Satisfaction level ★★★☆☆☆☆ I usually drink junmai or junmai ginjo, but I tried the highly reputed Genmai honjozo. When the bottle is opened, the aroma is typical of Kawanakajima Genmai. However, it is much milder than the junmai ginjos we have had. In the mouth, the mild aroma of Genmai is followed by a slight bitterness and a sharp sharp finish. The taste is not strong but light. It is also dry. It is suitable for people who have enjoyed sake for a long time. I still prefer Kawanakajima Genmai to Junmai Unfiltered Genshu. Maybe I should have bought the Omachi. However, for the price, it is quite tasty and the best value for money. Again, we went to Yamazakiya in Eifukucho.

The aroma of apple and sweetness is strong and rich. The acidity gives it a nice sharpness. There is almost no bitterness. It is honestly delicious. The sawdust smell is not bothersome when drinking. When used as a food sake, the bitterness can be felt a little, but it is not bothersome. It is attractive for its good balance that you can drink it alone without getting tired of it.

Satisfaction level ★★★☆☆☆☆ I tried Kangiku which I bought a while ago. The aroma that rises when the bottle is opened is subdued. It has a cloudy white color and strong effervescence. When you sip it, you will feel a moderate sweetness, a strong sourness, and a strong bitterness, and it will be sharp. The acidity and bitterness are so strong that it is like lemon squash. It is not clear whether the bitterness comes from the sake or the foam. The sweetness and umami are modest for a Kangiku, and it falls short of expectations. It is a completely different direction from Silver Lining, which is made from the same sake rice.

Satisfaction: ★★★★☆ I went to Kamoshita Sake Shop in Fuchu City, which I had been curious about for a while. There were so many liquors I had never seen before. I was so impressed by the sake I had received from a person in Kyoto before that I decided to buy it. The last time I had a bottle was KOCHI, but this time I went for Aizan. When the bottle was opened, it had a sweet apple-like aroma. The mouthfeel was smooth and clean after the strong sweetness and umami. There is no sourness or bitterness. It is sweet, but not too sweet. It is like a low acidity chrysanthemum. The umami is complex and delicious. It is better as an aperitif than as a mid-meal drink because of its bitterness. The label is cool, and the taste is likely to be popular with everyone. It has none of the sawdust smell that is common in Kansai-style sake. I wonder how many kinds of sake there are in the Kanzou lineup alone. I can't try all of them, and I am looking forward to visiting Kamoshita to try some sake I haven't had yet. It seems they also have a kaku-uchi (corner bar), but unfortunately I have to go there by car.

There is no sawdust smell. It is delicious as a food sake and does not interfere with meals. It has enough sweetness, but not too much. It is exquisitely delicious. It had been recommended on the Sake-no-wa app for a long time, but I could not find a bottle of No. 4 and missed out on buying it. I had expected to like this sake because it is made from Miyamanishiki in Nagano Prefecture, but it tastes even better than I expected. I would recommend it even to sake beginners.

Satisfaction: ★★★★☆ I had a glass of Akamu's Sake Mirai, which I had purchased some time ago. When the bottle is opened, the aroma is sweet and tropical. In the mouth, the tropical aroma, thickening, and clear sweet flavor spread, followed by a soft acidity and finally a rough bitterness that quickly dissipates. It reminds me a little of Jyushiyo and is delicious. It is also good as an aperitif, but it has a bit too much umami and interferes a bit with the meal, and it has a rough aftertaste, so it gets one point less. I have had Sake Mirai from many different breweries, and all of them are delicious. Once again, Sake Mirai may be great.

The moment it enters the mouth, the sweetness and umami spread, and the acidity and slight bitterness finish it off. There is no sawdust smell. The sweetness and flavor and aroma are like ripe grapes. It is delicious! I said out loud. The Omachi I drank before this was a little difficult to taste, but this Yamada-Nishiki is easy to understand. It tastes a little bitter when used as a food sake, but it is not strong. I would recommend it to anyone.

It had been a while since I had tasted Genmai, but it was as delicious as ever. It is good to drink as an aperitif. It would be better to drink it as an aperitif. This time, I bought three kinds of sake rice at the same time: Omachi, Yamadanishiki, and Miyamanishiki, so I am looking forward to comparing their tastes. I am worried about my physical exam on the 16th, though.

I have had Short-stalked Watabune before, but Shiga Watabune was the first rice I had ever had. When the bottle was opened, it had a fruity aroma, but I think it was weaker than that of Kangiku. It was so fresh that the inside of the sake cup was covered with bubbles. In the mouth, there is a moderate sweetness, followed by a moderate acidity. The flavor is complex and delicious. It is like an Omachi sake. It is the type of sake that can be drunk with gusto. When used as a food sake, it tastes a little bitter, but not so much that it bothers you. It is a delicious sake that has been the talk of the town recently. It certainly has umami and sweetness, and is a little like Kangiku. It is said to be from a different lineage from Short-stalked Boat, but it has a complex flavor like the Omachi lineage, and it never gets old. Koyama Shoten's Sei Shuzo has so many varieties on tap that it is very difficult to choose which one to drink. Of course, I could ask the staff, but even if I don't like it, I want to test my intuition.

Satisfaction: ★★★★★ A fruit aroma typical of chrysanthemum. It has a sweet citrus aroma like Kiyomi. The fine bubbles on the inside of the sake cup are also typical of Kangiku. The sweetness, sourness, and umami continue in the mouth, followed by a sharp finish with no bitterness. It is so delicious that there is nothing more to say. The image is not tropical, but sweet citrus. It is not too sweet, but has a good umami and moderate acidity. It is probably best as an aperitif, as it tastes a little bitter when served with food. Silver Lining" means "a ray of hope in the midst of adversity. It is a very nice sake.

Satisfaction: ★★★★★ We went to Sake Masaruya in Machida to try Miyakanbai, which Sakewa recommends as similar to Jyushidai. When the bottle is opened, it has a sweet aroma. In the mouth, strong sweetness, umami, and sourness rush in, and it is crisp without bitterness. It is delicious! Even when used as a food sake, it is delicious with food and sake without bitterness or other unpleasant tastes. Is it like a Jyushidai? I have a slightly different impression. Jyushidai is a bit more emerald-like or greenish melon-like, but this Miyakanbai is not melon-like. It shares the same sweet and sour taste with Jyushiro, but I think this sweet and sour taste is more similar to Kangiku's. It is sweet but sour. It is sweet but has a sourness that keeps you from getting tired of drinking it. The price of 3300 yen including tax for a jun-dai of this quality is a great value. It is a pity that I could not find it in Sendai even though I have been there many times.

When the bottle is opened, it has a light sweet aroma and a slightly bitter flavor. In the mouth, it has a light sweetness, strong umami, strong acidity, and bitterness, and it finishes quickly. It is like a ripe ruby grapefruit without the aftertaste. The umami is strong and crisp with a strong flavor. The impression does not change at all even if it is served as a food wine. It is delicious. However, there is something a little lacking. If it is meant to be drunk as a mealtime drink rather than as a stand-alone sake, would it be a good match for Nagasaki food? I've never had it before, so I don't know what Nagasaki's seasoning is.

It is delicious. It tastes like calpis with white koji. It tastes a little bitter when used as a food sake, but it is delicious. The label, which has never been seen before, is a bit disappointing. Satisfaction: ★★★★★ This is the first Red Diamond in two years, and the label is red like the Girls' Festival. When the bottle is opened, it has a fruity aroma like Kangiku. The sake has a small bubble on the top of the bottle. When you sip it, the strong sweetness is followed by sourness, which is quickly cut off. The balance of aroma, sweetness and acidity is strawberry-like. It is like strawberry juice, but it has a nice sharpness, so you can't help but drink it in gulps. I don't know if the flavor is different depending on the year or the lot, but it tastes like strawberry, not apple as it did three years ago. When used as a food sake, it has a bitter aftertaste. It seems to be best as an aperitif, which is unusual for Kangiku. Whether it is Denshogiku or True Red, he seems to prefer red labels. I know without a doubt that they are delicious, so I try sake that I don't know even if it is off the beaten path, but sometimes I want to go back to Kangiku. I find myself drinking Kangiku the most because it is available at Koyama Shoten.

The aroma of blue melon and sweetness rush into the mouth, and it finishes crisply with a muscat-like acidity. There is no bitterness or sawdust smell at all. It is so delicious that one can't help but repeatedly say "yummy, yummy, yummy! It is perfectly fine as a food sake. And you will never get tired of drinking it. It tastes emerald green like Jyushiyo or Suidama. Once again, we were impressed by the high level of Genmai.
