. The small story like a diary on the label is still alive and well, and I enjoyed it again.

Satisfaction level ★★★☆☆☆☆ Gas pressure is felt when the bottle is opened. When the bottle is opened, it has a sweet fruit aroma. In the mouth, there is a moderate aroma, moderate sweetness, moderate acidity, and a slightly strong bitterness. There is a slight sawdust smell in the aftertaste, but it does not bother me that much. There are no outstanding characteristics, but it is well-balanced, elegant, and tasty, and is easy to recommend to others. The bitterness lingers a little in the aftertaste, but it is not unpleasant. It is perfectly fine as a food sake and does not interfere with meals. It has weak characteristics, but it tastes good to everyone. It is the first time in 10 years that Kuheiji brewer has brewed a draft sake, so expectations were high, but if you imagine a strong sweet taste, you may find it a bit of a letdown. The label says to drink it as soon as possible after picking it up, so I wondered if the taste had changed a little. I look forward to seeing how the taste changes over the next few days.

Satisfaction ★★★★☆ I had been curious about the fancy label for a long time. I tried it because it has a good reputation in sake brewery. When I opened the bottle, the aroma of fruit filled my mouth with anticipation. When you take a sip while feeling a little fizzy, a very strong sweetness like honey rushes into your mouth, followed by a light sourness, and finally a hint of bitterness that quickly fades away. It is immediately delicious. The sweetness and complex flavor are strong, and there is a fruity aftertaste after swallowing, with no sawdust smell. The impression of sweetness and umami is stronger than the impression of the aroma. It has a good sharpness, so although it has a strong sweetness, you will not get tired of drinking it, and there is no problem at all with it as a mealtime sake. It does not interfere with meals, but the sake's umami is stronger than the meal. I am not sure if the umami is due to the omachi or the light nigori, but it is the exact opposite of light and dry. No wonder it is gaining popularity. The fact that it does not have a perfect score may be a matter of taste.

Satisfaction★☆☆☆☆ Igarashi-san has been on my mind for a long time. It has a citrusy aroma with a fizzy opening. It smells like lemon. When I put it in my mouth, it was like a soda water without taste or aroma. It was like soda water without taste or aroma. It has a bitter taste from the fizz, so it tastes like a light lemon squash? Was this the type of water that has no flavor unless you wait a while after opening the bottle? Or has too much time passed between buying and opening the bottle? Is this something I should evaluate? On the third day after opening the bottle, the aroma and taste are more noticeable than when the bottle was opened, but it is quite light and unsatisfactory. Hmmm, it is rare to find a sake that gives such a different impression from other people's reviews. I don't know if this is what Kitashizuku is like or if Igarashi-san is going in this direction. I guess I'll have to try a different sake rice.
