Hoshijinboast has always been inexpensive, even in single bottles, and has excellent cost performance. When used as a food sake, the bitterness is a little stronger. It is a bit rough. But it is not so strong. When you put it in your mouth, it has a fruity aroma, a moderate sweetness, and a moderate acidity, and it wears off quickly. It is a little light for a chrysanthemum, but not too much. There is no sawdust smell, and it tastes good plainly. It is perfectly fine as a food sake, and tastes great with rice. The red orikara-mi has a stronger flavor than the red one, but the yellow one, which is relatively light, is not boring to drink. It would be interesting to compare the two.

It may be my inexperience that I feel it tastes good afterwards. The bitterness washes away the taste of the meal, and the umami does not lose to the meal. On the second day, the sweetness increases and the sawdust smell disappears, making it even more delicious.

Satisfaction: ★★★★★ I didn't know until I visited Koyama Shoten today that it was Sake Day, so I opened a bottle of Jyushiyo, which had been chilled in its box. As soon as the bottle was opened, the aroma of Jyushiyo filled my mouth with anticipation. In the mouth, it has a fruity aroma and sweetness, followed by a moderate acidity, and it cuts through easily with no bitterness or sawdust smell. It is delicious! I could not help but exclaim, "It's good! The aftertaste is green melon. There are many melon-like sakes, but I reminded myself that this is Jyushidai. If I were to describe the taste in terms of color, it would be emerald. This is an image common to all Jyushidai. Compared to the Dragon's Bastard, it is a little less sweet and a little less acidic, a little more sharp, and a little more suitable for adults. Nevertheless, it has sufficient sweetness, acidity, and umami. It is delicious as a mealtime sake, but should be enjoyed purely as a pre-dinner drink.

Satisfaction level ★★★☆☆☆☆ I have drunk many Jikin, but this is my first time to drink Yoshikawa Yamadanishiki. The aroma is fruity as soon as the bottle is opened. However, it is modest. In the mouth, it has the aroma and sweetness typical of Jikin, but it is also moderate. When you feel the acidity, the complex umami and bitterness rush in and cut through. Some bitterness remains on the tongue. It is difficult to evaluate because it gives the impression of being dry with umami, rather than the sweet, umami, acidic, and miscellaneous taste that one would expect from Jikin. It has no sawdust smell and is tasty, but if you drink it blind, you would not think it is Jikin. The Tojo Yamadanishiki we had last year was a Jikin-like sweet-amami acid, so we were mildly surprised to learn that there was a direction in this direction as well. I thought it would taste better if I let it sit for a while rather than opening it, so I decided to stop after just one sip today. On the second day, the sweetness increases and it tastes better. However, the sweetness is not as strong, and the overall impression is that it is refreshing. The bitterness is a little stronger.

Satisfaction: ★★★★☆ Because it is fire-aged, there is no gassy feeling when the bottle is opened, but the sweet aroma that wafts through the air raises expectations. Is it ideal because I like apple and melon type sake? When you put it in your mouth, the aroma and sweetness are definitely apple-like, but the sourness comes early, so it is green apple-like? What about melon? Melon? I think so, but the aftertaste is a little melon-like. There is no bitterness, so it is a blue melon. The ratio of apple to melon is 8:2, which is overwhelmingly apple flavor, but it is delicious enough. The sweetness and flavor are sufficient, and there is no sawdust smell or bitterness, so I can safely recommend it to anyone. It is not inadequate, and can be drunk easily. It can be drunk as a mealtime sake without any problems, and even after rice, it does not taste bitter, and the acidity helps to wash away the aftertaste of the meal. It is delicious without any problem, but it does not have the melon flavor that I expected, so I gave it -1 star. If it was just the apple flavor, I would say Hato Masamune's apple acid yeast would be better.

The bitterness may be perceived as a complex umami flavor, or it may be perceived as a miscellaneous taste. This complexity can be said to be typical of Omachi. It is a mature taste with a moderate aroma sweetness and strong bitterness, and it was too early for me. When used as a food sake, the bitterness is felt more strongly, but there is no sawdust smell. The aroma is not strong, but there is a sweetness, followed by a slight sourness, and the sweetness lingers on the tongue. The sweetness has a honey-like impression with little fruitiness. If you are very careful, you can smell sawdust, but it is almost unnoticeable. The sawdust smell gets a little stronger when made into a food wine, but it doesn't bother me that much, so it's fine as a food wine. I think it tastes good, but it may not be my favorite. It seems to be a new kind of sake.

No, it has a complex aroma like the center of a red melon with seeds attached, sweetness, firm acidity, and rich bitterness. It is delicious, but I have the impression that it is difficult to describe its mysterious taste. There is a slight sawdust smell, but the flavor is too complex to be bothersome. I wanted to try Kaze no Mori, so I made my first trip to Kagoya in Komae City. There are many varieties of Kaze no Mori, so perhaps it was difficult to start with Omachi. I wondered what the difference was between Kaze no Mori and Kaze no Mori. I feel the depth of Japanese sake.

Satisfaction ★★★★★ This is the first True Red in two years. When the bottle is opened, the sweet aroma of Kangiku makes our expectation grow. The bubbles are strong, and although there are some fine bubbles on the cup, it is not highly carbonated. When it is sipped, it has a pineapple-like, rummy aroma, a strong sweetness, and a moderate acidity that quickly wears off. There is no bitterness or sawdust smell in the aftertaste. The sharpness of the sake keeps you from getting tired of drinking it and keeps you drinking more and more of it. The sweet and delicious acidity is typical of Kangiku, and it is as delicious as ever. The sweetness does not interfere with meals, and there is no bitterness. I remember it was sweeter two years ago, but this year it is not too sweet and is more balanced. Kangiku's sake is easy to find and consistently tasty, and is in the lead in the number of sakes we have checked in. I am not sure if I should try more. Two days after opening the bottle, the sweetness is just as I imagined it would be. I am always fooled by this taste change.

After opening the bottle, the aroma was subdued. After swallowing, the sourness comes and the sweetness remains a little. A hint of blue melon. The lingering aroma is citrusy, like yellow grapefruit. There is no sawdust smell at all, and the cup goes on and on. The sourness and bitterness accentuate the complex flavor and taste. It is also delicious. No wonder it has become a topic of conversation. It is different from the direction of Jyushidai and Jikin, and has a new style.

It is fine as an aperitif, but the sweetness stands out so much that it is more like an aperitif. It is sweet and tasty, but something is missing. The fact that it tastes like juice is a negative factor. Since Koyama Shoten was closed, we went to Kuraya in Machida for the first time. I enjoyed the sake I had not seen before. I am a Bunraku fanatic, but whether this sake is Bunraku-like is a mystery to me.

I had the same hi-iri last year, but I think I found it sweeter and tastier. It is not easy to buy Jyushiyo, but Jikin is available at Koyama Shoten from time to time, so it is relatively familiar to me.

Satisfaction ★★★★☆ I have been attracted to my favorite swallow label for the past few years and finally decided to purchase it. Koyama Shoten also recommended it. The label says it is slightly sparkling, so I opened the bottle with trepidation, but there was no pressure to push the cork out. The sweet aroma gave me a good feeling that it was going to be delicious. In the mouth, it has a light sweetness that quickly breaks off, and one can strongly taste the umami of the rice. At the end, there is a slight smell of sawdust. There is a little bit of foam on the sake cup, but not so much as to make it spicy. It is delicious as a food sake without any problem. I have avoided sake from Ishikawa prefecture because of the sawdust smell, but this is delicious.

The bitterness in the aftertaste can be said to be melon, but since the sweetness, umami, and bitterness of the rice can be felt, it is a delicious sake, although it does not seem very melon-like. The aroma that comes through to the nose after swallowing is also melon-like, but if you expect meloniness from the moment it enters the mouth, you may feel a little let down. The bitterness of the aftertaste is a bit of a problem when used as a food sake. It may be good for those who do not mind the bitterness, but it bothers me a little, so I prefer it as an aperitif. The aroma is sweet, just like Kangiku. It is not as strong as other Kangiku sake. It has a strong sweetness, a strong sourness, and a slight bitterness. The bubbles are strong, but it does not feel spicy, which may be due to its sweetness. It is fruity, but it is difficult to limit it to this. The sweetness is banana, and the aroma is pineapple? Dekopon? I should say mixed fruit. Great as a food wine. It is so sweet and tasty, yet it complements a meal. Thinking of our departing graduates.

Satisfaction ★★★★★ This is my second Golden Chun Chun. There was a customer checking the inventory in the Koyama Shoten store, so I bought it with him. As soon as the bottle was opened, there was a mellow aroma of pineapple. In the mouth, it has the intense sweetness of ripe pineapple, light acidity, and almost no bitterness, and it cuts through quickly. There is no sawdust smell. No problem as a food sake. The sweetness does not interfere with the meal, and the sake asserts itself. This is delicious! Full marks. I take it while remembering how I used to raise injured sparrowhawk chicks.
