I went to Eifukucho Yamazakiya and bought it a little while ago.
The aroma is weak when the bottle is opened.
When you put it in your mouth, it has a weak fruit aroma, a strong sweetness, and a strong bitterness.
It has a lot of umami, or perhaps the bitterness is part of the umami?
If you are thinking of the gorgeous Kinmon-Nishiki Special Junmai sake with a bright green color on a white background that I drank before, it is totally different.
It has a heavy mouthfeel. Heavy. But it has a nice sharpness, so I kept coming back for more.
The bright green one was a special junmai with a milling ratio of 59%.
I wonder if 4% rice polishing makes that much difference.
The bitterness is even more pronounced when used as a mid-meal drink.
It is for people who are used to sake.
