Trying a prototype from Tokyo Hachioji Sake Brewery.
Am I not allowed to post something that doesn't have a brand name?
When the bottle was opened, there was a sweet aroma and a fizzy feeling.
In the mouth, it has a light fruitiness, sweetness, and umami, followed by sourness, and then it finishes with a slight sawdust smell.
When served as a food sake, the sawdust smell becomes even more noticeable, but it is a sake with a strong sense of umami.
The brewery is located in the city of Hachioji, and if you purchase a bottle, you can have it filled on the spot.
The sake is still in prototype form, so we are looking forward to seeing it when it becomes a commercial product.
