Satisfaction ★★★★⭐︎ It's been a long time since I've had Abe-san. The aroma is modest at the same time as the bottle is opened, probably because it is fire-brewed. When you put it in your mouth, it has a moderate sweetness followed by a strong acidity, and it goes down smoothly. The juiciness of the sake is not so strong, probably due to the fire-roasting process. It has a sweet and sour taste, as is typical of summer sake, and the sweetness is moderate for an abe. No bitterness or sawdust smell is detected, making it a refreshing and tasty sake. The label also states that it is best served with food, and it is perfect as a food sake, just as the label says. It does not taste bitter while eating, and the sweetness is not too strong, making it a tasty sake. The label says that it aims to be a sake that you never get tired of drinking, and indeed, it is easy to drink without getting tired of drinking. The label runs from the front to the side and not on the back. I think this is a great improvement for the cost. It is a wonderfully tasty sake, but I felt it lacked a bit of impact. Still, Hiragana Abey-san is one of the most consistently delicious sakes and should be tried by sake beginners.

The aroma is very typical of Jikin, and there is no smell of sawdust. It is so delicious that I refrain from drinking more. There are more and more similar sake, but when I drink Jikin, I feel the depth of umami is amazing. Of course, it is perfectly fine as a food sake, but it is a pity that the food loses out.

I hadn't had Kamerei in several years, but the last time I had it, I was bothered by the sawdust smell, but this time it didn't bother me at all. It is wonderfully delicious! I see some people posting Shinshu Kamerei to Hiroshima Kamerei, but I wonder if the management could correct them.

Satisfaction ★★★★⭐︎ This is the first Red Comet I have seen. The bottle is red, but it is not labeled "red". The aroma was sweet as soon as I opened the bottle. When I poured it, I was a little disappointed that the sake was not red. When I put it in my mouth, there was not much aroma. A strong syrupy sweetness comes over the palate. It gradually finishes with a weak acidity and a subtle bitterness. The sweetness does not linger, but it does not linger for long, and the cups are drunk one after the other. There is no sawdust smell, and it is slowly delicious, so you will never get tired of drinking it. When used as a food sake, it has a bitter aftertaste, but it is not bothersome. It is so sweet, yet it does not interfere with meals. It is different from the image of Tasake I have had so far, but the Tasake Junmai Daiginjo I had before was also very tasty, so I guess they can create various flavors. Tonight I will watch First Gundam on the Gundam Channel before going to bed.

Satisfaction: ★★★★★ I bought Kangiku True Red following last year. I was expecting to smell the fruit aroma as soon as I opened the bottle, feeling the gas pressure. It has a lot of bubbles on the inside of the cup. Is it more effervescent than last year? In the mouth, the fruity aroma wafts in, sweetness and acidity rush in, and the taste is sharp and clean. There is no bitterness or sawdust smell that is bothersome. I couldn't help but exclaim, "This is good! I exclaimed. It is a juicy taste that is typical of chrysanthemum. It is a taste without any blurriness. I think I like True Red the best among all Kangiku. I want to drink as much as I can, but I'll hold out for more and hope that the taste will change in the future. It doesn't have to be any more delicious than this.

In the mouth, there is little aroma, but a strong sweetness and sourness, and finally a strong bitterness and sawdust smell that lingers for a little while. The sweetness and bitterness give the impression of red melon, but it is very strange. It is delicious, but the bitterness and sawdust smell in the aftertaste is bothersome. The "sawdust" smell is even stronger when served as a food sake. I tried Morishima, which I had been curious about in a previous review of Sake-no-Wawa, but I got the impression that it is not recommended for sake beginners. It was not to my taste, but I could not think of any other sake similar to it, and I felt inclined to support the brewery as it seems to be going its own way.

Satisfaction ★★★★⭐︎ This is the second kind of Wakamusume. The last Botan (Omachi) was also delicious, so expectations were high. As soon as the bottle was opened, the aroma of fruit wafted through the air. A little foam formed on the sake cup. In the mouth, there is a strong sweetness and umami, followed by a light acidity that ends with a slight bitterness. It is delicious. There is no sawdust smell and no aftertaste, so the cups go down one after another. I prefer it to the previous Botan. It is also a great food sake with no problems. I would give it a perfect score, but I would like to have more aroma and acidity, which is really a matter of my own taste. There is no particular occasion to celebrate, but my son bought it for me as it was recommended by Koyama Shoten as a special limited edition.

When I opened the bottle, the aroma of fruit filled my mouth with anticipation. When you take a sip while feeling a little fizzy, a very strong sweetness like honey rushes into your mouth, followed by a light sourness, and finally a hint of bitterness that quickly fades away. It is immediately delicious. The sweetness and complex flavor are strong, and there is a fruity aftertaste after swallowing, with no sawdust smell. The impression of sweetness and umami is stronger than the impression of the aroma. It has a good sharpness, so although it has a strong sweetness, you will not get tired of drinking it, and there is no problem at all with it as a mealtime sake. It does not interfere with meals, but the sake's umami is stronger than the meal. I am not sure if the umami is due to the omachi or the light nigori, but it is the exact opposite of light and dry. No wonder it is gaining popularity. The fact that it does not have a perfect score may be a matter of taste.

Was this the type of water that has no flavor unless you wait a while after opening the bottle? Or has too much time passed between buying and opening the bottle? Is this something I should evaluate? On the third day after opening the bottle, the aroma and taste are more noticeable than when the bottle was opened, but it is quite light and unsatisfactory. Hmmm, it is rare to find a sake that gives such a different impression from other people's reviews. I don't know if this is what Kitashizuku is like or if Igarashi-san is going in this direction. I guess I'll have to try a different sake rice.
