I tried Kangiku which I bought a while ago.
The aroma that rises when the bottle is opened is subdued.
It has a cloudy white color and strong effervescence.
When you sip it, you will feel a moderate sweetness, a strong sourness, and a strong bitterness, and it will be sharp.
The acidity and bitterness are so strong that it is like lemon squash.
It is not clear whether the bitterness comes from the sake or the foam.
The sweetness and umami are modest for a Kangiku, and it falls short of expectations.
It is a completely different direction from Silver Lining, which is made from the same sake rice.
