Satisfaction: ★★★★★ I bought Kangiku True Red following last year. I was expecting to smell the fruit aroma as soon as I opened the bottle, feeling the gas pressure. It has a lot of bubbles on the inside of the cup. Is it more effervescent than last year? In the mouth, the fruity aroma wafts in, sweetness and acidity rush in, and the taste is sharp and clean. There is no bitterness or sawdust smell that is bothersome. I couldn't help but exclaim, "This is good! I exclaimed. It is a juicy taste that is typical of chrysanthemum. It is a taste without any blurriness. I think I like True Red the best among all Kangiku. I want to drink as much as I can, but I'll hold out for more and hope that the taste will change in the future. It doesn't have to be any more delicious than this.

In the mouth, there is little aroma, but a strong sweetness and sourness, and finally a strong bitterness and sawdust smell that lingers for a little while. The sweetness and bitterness give the impression of red melon, but it is very strange. It is delicious, but the bitterness and sawdust smell in the aftertaste is bothersome. The "sawdust" smell is even stronger when served as a food sake. I tried Morishima, which I had been curious about in a previous review of Sake-no-Wawa, but I got the impression that it is not recommended for sake beginners. It was not to my taste, but I could not think of any other sake similar to it, and I felt inclined to support the brewery as it seems to be going its own way.

Changed the rating on the third day as the sweetness and acidity increased and the bitterness and sawdust smell decreased to my liking. Impression like San Fuji apple. Light bitterness after the sweet and sour feeling. Surprised at how much the taste can change even though it is fire-roasted.

Satisfaction ★★★★⭐︎ This is the second kind of Wakamusume. The last Botan (Omachi) was also delicious, so expectations were high. As soon as the bottle was opened, the aroma of fruit wafted through the air. A little foam formed on the sake cup. In the mouth, there is a strong sweetness and umami, followed by a light acidity that ends with a slight bitterness. It is delicious. There is no sawdust smell and no aftertaste, so the cups go down one after another. I prefer it to the previous Botan. It is also a great food sake with no problems. I would give it a perfect score, but I would like to have more aroma and acidity, which is really a matter of my own taste. There is no particular occasion to celebrate, but my son bought it for me as it was recommended by Koyama Shoten as a special limited edition.

Satisfaction ★★★★☆ I had been curious about the fancy label for a long time. I tried it because it has a good reputation in sake brewery. When I opened the bottle, the aroma of fruit filled my mouth with anticipation. When you take a sip while feeling a little fizzy, a very strong sweetness like honey rushes into your mouth, followed by a light sourness, and finally a hint of bitterness that quickly fades away. It is immediately delicious. The sweetness and complex flavor are strong, and there is a fruity aftertaste after swallowing, with no sawdust smell. The impression of sweetness and umami is stronger than the impression of the aroma. It has a good sharpness, so although it has a strong sweetness, you will not get tired of drinking it, and there is no problem at all with it as a mealtime sake. It does not interfere with meals, but the sake's umami is stronger than the meal. I am not sure if the umami is due to the omachi or the light nigori, but it is the exact opposite of light and dry. No wonder it is gaining popularity. The fact that it does not have a perfect score may be a matter of taste.

Satisfaction★☆☆☆☆ Igarashi-san has been on my mind for a long time. It has a citrusy aroma with a fizzy opening. It smells like lemon. When I put it in my mouth, it was like a soda water without taste or aroma. It was like soda water without taste or aroma. It has a bitter taste from the fizz, so it tastes like a light lemon squash? Was this the type of water that has no flavor unless you wait a while after opening the bottle? Or has too much time passed between buying and opening the bottle? Is this something I should evaluate? On the third day after opening the bottle, the aroma and taste are more noticeable than when the bottle was opened, but it is quite light and unsatisfactory. Hmmm, it is rare to find a sake that gives such a different impression from other people's reviews. I don't know if this is what Kitashizuku is like or if Igarashi-san is going in this direction. I guess I'll have to try a different sake rice.

It can be used as a food sake, and although it has a slight sawdust smell, it is completely different from other kijo-zake and is easy to drink and can be enjoyed as much as you want. The zodiac bottle at the end of last year had a complex flavor, perhaps because it was Omachi, but this year's flavor was easy to understand. It is a different direction from the Yamadanishiki we drank the other day. There is no sawdust smell, and it is very satisfying as a food sake.

Satisfaction: ★★★★★ I didn't know until I visited Koyama Shoten today that it was Sake Day, so I opened a bottle of Jyushiyo, which had been chilled in its box. As soon as the bottle was opened, the aroma of Jyushiyo filled my mouth with anticipation. In the mouth, it has a fruity aroma and sweetness, followed by a moderate acidity, and it cuts through easily with no bitterness or sawdust smell. It is delicious! I could not help but exclaim, "It's good! The aftertaste is green melon. There are many melon-like sakes, but I reminded myself that this is Jyushidai. If I were to describe the taste in terms of color, it would be emerald. This is an image common to all Jyushidai. Compared to the Dragon's Bastard, it is a little less sweet and a little less acidic, a little more sharp, and a little more suitable for adults. Nevertheless, it has sufficient sweetness, acidity, and umami. It is delicious as a mealtime sake, but should be enjoyed purely as a pre-dinner drink.

Satisfaction level ★★★☆☆☆☆ I have drunk many Jikin, but this is my first time to drink Yoshikawa Yamadanishiki. The aroma is fruity as soon as the bottle is opened. However, it is modest. In the mouth, it has the aroma and sweetness typical of Jikin, but it is also moderate. When you feel the acidity, the complex umami and bitterness rush in and cut through. Some bitterness remains on the tongue. It is difficult to evaluate because it gives the impression of being dry with umami, rather than the sweet, umami, acidic, and miscellaneous taste that one would expect from Jikin. It has no sawdust smell and is tasty, but if you drink it blind, you would not think it is Jikin. The Tojo Yamadanishiki we had last year was a Jikin-like sweet-amami acid, so we were mildly surprised to learn that there was a direction in this direction as well. I thought it would taste better if I let it sit for a while rather than opening it, so I decided to stop after just one sip today. On the second day, the sweetness increases and it tastes better. However, the sweetness is not as strong, and the overall impression is that it is refreshing. The bitterness is a little stronger.

Satisfaction: ★★★★☆ Because it is fire-aged, there is no gassy feeling when the bottle is opened, but the sweet aroma that wafts through the air raises expectations. Is it ideal because I like apple and melon type sake? When you put it in your mouth, the aroma and sweetness are definitely apple-like, but the sourness comes early, so it is green apple-like? What about melon? Melon? I think so, but the aftertaste is a little melon-like. There is no bitterness, so it is a blue melon. The ratio of apple to melon is 8:2, which is overwhelmingly apple flavor, but it is delicious enough. The sweetness and flavor are sufficient, and there is no sawdust smell or bitterness, so I can safely recommend it to anyone. It is not inadequate, and can be drunk easily. It can be drunk as a mealtime sake without any problems, and even after rice, it does not taste bitter, and the acidity helps to wash away the aftertaste of the meal. It is delicious without any problem, but it does not have the melon flavor that I expected, so I gave it -1 star. If it was just the apple flavor, I would say Hato Masamune's apple acid yeast would be better.
