When you put it in your mouth, it has a weak fruit aroma, a strong sweetness, and a strong bitterness. It has a lot of umami, or perhaps the bitterness is part of the umami? If you are thinking of the gorgeous Kinmon-Nishiki Special Junmai sake with a bright green color on a white background that I drank before, it is totally different. It has a heavy mouthfeel. Heavy. But it has a nice sharpness, so I kept coming back for more. The bright green one was a special junmai with a milling ratio of 59%. I wonder if 4% rice polishing makes that much difference. The bitterness is even more pronounced when used as a mid-meal drink. It is for people who are used to sake.

No pressure is felt when the bottle is opened, and the aroma is mildly fruity. On the palate, hmmm? Melon? Well, yes, it smells like ripe red melon. The sweetness is very strong and hits the syrup level. The mild acidity and bitterness are too sweet to be washed away by the bitter taste. Those who like sweet drinks will love it. It has no sawdust smell, is delicious, and can be used as a food sake. I like sweet sake myself, but I think it is slightly too sweet. They are very kind in recommending dishes that go well with it. I drank it 3 days after opening the bottle, the aroma was more blue melon, the sweetness decreased, and the bitterness increased a little. 3 days later it was better, so I updated my satisfaction.

It has sweetness and umami, but it is not too strong. It is refreshing, but not too much, and is so good that there is nothing to say about it. As a food sake, it tastes a little bitter, but it is delicious. For those who want to drink Jyushiyo but cannot because it is not available, Hanayuup and Suidama are recommended. I usually choose sake rice without paying attention to the rice, but I end up buying Sake Mirai.

Satisfaction: ★★★★★ The aroma that wafts through the air as soon as the bottle is opened is a strange scent. The aroma is not unpleasant, but I have never smelled anything like it. In the mouth, there is a light sweetness, umami, followed by sourness and finally bitterness. Everything is in good balance, but the sweetness is the most noticeable. If we were to compare it to a fruit, it would be Mikka Mikan. It is not a tangerine like Setoka. I don't feel the melon so much, but I keep eating more of them just like eating mandarin oranges one after another at a kotatsu (a Japanese low table over the fireplace). I didn't think it was good at the moment I put it in my mouth, but it tastes good slowly. It tastes great even as a food wine. I had a bottle of Junmai Oragami Nama Sake by Tocho Mutsugorou before, which was a very gorgeous, sweet and delicious sake, but in comparison, Sawayaka is more refreshing and tasty. I guess that means the taste is what the name is aiming for. By the way, there are many breweries I like in Saga.
